(GLUTEN FREE) MAGIC COOKIE BARS

(Gluten Free) Magic Cookie Bars image

I did a combination of two recipes, peanut butter cookies with three ingredients and magic cookie bars. My brother-in-law loves magic cookie bars but is now gluten-free. I have been trying to come up with desserts for him so he doesn't feel left out. This is an amazing dessert and will stay fresh for days...if they last that long in your house! Perfect for Passover - no flour!

FLOURLESS PEANUT BUTTER COOKIES

Flourless Peanut Butter Cookies image

Claire Robinson's cookies only use a few ingredients but the last one, sea salt, is key as it gives them their addictive salty finish. Since the cookies are flourless, they're very tender, so let them cool awhile on the pan before moving them.

Provided by Claire Robinson

Categories     dessert

Time 20m

Yield 18 cookies

Number Of Ingredients 5

1 cup natural peanut butter
1 cup sugar
1 teaspoon pure vanilla extract
1 large egg, lightly beaten
Coarse sea salt, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F and place the racks in the upper and lower third of the oven.
  • In a medium bowl, mix the peanut butter, sugar, vanilla and egg until well combined. Spoon 1 tablespoon of the mixture about 1 inch apart onto ungreased baking sheets. Flatten the mounds with the tines of a fork, making a crosshatch pattern on the cookies. Sprinkle coarse salt on top of the cookies.
  • Bake until golden around the edges, about 10 minutes, switching the position of the sheets halfway through baking. Transfer to racks to cool. Repeat with the remaining dough.

GLUTEN-FREE PEANUT BUTTER COOKIES (VEGAN OPTION)

Gluten-free Peanut Butter Cookies (vegan option) image

Provided by Texanerin Baking

Time 19m

Yield 8 cookies

Number Of Ingredients 6

1 cup (256 grams) natural peanut butter (the kind with just peanuts and salt - no added fat or sugar) - see the post for more notes concerning peanut butter1
3/4 cup (150 grams) coconut sugar, very tightly packed (it's best to weigh this)
1 1/2 teaspoons vanilla extract
1/4 teaspoon salt (add more if your peanut butter is unsalted)
1/2 teaspoon baking soda
1 large egg (50 grams, out of shell), cold or 1 modified chia egg for vegan2

Steps:

  • Preheat the oven to 350 °F (170 °C) and line a baking sheet with a piece of parchment paper. Position the oven rack to the lower third of the oven.
  • In a medium mixing bowl, add all the ingredients. Use an electric mixer on low to combine it. At first it will be very thin but after about 30 seconds of mixing, it should be firm enough to roll into balls. The dough may or may not feel oily.
  • Divide into 8 50-gram balls and place about 4" apart on the prepared cookie sheet. They spread a lot!
  • Bake immediately (it seems as though letting them sit for a while affects how they bake up). Bake for 11-14 minutes or until they've crackled nicely and no longer appear wet in the middle (I needed 14 minutes but you may need less if you use a dark pan, make smaller cookies, etc.). Let them cool completely on the baking sheet (where they'll continue to bake). If you don't let them cool on the baking sheet, the bottoms of the cookies likely won't be baked enough.
  • Store in an airtight container for up to 5 days.

VEGAN GLUTEN-FREE PEANUT BUTTER COOKIES

Vegan Gluten-free Peanut Butter Cookies image

An easy 7-ingredient healthy peanut butter cookie recipe made with gluten-free flour.

Provided by Carine Claudepierre

Categories     Snack

Time 22m

Number Of Ingredients 7

1 cup Natural Peanut Butter (fresh, runny jar)
6 tablespoons Almond Milk
1 cup All-purpose Gluten-Free Flour (make sure it contains xanthan gum, Bob's red mill is the best)
1 cup Coconut Sugar (or white sugar or unrefined cane sugar)
1 teaspoon Vanilla Extract
1 teaspoon Baking Soda
1/4 teaspoon Salt (optional)

Steps:

  • Preheat the oven to 350°F (180°C).
  • Line a baking sheet with parchment paper. Set aside.
  • In a medium-size mixing bowl, combine fresh, runny peanut butter with almond milk (at room temperature!). Stir until creamy and smooth. If your almond milk is too cold, it may not stir well. Microwave the bowl for 20 seconds to soften the peanut butter if needed.
  • Stir in all-purpose gluten-free flour, coconut sugar, vanilla, baking soda, and salt. The dough gets difficult to combine with a spoon so use your hands to form the cookie dough.
  • Scoop 2 tablespoons of dough and roll cookie dough into a ball between your hands.
  • Place each dough ball onto the prepared baking sheet, leaving 1 thumb space between each ball.
  • Repeat until all the dough is formed into balls.
  • Press each cookie dough ball 2 times, with the back of a fork, to form a cross on the top of the cookies.
  • Bake for 12 to 15 minutes or until golden brown on the side. The cookies will be soft in the middle when out of the oven and that's normal.
  • Cool the cookies down for 10 minutes on the rack, then slide a spatula under each cookie to transfer them one by one onto a cooling rack.
  • Cool 1 hour to appreciate their best texture.

20+ GLUTEN-FREE COOKIE RECIPES: THE BEST GLUTEN-FREE CHOCOLATE CHIP COOKIES

20+ Gluten-Free Cookie Recipes: The BEST Gluten-Free Chocolate Chip Cookies image

These are the BEST Gluten-Free Chocolate Chip Cookies! No one guesses that these cookies are gluten-free, grain-free, paleo, and refined sugar-free! You can easily make the cookies vegan. Plus, more than 20 other gluten-free cookie recipes!

Provided by Bakerita | Rachel Conners

Categories     Cookies

Time 20m

Number Of Ingredients 9

½ cup (100g) refined coconut oil, softened, similar in texture to softened butter, use refined coconut oil if you want no coconut flavor
⅔ cup (96g) coconut sugar
1 large egg or flax egg, room temperature or for vegan/to eat the dough, use a flax egg: mix 1 tablespoon flax meal + 2.5 tablespoons water and let gel for 10 minutes before using
1 teaspoon pure vanilla extract
½ teaspoon baking soda
½ teaspoon sea salt
2¼ cups (220g) blanched almond flour
1 cup (6 ounces) chopped dark chocolate, see Notes
Flaky sea salt, to sprinkle on top, optional

Steps:

  • Mix together the coconut oil and coconut sugar until smooth. Add the egg or flax egg and vanilla extract and stir until smooth.
  • Add the almond flour, salt, and baking soda to the wet ingredients. Mix until well incorporated. Fold in the chopped chocolate.
  • Cover and refrigerate for at least an hour (or up to 48 hours). You don't NEED to refrigerate the dough if you don't have time, but it's recommended for the best flavor and texture.
  • When you're ready to bake, preheat the oven to 350ºF. Use a cookie scoop (using this size will give you 12 cookies, using this smaller size will give you about 20) to form cookies and place on a parchment-lined baking sheet; press down slightly. Sprinkle with flaky sea salt if desired. Bake for about 10 or until just beginning to turn golden brown around the edges.
  • Store leftover cookies in an airtight container at room temperature or in the refrigerator up to 3 days.

Provided by Amanda Paa

Categories     Dessert

Number Of Ingredients 12

225 grams Bob's Red Mill Gluten-Free All Purpose Flour (in the blue bag)
1/2 teaspoon fine salt if using unsalted peanut butter, (1/4 teaspoon fine salt if you're using salted peanut butter*)
1 teaspoon baking soda
6 tablespoons softened (organic unsalted butter)
2/3 cup (160 grams) natural peanut butter*, stirred well ((the drippy kind of PB))
1/2 cup (100 grams) organic cane sugar
1/2 cup (90 grams) lightly packed organic brown sugar
1 large egg
1 1/4 teaspoons vanilla
2 tablespoons milk (of any kind)
24 dark chocolate feves or discs
extra decorating sugar for rolling the cookie

Steps:

  • Preheat oven to 375 degrees F.
  • Sift together flour, baking soda and salt; set aside.
  • Using an electric mixer (stand or hand mixer), cream together butter, peanut butter, cane sugar and brown sugar for 2 minutes, stirring side downs halfway through. Mixture should be lighter in color and fluffier.
  • Add egg, vanilla, and milk; beat until well blended. Gradually add flour mixture, mixing well for one minute. Let dough rest, covered, for 20 minutes on counter.
  • Roll dough into 1-inch balls and roll in sugar.
  • Place dough balls 2 inches apart on cookie sheet, pressing down with your thumb just a tiny bit. Bake until light brown and puffed, 8 minutes. Remove sheet from oven and lightly press a chocolate candy into center of each cookie, allowing cookie crack slightly. Return cookies to oven for another 2 minutes. Remove from oven, cool completely and store in an airtight container.

EASY GLUTEN FREE PEANUT BUTTER COOKIES (USING GF CAKE MIX)

Easy Gluten Free Peanut Butter Cookies (Using Gf Cake Mix) image

This is from the Cake Mix Doctor's gluten free baking book. I really love all her recipes, and don't feel so guilty about "cheating" with cake mix since most of the GF cake mixes out there have pretty pure, healthy ingredients. Not an overwhelming PB flavor, and you get a nice chewy cookie.

Provided by LawyerMom

Categories     Dessert

Time 20m

Yield 10-20 cookies, 8 serving(s)

Number Of Ingredients 7

1 (15 ounce) package yellow gluten-free cake mix
2/3 cup creamy peanut butter

  • Place the sugar in a shallow bowl.
  • Form 1 inch balls with the dough and roll each one in the sugar. Arrange them on a cookie sheet, pressing with a fork to make a pattern if desired.
  • Bake at 375 for 10-12 minutes. Enjoy!
