My Favorite Meatballs (and they are Gluten Free Meatballs too!) image

These easy meatballs are a great dinner, they can be made ahead and frozen, and they are gluten free.

Number Of Ingredients 9

2 pounds ground beef
1 pound ground pork turkey, or venison
2 eggs
2 teaspoons mustard
2 teaspoons Worcestershire Sauce (If you are gf make sure it is gluten free Worcestershire sauce)
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup potato flakes
2 cloves minced garlic

Steps:

  • Preheat oven to 350 degrees.
  • Line two baking sheets with foil and set aside. (You don't have to line the sheets with foil, but it makes clean up so much easier.)
  • In a bowl combine all ingredients. Mix together well.
  • Roll mixture into 1 1/2 to 2 inch balls depending on the size you want them. I like to use a cookie scoop so that the meatballs are even in size.
  • Bake for 35-45 minutes. Smaller meatballs will take closer to 35 minutes. and larger meatballs will take closer to 45 minutes.
  • Remove from cookie sheet. Serve as is, in pasta sauce, or cool completely and freeze.

Easy Gluten Free Microwave Meatballs image

With the help of a food blender and a microwave, you can make these low fat meatballs in just a few minutes! I usually vary the recipe slightly depending on the mood I'm in, so milk or mustard make great alternatives to egg as the binding agent! The meatballs become more tender if you cook them lightly in sauce once they are ready. This recipe makes 3 good size portions or 4 regular size portions.

1 lb minced beef
1 medium onion
3 garlic cloves
3 slices fresh gluten free bread
1 teaspoon dried parsley
1 egg
salt and pepper

Steps:

  • Peel the onion and garlic and chop them up in the blender.
  • Add the bread and parsley to the blender and blend further.
  • Add the meat, salt and plenty of black pepper and blend further.
  • Add the egg to bind all the ingredients into a sticky paste.
  • Roll the meat mix into balls in your hands and place on a plate.
  • Cook in microwave on a low setting and covered until cooked (any fat will melt away from the meatballs and stay on the plate).
  • Serve with the sauce of your choice!

1 lb ground turkey or 1 lb ground beef
1/2 cup Italian seasoned breadcrumbs
1/4 cup water
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon dried parsley
1 teaspoon garlic powder (or less)
1 egg
1 (28 ounce) jar spaghetti sauce
1/2 cup parmesan cheese, grated
1 cup mozzarella cheese, shredded

Steps:

  • Mix ground meat, bread crumbs, water, basil, oregano, parsley, garlic powder, and egg.
  • Form mixture into about 15 meatballs.
  • Put meatballs in a microwave safe baking dish.
  • Cover with spaghetti sauce and parmesan cheese.
  • Cover dish with plastic wrap and microwave at 70% power for 12 minutes.
  • Uncover; add Mozzarella cheese.
  • Microwave at 70% power for 1 to 1-1/2 minutes or until the cheese is melted.
