1 cup packed brown sugar
1/4 cup orange juice
2 tablespoons Dijon mustard

Steps:

  • Preheat oven to 350°. Place bacon on a rack in an ungreased 15x10x1-in. baking pan. Bake for 10 minutes; drain. , Combine brown sugar, orange juice and mustard; pour half over bacon. Bake for 10 minutes. Turn bacon and drizzle with remaining glaze. Bake until golden brown, about 15 minutes longer. Place bacon on waxed paper until set. Serve warm.

Betty Groff, the home cook turned proprietor of Groff's Farm Restaurant, once said that there were only two authentic American cuisines: Pennsylvania Dutch and Creole. Her brown-sugar-glazed bacon represents the former, and she occasionally served it as an hors d'oeuvre at her restaurant, which she started in her family's 1756 Pennsylvania Dutch farmhouse in Mount Joy in the late 1950s. The restaurant became a place of pilgrimage for food lovers, among them Craig Claiborne, who wrote an article about it in The New York Times in 1965. This recipe, which Ms. Groff said "will amaze every guest," serves six, but she noted that you can easily scale it up to serve 30, or possibly more.

1/2 pound thick-cut bacon slices (about 6 slices)
1/2 cup light brown sugar
1 tablespoon Dijon mustard
2 tablespoons red wine

Steps:

  • Heat oven to 350 degrees. Line a baking pan with foil; it should be large enough to hold the bacon in a single layer. Place bacon in pan and bake until lightly browned and crisp, 15 to 20 minutes. While bacon cooks, mix remaining ingredients together.
  • Drain bacon fat from pan. Brush the bacon strips on both sides with the brown sugar mixture. Return bacon to the oven and cook another 10 minutes or so, until glaze is bubbling and darkened.
  • Remove bacon from the oven and transfer to a cutting board or platter lined with foil or parchment paper. Let cool about 15 minutes. Bacon should not be sticky to the touch. Cut each strip in thirds and arrange on a serving dish.

  • Cut the bacon slices in half crosswise. Place the bacon in a single layer in an ungreased 15x10x1 inch jellyroll pan. Bake at 350 degrees for 10 minutes or until almost crisp. Drain well. Return the bacon to the pan.
  • Combine the sugar, wine, and mustard. Brush the bacon with half of the sugar mixture. Bake at 350 degrees for 10 minutes. Turn bacon; brush with the remaining sugar mixture. Bake 10 minutes or until golden (Watch closely, you don't want them too brown!).
  • Serve warm or at room temperature.

1/4 cup maple syrup
1 teaspoon Dijon mustard
1 -2 teaspoon brown sugar

Steps:

  • Cook the bacon in a large skillet over medium-high heat until browned, but NOT crispy; drain on paper towels; set aside.
  • In a small bowl whisk together the maple syrup, Dijon mustard and brown sugar; set aside.
  • Return the bacon back to the skillet and brush with glaze, then turn the bacon over.

An easy recipe for Brussels sprouts. The mix of honey and soy sauce give it an original and interesting flavor. Serve with plain rice, white or whole grain. Great with sausages or pork chops. I do not add salt and pepper, as the bouillon cube, soy sauce, and bacon give enough flavor for our taste. You may cook the sprouts in a microwave instead of boiling if you prefer.

1 (16 ounce) package frozen Brussels sprouts
½ pound smoked bacon, diced
1 large onion, minced

Steps:

  • Bring a pot of water to a boil; dissolve bouillon cube in the boiling water. Add Brussels sprouts; cook until tender, about 10 minutes. Drain.

3/4 cup clover honey
2 tablespoons ancho chile powder
3/4 cup sorghum syrup
3/4 cup packed light brown sugar
1/3 cup finely chopped pecans

Steps:

  • Preheat the oven to 400 degrees F.
  • For the red chile-honey glaze: Lay the bacon in a single layer on a sheet pan, keeping space in between each slice. Place bacon in pan and bake until lightly browned and crisp, 15 to 20 minutes. While the bacon is cooking, whisk together the clover honey and ancho chile powder in a medium bowl until smooth. Remove the bacon from the oven, using mitts, and carefully drain the fat, tipping the pan, into a medium bowl. Blot the top of the bacon with a few paper towels. Place the sheet pan with the bacon on it on a cooling rack and immediately brush each slice with the glaze.
  • For the sorghum glaze: Lay the bacon in a single layer on a sheet pan, keeping space in between each slice. Place bacon in pan and bake until lightly browned and crisp, 15 to 20 minutes. Remove the bacon from the oven, using mitts, and carefully drain the fat, tipping the pan, into a medium bowl. Blot the top of the bacon with a few paper towels. Place the sheet pan with the bacon on it on a cooling rack and immediately brush each slice with the sorghum syrup.
  • For the brown sugar-pecan glaze: Line a baking sheet with a silpat or parchment paper. Lay the bacon in a single layer on the baking sheet, keeping space in between each slice. Divide the brown sugar evenly over the top of each slice of bacon and bake until bacon is golden brown and almost crispy, about 13 minutes. Remove from the oven and sprinkle with the finely chopped pecans, return to the oven and continue baking until pecans are toasted and bacon is crispy, about 3 minutes longer.
  • Let sit at room temperature for 10 minutes.

  • Lay the crackers face up on a clean work surface and scoop 1/2 teaspoon Parmesan on each. Place the crackers seam-side down on a wire rack set over a baking sheet. Bake until the bacon is golden and crisp, about 1 hour.
  • Meanwhile, whisk together the jelly with 1 teaspoon water in a small bowl and microwave on high until warmed through and loose, about 30 seconds; add more water if necessary.
  • When the crackers are done, brush each with the jelly, sprinkle with the cayenne if using and serve immediately.

Spray the tops lightly with vegetable oil spray and then cover with plastic wrap. Let rise 30 minutes.
  • In a 2-quart saucepan, heat the oil over high heat until very hot (a small bit of dough should sizzle vigorously and begin to brown within about 30 seconds of being dropped in. If you have a deep-fry thermometer, the oil should be at about 375º Fahrenheit.)
  • While the oil is heating, set a large plate topped with a double layer of paper towels and a baking rack set over a baking sheet next to the stove. Make your glaze by stirring the powdered sugar and maple syrup together in a small bowl and set that next to the stove, as well.
