MEXICAN PINWHEELS
Mexican Pinwheels are a slightly spiced creamy chicken blend rolled up in easy to eat bite sized pinwheels. Soft pillowy tortillas wrapped around colorful, amazing flavored filling are going to be a hit at your next gathering!

- In a large bowl or stand mixer combine cream cheese, sour cream, rotel, bell pepper, chicken, cheese, taco seasoning, green onions and cilantro. Using the mixer or hand mixer beat together until smooth.
- Place 1/4- 1/2 cup of the mixture on the tortilla and spread leaving about an inch from the edges. Roll up tightly and refrigerate for an hour.
- Slice into one inch pinwheels and serve.

- Cut butter or margarine into flour with pastry blender. Stir in sour cream. Cover and refrigerate at least 8 hours.
- Mix together 3 tablespoons sugar and the cinnamon. Divide dough into halves.
- Roll 1 half into rectangle, 20 x 7 inches, on a sugared, well-floured cloth-covered board. Sprinkle with half of the sugar-cinnamon mixture. Roll up tightly, beginning on the 7 inch side.
- Roll other half of dough into a 20 x7 inch rectangle. Sprinkle with remaining sugar-cinnamon mixture. Place loose end of roll on the 7 inch side of the rectangle; pinch edges to seal. Continue to roll up tightly; pinching edges of dough into roll to seal.
- Wrap and refrigerate at least 1 hour but no longer than 48 hours.
- Preheat oven to 350 degrees F (175 degrees C).
- Cut roll into 1/4 inch slices. (For easier cutting, wrap a length of thread around roll at 1/4 inch increments and pull tightly until slice is cut.) Place about 2 inches apart on ungreased cookie sheet. Mix 3 tablespoons sugar and the water; brush over cookies. Bake until golden brown, 20-25 minutes.

FRUIT PINWHEELS
You get to choose your filling in these delicious (and pretty) pinwheel cookies. We suggest berry, cherry, or orange marmalade.

- In a large bowl beat butter with a mixer on medium to high 30 seconds. Add granulated sugar, baking powder, baking soda, and salt. Beat until combined, scraping bowl as needed. Beat in sour cream, egg, 1 1/2 tsp. of the vanilla, and, if desired, lemon zest. Beat in flour. Divide dough into four portions. Cover and chill 2 hours or until dough is easy to handle.
- Preheat oven to 375°F. Line a cookie sheet with parchment paper. On a lightly floured surface, roll one portion of dough at a time into a 7 1/2-inch square. Using a straight or fluted pastry wheel, cut dough into 2 1/2-inch squares. (Keep remaining dough chilled. If dough becomes too soft, return to refrigerator for a few minutes.)
- Place squares 2 inches apart on prepared cookie sheet. Using pastry wheel, cut 1-inch slits from the corners toward the center of each square. Snip any large pieces of fruit in preserves. Spoon 1 tsp. preserves into center of each square. Fold every other tip (one from each corner) into center to form a pinwheel shape. Gently press dough in center to seal.
- Bake 8 to 9 minutes or just until edges start to brown. Cool on cookie sheet 3 minutes. Remove; cool on a wire rack.
- For icing, in a small bowl stir together powdered sugar, 3 tsp. of the milk, and the remaining 1/2 tsp. vanilla. Stir in enough of the remaining milk to reach drizzling consistency. Drizzle icing over cookies. Let stand until set.

- 1. Lightly spray an 8 or 9 inch square pan with cooking spray. If you do not have cooking spray you can also line the pan with plastic wrap so that it comes up the sides.
- 2. Mix the gelatin and water in a medium sized bowl until gelatin is dissolved.
- 3. Add the marshmallows until they are dissolved into the jello. If the marshmallows do not melt, place in the microwave for 10 second intervals until melted.
- 4. Gently pour the jello/marshmallow mixture into the pan.
- 5. Chill for 1 hour (The marshmallow and jello will separate forming two distinctive layers).
- 6. Remove the chilled jello from the refrigerator and remove from the pan or peel away from the plastic wrap. TIPS FOR REMOVING THE JELLO: You may want to dip a butter knife in hot water and run in around the sides of the pan to loosen it. Also after loosening up the sides you can also roll the jello into a roll in the pan if you are having trouble getting it out.
- 7. With the jello side down (marshmallow side up) roll the square into a roll (pinwheel).
- 8. Use dental floss to cut the Jello into 1/2 inch slices. You should get about 10 to 12 pinwheels.
- 9. Serve immediately or chill in the refrigerator until needed.

- Blend together shortening, 1 cup white sugar, and brown sugar. Add eggs, vanilla, flour, salt, and soda. Mix well, and set dough aside.
- To Make Filling: In a saucepan, combine dates, sugar, water and nuts. Cook over medium heat until thick. Cool filling. If necessary, add water until mixture can be spread easily on the dough.
- Divide dough into 4 parts. Roll out each piece on a floured surface to 1/2 inch thick. Spread with cooled, not cold filling. Roll up jelly-roll style. Close ends and place rolls on cookie sheets. Refrigerate until cold.
- Slice chilled rolls, and bake at 400 degrees F (205 degrees C) for 10 minutes.

- Preheat oven to 400°F. Roll out pastry sheet on work surface to remove creases. Brush pastry with water. Starting at 1 edge, roll up pastry tightly jelly roll style. Cut pastry into generous 1/4-inch-thick rounds. Place sugar on plate and press 1 round into sugar. Set round on baking sheet, sugar side up, tucking end under. Repeat with remaining pastry rounds. - Place the spinach leaves in a skillet with 1/4 cup water. Heat over medium heat for a few minutes until the spinach completely wilts down, about 2 to 3 minutes, stirring occasionally.
