Short of serving store-bought ice cream, you won't find a simpler, more delicious dessert than this fruit cobbler. Use any juicy summer fruit: peaches, nectarines, blueberries, blackberries, strawberries, raspberries. And if you use frozen berries, this dessert can be assembled in less than 10 minutes.

4 tablespoons butter
¾ cup all-purpose flour
¾ cup sugar
1 teaspoon baking powder
¼ teaspoon salt
¾ cup milk
2 cups of sliced fresh peaches or nectarines, or whole blueberries, strawberries, raspberries, blackberries or a combination of fruits (or a 12-ounce package of frozen berries)
1 tablespoon sugar

Steps:

  • Adjust oven rack to upper-middle position, and heat oven to 350 degrees.
  • Put butter in an 8-inch square or 9-inch round pan; set in oven to melt. When butter has melted, remove pan from oven.
  • Whisk flour, 3/4 cup of sugar, baking powder and salt in small bowl. Add milk; whisk to form a smooth batter. Pour batter into pan, then scatter fruit over batter. Sprinkle with remaining 1 Tb. of sugar.
  • Bake until batter browns and fruit bubbles, 50 to 60 minutes. Serve warm or at room temperature with a dollop of whipped cream or a small scoop of vanilla ice cream, if desired.

1/2 tsp. ground cinnamon
1/4 cup sugar, divided
1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
1/4 cup water
1/2 cup milk
1-1/2 cups all-purpose baking mix
1 cup thawed COOL WHIP Whipped Topping

Steps:

  • Heat oven to 350ºF.
  • Combine fruit in large microwaveable bowl. Microwave on HIGH 1 min. Meanwhile, mix cinnamon and 1 tsp. sugar until blended; reserve for later use.
  • Mix dry pudding mix with remaining sugar until blended. Add to fruit mixture along with the water; mix lightly. Spoon into 8-inch square baking dish sprayed with cooking spray.
  • Add milk to baking mix in medium bowl; stir just until moistened. Drop in mounds over fruit mixture; sprinkle with reserved cinnamon mixture.
  • Bake 35 to 40 min. or until fruit mixture is hot and bubbly and biscuit topping is lightly browned. Serve warm topped with COOL WHIP.

This is a recipe a fellow employee gave me years ago when we had one of our monthly pot-luck lunches. It was just so simple and delicious that I haven't made a cobbler the "old-fashioned" way in years.

1 stick butter
2 c baking mix (pioneer or bisquick)
1 c milk
1 c sugar
1 large (#2 1/2) can peaches with juice
1/4 tsp ground cinnamon
1 tsp brown sugar

Steps:

  • 1. Melt butter in 9 x 13 baking dish in oven.
  • 2. Mix baking mix, sugar and milk in a medium bowl.
  • 3. Pour batter in pan with melted butter.
  • 4. Spoon peaches and juice over batter (pour any extra juice over the batter also). Do not stir.
  • 5. Combine brown sugar and cinnamon and sprinkle over top of mixture.
  • 6. Bake for 1 hour at 350 F.

1/2 cup butter
1 cup self-rising flour
1 cup white sugar
1 cup milk
1 (20 ounce) can canned peaches, with fruit and juice divided

Steps:

  • Preheat oven to 350 degrees, put stick of butter in 9x13" pan and melt in oven.
  • Mix flour, sugar, and milk.
  • When your butter is melted pour your mixture into pan directly on top of butter.
  • Place peach/fruit slices into pan on top of cobbler.
