I didn't see anything like this posted on here. My boyfriend makes these and they are really good. I love them.

Steps:
- 1. Remove the stems from the mushrooms.
- 2. Fill caps with french onion dip.
- 3. coat or marinate in the buttermilk.
- 4. coat in flour or you can use bread crumbs if you like.
- 5. fry in hot oil.
- Heat the oil on about medium high and I stand by the stove turning them over since they float. Once the filling starts to ooze out I take them out. If the oil is too hot the filling will ooze out right away but if it is not hot enuf they will not get crispy before the filling starts to come out.
- U can also season the flour or bread crumbs but I don't because I like the flavor a little plain with the rich french onion dip.

EASY STUFFED PORTOBELLA MUSHROOMS RECIPE

- Heat the oven to 400 degrees.
- Brush off mushrooms with brush or slightly damp towel. Core the mushrooms and set stems aside
- Arrange mushroom caps in a 9x13 pan with the top side of the mushroom down.
- Put the mushroom stems, 2 tablespoons breadcrumbs, garlic, ¼ cup of the parmesan cheese, and 2 tablespoons of white wine into a food processor
- Blitz to combine ingredients until they are finely chopped
- Add salt and pepper to taste and mix for another couple of seconds to combine. The mushroom stuffing should be moist enough to hold shape when compressed, but not saturated
- Spoon stuffing mixture into each of the mushroom caps.
- Mushrooms must be packed and somewhat over flowing or full.
- Sprinkle 1 tablespoon of breadcrumbs over the stuffed mushrooms
- They will look like this.
- Followed by two tablespoons of Parmesan cheese.
- Pour about ¼ cup of white wine into the pan - this is to help steam the mushrooms as they cook - this should be enough to put a shallow layer of wine in the bottom of the pan, but not enough to make the mushrooms float.
- Cover the pan with foil and bake for 30 minutes
- After 30 minutes, remove foil and continue to bake the stuffed mushrooms for an additional 10 minutes, or until the mushrooms are tender.
- Remove from oven.
- Enjoy every bite!
AIR FRYER STUFFED MUSHROOMS
Air frying is the perfect way to cook stuffed mushrooms, especially for smaller quantities. The air fryer cooks them quickly and gives the mushrooms a perfect texture. If you fill the 8 oz's of mushroom caps full, you won't have much left over. But if you decide to fill the mushrooms with less filling, then you'll have some left over. All air fryers are different and some cook much hotter than others. Once you cook your first batch, you'll know more of what works for your model of air fryer and size of food. These recipes were tested on basket style air fryers.

- Removed the stems from the mushrooms, then dice the stems and set aside about 1/2 of the diced stems.
- In a bowl make the filling: mix together the cream cheese, garlic powder, paprika, chili powder, salt and pepper until smooth. Fold in the reserved diced mushroom stems.
- Spray the mushroom tops with oil spray. Make sure to spray liberally, because if you don't spray the tops of mushrooms enough, they might dry out during air frying. Fill the cavity of mushroom tops with the cream cheese mixture. Place the mushrooms in the air fryer basket (only place the mushrooms a single layer - if needed cook in multiple batches).
- Air Fry at 360°F/180°C for 6-8 minutes, depending on the size of the mushrooms.
- Top the stuffed mushrooms with grated cheese. Air Fry at 360°F/180°C for another 1-2 minutes, or until the cheese is melted. Let the mushrooms cool slightly then garnish with minced parsley and serve. Serve warm or at room temperature.

- Pour oil into a large saucepan or deep fryer to a depth of 3 to 4 inches. Heat the oil to 350 degrees.
- Gently clean the mushrooms with a damp paper towel. If these stems are very large (greater than 3/4 inch), trim off the stem, as they may be woody. If the mushrooms are small, there is no need to trim off the stem.
- Combine the flour with the salt and pepper in a bowl. Stir to combine the flour mixture.
- Combine buttermilk and water in another bowl
- Dredge the mushrooms in the seasoned flour, shaking off the excess, and then dip them in the buttermilk.
- Dredge them in the flour again. Knock off the excess flour.
- Lower the mushrooms gently into the hot oil, cook them until they are golden brown. It will take about 2 to 3 minutes for the mushrooms to cook. Drain on a wire rack. Serve with your favorite sauce.

- Using a damp cloth, gently clean mushrooms. Remove stems and discard.
- Mince scallions and separate white and green parts.
- Preheat an air fryer to 360 degrees F (182 degrees C).
- Combine cream cheese, Cheddar cheese, the white parts from the scallions, paprika, and salt in a small bowl. Stuff filling into the mushrooms, pressing it in to fill the cavity with the back of a small spoon.

- In a medium bowl, stir together the flour and garlic salt. Mix in egg and water until smooth.

- Set oven to 350 degrees.
- Butter a shallow baking dish.
- Clean mushrooms with a brush (do not use water to clean the mushrooms).
- Gently twist off stems, setting mushroom caps aside.
- Finely chop stems, very small.
- In a bowl mix crumbs with the chopped stems, melted butter, Parmesan, salt (I use seasoned salt), black pepper and garlic powder.
- Fill caps with crumb mixture.
- Top with grated mozza cheese (at this point, the mushrooms may be refrigerated then baked at a later time).
- Set caps on buttered baking dish.
