3/4 cup chopped ham
2 Tablespoons low-sodium chicken broth

3 tbsp canola oil (OR peanut, or avocado oil)
1 tbsp butter
4 eggs (lightly beaten)
2 large carrots (peeled and cut into 1/4-inch cubes)
1 small white onion (diced)
2/3 cup cubed ham
3 cloves garlic (minced)

2 tsp sesame oil
3 tsp oyster sauce

Once the butter has melted, add the lightly beaten eggs. Let them cook for about 30-40 seconds or until set, then scramble. Once the eggs are fully cooked, remove them and set them aside.
  • Add the oil to the pan, when the oil is hot, add the carrot and cook for 1 minute. Add onion and ham, cook until onion is soft and translucent. Add the garlic and cook until fragrant, taking care not to brown.
  • Turn the heat up slightly and add the cold rice. Cook the the mixture for about 2 minutes, then stir. Repeat two more times. Add the soy sauce, sesame oil and oyster sauce. Sprinkle in the egg, peas, and green onion, cook for an additional 2 minutes or until the peas are cooked throughout.

HAM AND EGG FRIED RICE

Ham and Egg Fried Rice image

Provided by Food Network

Yield 4

Number Of Ingredients 7

2 large eggs, lightly beaten
3 1/2 to 4 tablespoons corn or peanut oil
3 1/2 cups cold cooked rice
2 to 3 ounces honey or sugar-cured ham (yielding 1/2 cup cubed ham)

3 tablespoons green and white scallions Peanuts

Steps:

  • Heat a wok or a small, heavy skillet over high heat. Add 1 1/2 tablespoons oil, swirl to coat the pan. Add eggs and scramble them. As soon as there is no more freely running egg, turn them out into a bowl and break them into small bits. They should be soft and a bit runny -- not brown.

Toss to mix in the ingredients and allow the mixture to heat through, about 30 seconds. Return the eggs to the pan and toss to combine. Season with salt, scallions and peanuts, tossing another 5 to 10 seconds to let the eggs get hot.

EASY HAM FRIED RICE

Easy Ham Fried Rice image

This inst your traditional fried rice, but it is a great recipe, using another recipe that is posted on here for soy sauce, Recipe #111373, which I used for low sodium content. That is probably why it doesn't taste like most fried rice, because soy sauce has A LOT of salt in it. This recipe makes a lot!

Provided by Miss Diggy

Categories     Ham

Time 25m

Yield 6-8 serving(s)

Number Of Ingredients 9

6 cups cold cooked rice (leftover)
5 tablespoons oil, divided
1 onion, diced
1 teaspoon garlic, minced
1 carrot, shredded
1 (16 ounce) package frozen peas
2/3 cup diced ham
4 eggs
1/2 cup soy sauce, Soy Sauce Substitute - Gluten Free

  • Once heated add in cold rice and let sizzle and brown, stirring occasionally. This usually takes about 10 minutes.
  • Once done add in the rest of the oil, onion, garlic, carrot, peas, and ham, mixing it all in together and letting this cook for 5 minutes.
  • Then push rice to the side of pan and drop in the eggs and scramble them, making sure the pieces are small.
  • Once eggs are done, incorporate them into the rest of the fried rice and add in the soy sauce, mixing well.

MY GO-TO FRIED RICE RECIPE {EASY HAM FRIED RICE}

My Go-To Fried Rice Recipe {Easy Ham Fried Rice} image

Provided by Mel

Time 30m

Number Of Ingredients 10

3 large eggs
1 teaspoon sesame oil
1 teaspoon olive oil
Salt and pepper
2 cloves garlic (finely minced (or 1/2 teaspoon garlic powder))
2 to 3 green onions (finely chopped)
3 cups cooked cold rice (see note)
1 to 2 cups diced leftover ham (or deli ham)
1/2 to 1 cup frozen peas
2 to 3 tablespoons soy sauce (see note)

Steps:

  • Whisk together the eggs with a pinch of salt and pepper. Heat the sesame and olive oil in a 12-inch nonstick skillet over medium heat. Add the eggs and let the mixture cook until set on the bottom, just a few seconds. With a rubber spatula turn the eggs slowly until mostly cooked. Scoot them to the side of the skillet.
  • If the skillet is dry, add another sploosh of oil (sesame or olive oil) to the center of the skillet. Add the garlic and the white parts of the green onions to the skillet and cook for 20-30 seconds, until sizzling (but not burning!) and the mixture smells fragrant.
  • Add the cold rice on top of the onions and garlic (keep the eggs mostly over to the side still), breaking the rice into clumps. Cook until the rice is sizzling and the clumps start to separate into smaller pieces, 3-4 minutes. Incorporate the eggs back into the rice mixture.
  • Add the chopped ham and peas and stir to combine. Add the soy sauce stir until evenly incorporated. Cook the fried rice until all the ingredients are heated through, 4-5 minutes.
  • Serve immediately with additional soy sauce, if desired, and the green parts of the onion. (If not serving with additional soy sauce, season to taste with additional salt and pepper, as needed.)

  • Basic Chinese Fried Rice. A traditional Chinese fried rice usually features lap cheong (a sweet and salty Chinese sausage). If you don’t have an Asian market near you, you can substitute bacon, ham, salami, or chorizo.
  • Chicken Fried Rice. If chicken fried rice is your go-to Chinese food order, then it’s worth knowing how to make on your own. Marinate the chicken in a mix of soy sauce, oyster sauce, minced garlic, and Sriracha first for a couple of hours to impart even more flavor.
  • Shrimp Fried Rice. Shrimp is the special ingredient in this fried rice classic. This recipe is spicy, but you can tone it down by swapping in a sweet red, orange, or yellow pepper for the jalapeño.
  • Pork Fried Rice. Pork fried rice is one of the closer iterations to traditional Chinese fried rice, and particularly this version since it features some of the spices you might find in homemade lap cheong.
  • Vegetable Fried Rice. We love vegetable fried rice for its versatility. Our recipe is made super easy with a bag of pre-cut vegetables, but you can use any fresh or frozen veggies you’d like.
  • Pineapple Fried Rice. If you like a touch of extra sweetness, then you’ll love pineapple fried rice. This is a Thai twist on Chinese fried rice, but it’s equally delicious in our book.
  • Beef Fried Rice. Next up is beef fried rice. This recipe uses flank steak, but another tender and quick-cooking cut like sirloin would work as well. Ingredients
  • Plain Fried Rice. Plain fried rice is as simple as it gets, featuring just rice and egg. If you want, you can add in aromatics to amp up the flavor, such as garlic, scallions, or basil—though that’s completely up to you.
