- Combine eggs and salt. In a large skillet or wok over medium heat, scramble eggs in 1 teaspoon oil, breaking into small pieces. - Leftover cooked and cooled rice works best, and could be made earlier in the day and refrigerated until cold. Use wet fingers to separate the rice grains.
- Heat 1 Tablespoon of oil in a wok or frying pan. Beat the eggs in a small bowl and add to the pan when the oil is hot.
- Stir gently with a wooden spoon just until cooked. Transfer to a bowl and set aside.
- Add another tablespoon of oil to the pan. Add peas, carrots and ham and saute for several minutes. Remove to the bowl with the eggs.
- Add another tablespoon of oil to the pan over medium high heat. When the oil is hot, add the rice and toss every 30 seconds until it's lightly browned, about 5 minutes.
- Add the chicken stock, soy sauce and green onion and toss to combine. Return eggs and veggies to the pan.
- Add more soy sauce, to taste, if desired. Serve immediately.

- Preheat an extra large skillet or wok to medium heat (I've used both a nonstick and a regular skillet, I prefer a nonstick for this rice). Add 1 tbsp. of the butter into the pan. Once the butter has melted, add the lightly beaten eggs. Let them cook for about 30-40 seconds or until set, then scramble. Once the eggs are fully cooked, remove them and set them aside.
- Add the oil to the pan, when the oil is hot, add the carrot and cook for 1 minute. Add onion and ham, cook until onion is soft and translucent. Add the garlic and cook until fragrant, taking care not to brown.
- Turn the heat up slightly and add the cold rice. Cook the the mixture for about 2 minutes, then stir. Repeat two more times. Add the soy sauce, sesame oil and oyster sauce. Sprinkle in the egg, peas, and green onion, cook for an additional 2 minutes or until the peas are cooked throughout.
- Remove and season to taste.

- Heat 2 tablespoons of sesame oil in a large, high-walled skillet over medium heat. Add the Sam's Choice® Premium Spiral-Cut Ham and fry until warmed through and browned, about 3-4 minutes. Transfer the ham to a medium bowl and set aside.
- Add another 2 tablespoons of sesame oil to the pan, then add the beaten eggs. Cook, stirring, for 1-2 minutes, until the eggs are soft-scrambled. Add to the bowl with the ham and set aside.

- Beat eggs in a small bowl with a large pinch of salt and pepper to taste. Set aside.
- Add the canola oil and 1 teaspoon sesame oil to a large non-stick skillet or wok and place over MEDIUM heat. Add the beaten egg to the hot skillet and cook, stirring, until it begins to form soft curds, about 30 seconds. Transfer the soft-cooked eggs to a plate and set aside.

- Heat a wok or a small, heavy skillet over high heat. Add 1 1/2 tablespoons oil, swirl to coat the pan. Add eggs and scramble them. As soon as there is no more freely running egg, turn them out into a bowl and break them into small bits. They should be soft and a bit runny -- not brown.
- Heat the wok or a large skillet and add 2 tablespoon oil to coat. Add the rice and toss briskly to coat and separate each grain, about 2 to 3 minutes. Add the ham and peas. This inst your traditional fried rice, but it is a great recipe, using another recipe that is posted on here for soy sauce, Recipe #111373, which I used for low sodium content. That is probably why it doesn't taste like most fried rice, because soy sauce has A LOT of salt in it. This recipe makes a lot!

- Once heated add in cold rice and let sizzle and brown, stirring occasionally. This usually takes about 10 minutes.

MY GO-TO FRIED RICE RECIPE {EASY HAM FRIED RICE}

- Whisk together the eggs with a pinch of salt and pepper. Heat the sesame and olive oil in a 12-inch nonstick skillet over medium heat. Add the eggs and let the mixture cook until set on the bottom, just a few seconds. With a rubber spatula turn the eggs slowly until mostly cooked. Scoot them to the side of the skillet.
- If the skillet is dry, add another sploosh of oil (sesame or olive oil) to the center of the skillet. Add the garlic and the white parts of the green onions to the skillet and cook for 20-30 seconds, until sizzling (but not burning!) and the mixture smells fragrant.
- Add the cold rice on top of the onions and garlic (keep the eggs mostly over to the side still), breaking the rice into clumps. Cook until the rice is sizzling and the clumps start to separate into smaller pieces, 3-4 minutes. Incorporate the eggs back into the rice mixture.
- Add the chopped ham and peas and stir to combine. Add the soy sauce stir until evenly incorporated. Cook the fried rice until all the ingredients are heated through, 4-5 minutes.
- Serve immediately with additional soy sauce, if desired, and the green parts of the onion. (If not serving with additional soy sauce, season to taste with additional salt and pepper, as needed.)
