VANILLA ICED COFFEE -- SIMPLE AND EASY
It only takes a minute to make up a tall, cold glass of this refreshing, hot-weather drink. You've probably got all the ingredients on hand. While its best if you thought ahead to make some double-strong coffee, that last mugfull that got cold in the pot will do. ;) (I confess, I can't afford to use real vanilla all the time. The artificial kind works just fine in this for my tastes).

DELICIOUS HOMEMADE ICED COFFEE
I based this homemade iced coffee on Starbucks® bottled Frappuccino®. My husband and I love it and our fridge is never without a pitcher of this super easy, frugal alternative to the expensive stuff. Even though winter's coming and we live in Pennsylvania's Lake Erie snowbelt, we drink this year-round as an alternative to soda and other soft drinks. This particular recipe lends itself to endless variations limited only by your imagination!

Steps:
- Grind the coffee beans to a medium grind using a coffee grinder (a burr grinder is most consistent but not required). The size of grind is important: if it's too fine it can create sediment; if it's too coarse it's not flavorful enough.
- Heat the water to hot but not boiling (200 to 205 degrees Fahrenheit) using an electric kettle, or bring it to a boil on the stovetop and then let it sit for 1 minute to decrease in temperature.
- Add the coffee grounds to the bottom of the pot.
- Add hot water to the height of the coffee and stir with a spoon. Set a timer and wait for 1 minute.
- Fill the French press to the top (just below the spout) and stir again. Set a timer and wait for 4 minutes.
- Place the lid on the French press and slowly press the plunger all the way down.
- Fill two tall glasses with ice. Pour the hot coffee over the ice (about half the ice should melt). Add additional ice if necessary. If desired, serve with a splash of milk or a drizzle of sweetener like maple syrup or simple syrup.

- Pick your favorite pour-over brewer. We like to use a Hario V60, but you could use a Chemex or Kalita Wave with similar results.
- Put 150 g of large ice cubes in your mug if you're using a V60 or in your Chemex if you're using one instead.
- Rinse the paper filter away from the ice cubes. This can be a bit tricky to do, so be careful not to burn your hand. It's helpful to have another mug nearby to use to catch the rinse water.
