This is my 90-year-old grandmother's recipe. Very simple.

2 cups packed brown sugar
3 cups all-purpose flour
1 tablespoon baking soda
2 tablespoons ground cinnamon
2 tablespoons ground cloves
2 tablespoons ground allspice
2 tablespoons ground nutmeg
4 eggs
2 tablespoons lemon zest
2 tablespoons vanilla extract
½ cup brandy
1 ½ cups raisins
1 ½ cups chopped nuts
1 ½ cups dried mixed fruit
1 ½ cups butter, melted
1 ¾ cups brandy

Steps:

  • Preheat oven to 225 degrees F (110 degrees C). Grease and flour a tube pan.
  • In a large bowl, combine sugar, flour, soda, spices, eggs, lemon rind, vanilla, 1/2 cup brandy, fruit, nuts, and melted butter or margarine. Mix thoroughly. Pour into prepared pan.
  • Bake for 1 hour, or until a tester inserted in the center comes out clean. Cool on a wire rack.
  • Wrap cooled cake in foil. Sprinkle 2 tablespoons brandy over the cake everyday for 2 weeks.

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 Tablespoon cinnamon
1/2 teaspoon ground cloves (to taste)
1/2 teaspoon nutmeg (to taste)
1/2 teaspoon ginger (to taste)
1/3 cup butter (room temperature)
1 cup brown sugar
1/3 cup warm water
1/2 cup milk
1 teaspoon vanilla
2 eggs
1 cup candied peel (to taste)
1/2 cup chopped pecans or walnuts (to taste)
1/2 package (4oz cream cheese)
1 1/2 to 2 cups powdered icing sugar
1-2 Tablespoons table cream (as needed)

Steps:

  • Preheat oven to 350F
  • Grease and line a 9" x 4" loaf pan. Set aside.
  • In a small bowl, combine the flour, baking powder, salt and spices. Set aside.
  • In a large bowl, combine the butter and brown sugar and beat until light and fluffy, 2 minutes.
  • Add the warm water, milk, vanilla and eggs. Beat until thoroughly combined.
  • Add half of the flour mixture, mix until combined, and then the remaining half. Do not overmix.
  • Add in the candied peel and nuts, to taste.
  • Fold the mixture into the prepared loaf pan and bake for 40-50 minutes until an inserted toothpick comes out clean.
  • For the frosting, combine the cream cheese and powdered icing sugar for 2 minutes until smooth and light. Adjust the consistency with more powdered sugar or cream.

3 cups all-purpose flour, divided
1 pound chopped candied fruit
2 packages (8 ounces each) pitted dates, chopped
1 package (15 ounces) raisins
1 cup chopped walnuts
1 cup chopped pecans or almonds
1 cup butter, softened
1-1/4 cups packed brown sugar
4 eggs
1 teaspoon baking soda
1 teaspoon salt

1/4 cup orange juice
GLAZE:
1 cup confectioners' sugar
2 tablespoons 2% milk

  • In large bowl, combine 1/4 cup flour, candied fruit, dates, raisins and nuts; toss until well coated; set aside., In another large bowl, cream butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the baking soda, salt, cinnamon, cloves and remaining flour; gradually add to creamed mixture alternately with orange juice, beating well after each addition. Stir in fruit and nut mixture; mix well., Spoon into five greased 5-3/4x3x2-in. baking pans (pans will be full). Bake at 325° for 1 hour. Cover with foil; bake 10-15 minutes longer or until a toothpick inserted in the center comes out clean. Let stand for 10 minutes before removing from pans to wire racks. , In a small bowl, combine glaze ingredients until smooth. With a pastry brush, brush glaze over warm loaves. Cool completely.

This classic dark fruitcake is dense with glazed fruits and nuts with added dried fruits and dates. Enjoy it freshly baked or aged for some weeks or months.

1.5 cups glazed fruits
1 cup dates (chopped )
1.5 cups raisins
1 cup dried fruits (like apricots, figs, cranberries, apples, pineapple)
1 cup brandy or rum ((SEE NOTE 1))
1.5 cups vegetable oil
2 cups brown sugar
5 large eggs
1 teaspoon salt
2 teaspoons cinnamon powder
1/2 teaspoon all-spice
1/2 teaspoon nutmeg
1/4 cup corn syrup
1/4 cup dutch process or dark cocoa powder
4 cups all-purpose flour
1.5 teaspoons baking powder
1 cup nuts (like cashew, walnuts, pecan or almonds) (chopped)
1 cup water
maraschino cherries
whole dates
whole pecan or walnut

Steps:

  • Combine all the ingredients for fruits in a non-reactive bowl. Cover and let soak overnight. If you do not have the time to wait, place uncovered in microwave and heat until very hot. Cover and let it cool down and rest for about an hour.
  • Grease and flour pans and set aside (SEE NOTE 2). Preheat oven to 150°C/300°F.
  • In a large mixing bowl, beat brown sugar and oil with an electric mixer until well combined. Add the eggs, one at a time while beating for 20-30 seconds after every addition.
  • Add the salt, cinnamon, all-spice, nutmeg and corn syrup and mix. Add the cocoa powder and mix well. Gradually add the flour, a cup at a time, combining each addition to the mixture well. Add the baking powder and mix again.
  • Slowly pour in water while mixing the batter. Then add the fruits including the liquids, if any, and the nuts. Mix well.
  • Spoon the batter into the prepared pans, filling each up to 3/4 full. Decorate the top with maraschino cherries, dates and nuts as desired.
  • Arrange the pans on a baking tray and place it on the middle shelf of the oven bake for 80 minutes to 2 hours depending on the size of the pan. (SEE NOTE 3) Or until an inserted toothpick to the center of the cake come out clean.
  • Remove fruitcake from the oven. While still hot, poke cake with a skewer in several places. Brush or drizzle with rum or brandy.
  • To age or ripen, wrap them in cheesecloths soaked in rum or brandy (mostly damp but not dripping) and place them in a plastic bag or tin box. Let it sit for up at least a month re-brushing with the same liqueur at least once a week to keep them mist. If time is too short then age it for at least a week.

180 ml Water (3/4 cup)
Zest of 1 orange
Zest of 1 lemon
600-800 g Dry Fruits and nuts
175 g Raisins
200 g Dried Cranberries
200 g Prunes
100 g Dates
75 g Chopped Pecans
Nutmeg,cloves,cardamom,dry ginger

Steps:

  • Step 1.Boil the dry fruits In a medium saucepan, combine the butter with the raisins, cranberries, brown sugar,molasses and water and bring to a boil. Simmer over moderately high heat for 3-4 minutes, stirring occasionally. Remove from the heat and let stand for 45 minutes or until it is cool.Step 2.Add all the rest of ingredientsAdd the eggs (lightly beaten) and vanilla extract(optional) and the nuts.Add in the flour mix which is Flour+Baking powder+Salt+Ground spices+Zest of orange and lemon.I didn't add the spices and the zest of lemon and orange into the boil mix because we need to preserve the fresh smell of those spices and that of lemon and orange.The taste of a fruit cake is mostly the aroma of that cake :)Mix everything together, just until everything is well incorporated.Step 3.Bake the fruit cakeTransfer the batter into the prepared pan.7 inch pan / 8 inch pan will work. Bake in the center of the oven @ 320F for about 75-90 minutes, until a toothpick inserted in the center comes out clean.Large baking tray (8 inch) will take slightly less baking time. Let the cake cool completely.Unmold the cake and transfer to a serving platter. This fruit cake is best to serve the next day.The flavor and texture of cake improves a lot with that time.The cake may seem buttery and crumbly and less flavorful if we cut it immediately it is cooled.

  • In a large bowl, combine remaining ingredients; blend in dry ingredients.

1¼ cups (200 g) golden raisins
2 cups (320 g) mixed unsweetened dried fruit, chopped
1 cup (160 g) dried unsweetened black figs (chopped)
1 cup (160 g) dried unsweetened tart cherries (chopped)
¾ cup (120 g) dried unsweetened prunes (chopped)
¾ cup (6 oz; 180 mL) dark rum
1½ cups (180 g) unbleached all-purpose flour
½ teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon ground ginger
¼ teaspoon ground nutmeg
1 teaspoon Diamond Crystal kosher salt
1 stick (4 oz; 115 g) unsalted butter (softened)
¾ cup (160 g) packed light brown sugar
5 large eggs (room temperature)
1 tablespoon freshly grated lemon zest
1 tablespoon freshly grated orange zest
½ cup (120 mL) freshly squeezed orange juice
1 Granny Smith apple (peeled and coarsely grated)

Steps:

  • The Day Before Baking: Combine the dried fruit in a large mixing bowl. Add the dark rum, cover, and allow the mixture to soak at room temperature for a minimum of 12 hours, or ideally 24 hours prior to preparing the fruit cake batter.
  • Prepare the Fruitcake: Preheat the oven to 300°F (150°C) with a rack in the center position. Set aside two 8x4-inch All Clad Pro-Release Bakeware Loaf Pans. If using these pans, you do not need to line or grease the pans prior to adding the batter. Equipment Note: This fruitcake can also be prepared using 9x5-inch loaf pans. If using other types of pans, lightly grease and line with parchment paper.
  • In a medium mixing bowl, whisk together the all purpose flour, baking powder, spices, and salt. Set aside.
  • In the bowl of a stand mixer fitted with a paddle attachment, cream the softened butter and light brown sugar together over medium-high speed for 3 minutes, or until light and fluffy. Reduce speed to medium and add the eggs one at a time, beating just until each egg is incorporated. The mixture will look slightly broken, that's ok.
  • Over low speed, slowly add the flour mixture until just absorbed. Remove the bowl from the stand mixer. Add the lemon zest, orange zest, fresh orange juice, grated apple, slivered almonds, diced candied ginger, soaked dried fruit mixture (along with any liquid if it hasn't already been absorbed), and chocoate (if using). Stir mixture with a large spatula, scraping the edges and bottom of the bowl several times, until all of the ingredients are evenly incorporated. It is a very thick, fruit heavy mixture.
  • Transfer and divide the batter evenly among the loaf pans. Use an offset spatula to smooth the batter into an even layer. Set the loaf pans on the center rack, several inches apart from one another. Bake - rotating the pans halfway - for 75 to 90 minutes or until the batter is set and the tops are golden brown. The edges of the cake may also start to pull away slightly from the edges of the pan. Remove from the oven and place on a rack to cool completely before removing from the pans.
  • Storing and Aging: Once the cake has cooled, carefully remove the cakes from the loaf pans and set upright. Soak two large pieces of cheesecloth in medium sherry or triple sec (*they should be lightly damp, not soaking wet when you wrap the cakes, so you may need to squeeze out any excess liquor). Wrap each cake tightly. Cover loafs with wax paper and foil before transferring to a large Ziploc bag. Store in the refrigerator for up to 6 to 8 weeks (it can often last even longer). You can serve this cake right after it has cooled, but the flavors improve greatly with time (I recommend several days or up to a week, at minimum). Unwrap and re-soak the cheesecloth once a week.
  • For Garnishing: If desired, you can top the fruitcake with a light apricot glaze and whole pecans before serving. Note: I don't recommend glazing the cake if you wish to continue to wrap and age the fruitcake. To Prepare the Glaze: Combine the apricot preserves and water in a small saucepan. Bring to a light simmer, stirring until the glaze is shiny and thin. If it is too thin for glazing, reduce to desired consistency. If it becomes too thick, add a teaspoon of water. Brush the tops of the fruitcakes with apricot glaze and garnish with whole pecans.
  • Serving Notes: Slice fruit cake with a serrated knife. Serve on its own or spread with a small amount of salted butter.
