HOLLANDAISE SAUCE (EASY & NO-FAIL)

Steps:
- Melt the butter in a microwave (make sure it's covered as it will splatter) for about 1 minute, until it's hot. Alternatively, you could heat it on the stove.
- Add the egg yolks, lemon juice, dijon, salt and cayenne pepper into a high powered blender and blend for 5 seconds until combined.
- With the blender running on medium high, slowly stream in the hot butter into the mixture until it's emulsified.
- Pour the hollandaise sauce into a small bowl and serve while warm.

- Add egg yolks to a small saucepan; whisk until lemon yellow and slightly thick, about 1 minute. Whisk in lemon juice.
- Add 2 tablespoons cold butter, and place over very low heat. Whisk constantly while butter is melting, and continue whisking until thick enough to see the pan between strokes. Remove pan from heat, and beat in 1 tablespoon cold butter. Repeat. Whisk in melted butter a little bit at a time. Season with salt and white pepper to taste.

DILL HOLLANDAISE

Steps:
- 1. In a blender, combine egg yolks, pepper, and 1 tablespoon of lemon juice.
- 2. In a small saucepan, melt the butter and heat until bubbling hot.
- 3. Cover the blender and blend the egg yolk mixture on high speed for several seconds.
- 4. Either remove center cap of blender lid or carefully remove the lid itself with blender still running.
- 5. Pour hot butter in a thin stream into whirring egg mixture.
- 6. Add dill and pulse to combine.
- 7. Taste sauce and adjust seasoning with lemon juice, salt, and pepper.
- BASIC 1-2-3
- If sauce gets too thick, add one tablespoon of hot water at a time to make it thinner.
EASY DILL HOLLANDAISE SAUCE
This hollandaise uses a microwave instead of a double boiler, cutting back tremendously on prep time and mess. The melted butter provides enough heat to cook the sauce. This recipe makes enough sauce to cover 2 servings of eggs Benedict.

- In a mini-food processor or a blender, add the egg yolks, mustard, salt, pepper and lemon juice. Process for 30 seconds.
- In a small saucepan set over medium heat, add the butter and heat slowly until it is melted and just begins to foam. Transfer the melted butter to a small pitcher or pourable container.
- With the processor running, slowly, drizzle the melted butter through the lid opening into the egg mixture. Continue processing and drizzling until all the butter has been incorporated. - Make the hollandaise sauce: Boil a few inches of water in a medium saucepan. Turn off the heat and place a metal bowl large enough to cover the saucepan on top, making sure the bottom of the bowl does not touch the water directly. Add the egg yolks and 2 tablespoons of water to the bowl and whisk continuously until the mixture becomes light and frothy. Continue whisking until the mixture thickens and forms a ribbon when you lift the whisk, about 5 minutes.
- Add the melted butter, a little at a time, to the egg mixture, whisking continuously, until you've incorporated all the butter. Add the lemon juice, a pinch each of salt and pepper, and the dill. Keep the hollandaise barely warm over the hot water. (Makes 1 1/2 cups sauce.)
- Alternatively, you can make the hollandaise in a blender. Place the egg yolks, lemon juice, pinch of salt and white pepper in a blender. Add 2 tablespoons boiling water and blend for a few seconds. Melt the butter until it just starts to boil. Take the butter off the heat, turn the blender back on and add the hot butter in a slow, steady stream until combined. Pour into a bowl and stir in the dill.
- In a large skillet over high heat, heat the olive oil until quite hot. Toss in the asparagus and a pinch of salt and cook, flipping the spears of asparagus so that they sear evenly. Continue cooking over high heat, until the spears roast and begin to caramelize but haven't lost their vibrant color or some of their crunch, about 5 minutes. Remove from the heat and place on a serving platter; serve with a bowl of the hollandaise sauce.
