1 package (.3 ounces) sugar-free lemon gelatin
1/2 cup boiling water
3/4 cup cold water
Sugar substitute equivalent to 3 tablespoons plus 1 teaspoon sugar
1 cup 1% cottage cheese
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
1 reduced-fat graham cracker crust (9 inches)
1/2 cup 100% strawberry spreadable fruit
8 large strawberries, halved

Steps:

  • In a large bowl, dissolve gelatin in boiling water. Stir in cold water and sugar substitute. Refrigerate until partially set., In a fine strainer, drain the cottage cheese. Place cottage cheese in a blender; cover and process until smooth. Transfer to a bowl; stir in gelatin mixture. Fold in whipped topping. , Pour into crust. Refrigerate until set. Just before serving, cut into slices; garnish each with 1 tablespoon spreadable fruit and two strawberry halves.

1 package (1 ounce) sugar-free instant vanilla pudding mix
1 teaspoon Crystal Light lemonade drink mix
1 cup cold fat-free milk
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed, divided
1 reduced-fat graham cracker crust (9 inches)

Steps:

  • Combine pudding mix and soft drink mix. In a small bowl, whisk milk and pudding mixture for 2 minutes. Let stand for 2 minutes (pudding will be stiff). , Fold in half of the whipped topping. Spread into crust. Top with remaining whipped topping. Cover and chill for 2-3 hours or until set.

1 tsp. crystal light lemonade flavor drink mix
1/4 c cold fat-free milk
1 tub (8 oz.) cool whip free whipped topping, thawed
1 ready-to-use reduced-fat graham cracker crumb crust (6 oz.)

Steps:

  • 1. BEAT cream cheese and drink mix in large bowl with mixer until well blended. Gradually add milk, mixing until well blended. STIR in COOL WHIP; spoon into crust. REFRIGERATE 4 hours or until firm.

1 1/2 cups skim milk
1 8 oz Cream Cheese
1 8 oz tub Cool Whip Lite whipped topping, divided in half
1 Grahm Cracker Pie Crust,

Steps:

  • Combine pudding mix, Crystal Light Drink Mix and milk over medium heat until thickened. Set aside to cool.
  • In a mixer, beat cream cheese until smooth. Slowly fold in pudding mixture.
  • Fold in 1/2 Cool Whip whipped topping.
  • Pour into crust and top with remaining whipped topping.

1 9-inch pie shell
2 envelopes unflavored gelatin
1/2 cup granulated sugar
3/4 cup boiling water
2 whole eggs, separated
1/2 ounce crystal light lemonade mix (the amount that would make 1/2 gallon of lemonde)
1 cup crushed ice
1 -2 tablespoon fresh lemon zest

Steps:

  • Bake pie crust as directed on package for crust that will be filled with an unbaked pie.
  • Cool.
  • In small bowl, with electric mixer, beat egg whites until fluffy, about 2 minutes.
  • Gradually add 1/4 cup sugar and beat until egg whites are stiff.
  • Set aside.
  • In food processor or blended, combine gelatin, 1/4 cup sugar and boiling water.
  • Process on High about 40 seconds.
  • Add egg yolks and process another 10 seconds.
  • With food processor running, add Crystal Light powder and crushed ice.
  • Process until smooth.
  • Pour into mixing bowl and gently fold in egg white mixture until well-blended.
  • Pour into baked pie crust.
  • Sprinkle with lemon zest.
  • Chill several hours until set.
  • To serve, slice into wedges and top with fat-free non-dairy topping.
