This is a wonderful recipe. This was given to our family years ago by a good friend through the Boy Scouts. My brother would eat it all if he was allowed to and now my children who are both little love this dish. For people on a low budget this is an easy meal to make and it is easy to reheat. My mother, who does not eat chicken, loves the topping of this dish.

8 skinless, boneless chicken breasts
1 (10.75 ounce) can condensed cream of chicken soup
⅓ cup water
8 slices Swiss cheese
2 cups Italian seasoned bread crumbs
½ cup butter

Steps:

  • Preheat oven to 350 degrees F(175 degrees C).
  • In a 9x13 inch baking dish, layer the chicken breasts, soup and water. Top each breast with a slice of Swiss cheese, then top it all with the breadcrumbs. Cut the butter or margarine into pads and place them over the top of the casserole.
  • Bake in the preheated oven for 45 minutes. Let cool and serve.

Chicken breasts topped with Swiss cheese and baked in a creamy white wine sauce. I made this dinner for my senior prom date almost 20 years ago. She is but a distant memory, while this chicken dish is a HIT when I have the men over for dinner parties! If desired, serve with mixed greens tossed with pecans, a fruit vinaigrette and crumbled blue cheese. Add herbed egg noodles and a crusty bread, and you've got a meal made in heaven!

¼ teaspoon cayenne pepper
1 teaspoon mustard seed
½ cup sour cream
4 slices Swiss cheese
½ cup seasoned croutons
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange chicken in a lightly greased 9x13 inch baking dish. In a medium bowl, combine the soup, wine, garlic powder, cayenne pepper, mustard seed and sour cream and blend together; set aside.
  • Top each chicken breast with a slice of Swiss cheese and pour sour cream mixture evenly over the chicken. Crush the bag of croutons and sprinkle evenly over all, then drizzle with melted butter.
  • Bake at 350 degrees F (175 degrees C) for 50 minutes, or until chicken is cooked through and juices run clear.

2 c peppridge farms herb seasoned stuffing mix - i couldn't find, so i improvised with herb flavored stove top stuffing mix
1/4 c butter
3 chicken breasts cut in half to make 6 thinner breasts -...i used 2 large and cut in half to make 4 thinner breasts.
6 slice swiss cheese - or provolone
1 - 14 oz can cream of chicken soup
1/2 c water (1/4 cup if using smaller can of soup )
salt and pepper to taste

Steps:

  • 1. Preheat oven to 325 degree F. Spray a 9 x 13 baking dish with nonstick cooking spray. In a medium skillet; saute croutons with the butter until toasty.
  • 2. Place the chicken into that baking dish. Sprinkle with salt and pepper. Place a slice of cheese on each breast. Mine were pretty big, so I used 2 slices per breast.
  • 3. Mix the soup with water. Spread over the cheese. Sprinkle the browned croutons evenly over the soup.
  • 4. Place in oven, and bake for 1 hour to 1 hour and 15 minutes if using thicker chicken. If it starts to get too dark for your liking cover with foil. Enjoy!

Arrange chicken breasts in the baking dish. Place one slice of Swiss cheese on top of each chicken breast. Combine cream of chicken soup and milk in a medium bowl, and pour over chicken breasts. Sprinkle with stuffing mix. Pour melted butter over top, and cover with foil. Bake 50 minutes, or until chicken is no longer pink and juices run clear.
