1 tablespoon soy sauce (or to taste)
salt and pepper

Steps:

  • Preheat oven to 350°F.
  • Line a baking pan with foil for easy clean up.
  • Mix oil and soy sauce and pour onto foil-lined pan.
  • Prepare fresh asparagus by washing and snapping the ends.
  • Gently roll the asparagus in the oil and soy mixture.
  • Sprinkle with salt and pepper (go easy on the salt since soy sauce is salty).
  • Roast for 10-15 minutes.

It was intended to be a side dish but my family ate most of it while we were waiting for the rest of the meal to finish cooking. In learned some time ago (food Network again) that lage stalks, peeled, offer a much meatier, flavorful vegetable than the skinny ones.

1 1/2 teaspoons olive oil
salt (to taste)

Steps:

  • Lay asparagus spears out on a heavy sheet pan. Drizzle olive oil over the spears and sprinkle salt and pepper. Place in a 400 degree oven for fifteen minutes.

1/4 teaspoon kosher salt
1/8 teaspoon black pepper
1/2 lemon, juice of

Steps:

  • Preheat oven to 375-400°F.
  • Remove fibrous end pieces of the asparagus.
  • Lay asparagus across shallow baking dish and add oil, salt, lemon juice, and pepper. Roll and toss to coat well. Arrange the oiled asparagus in the pan so they do not overlap.
  • Bake in oven 20 minutes.

  • Toss asparagus with dressing in 1 1/2 - 2 quart baking dish. Sprinkle with cheese and cracker crumbs.

2 lbs asparagus, ends snapped and cut into pieces
4 cups chicken stock
8 tablespoons butter
4 tablespoons all-purpose gluten-free flour (or regular flour)
2 cups half-and-half cream
kosher salt
pepper

Steps:

  • Put asparagus and stock into a medium pot and bring to a boil over high heat.
  • Reduce heat to medium and simmer until asparagus is very soft, about 10 to 15 minutes, Set aside 2 cups of the broth; keep warm.
  • Puree asparagus and remaining broth in blender; return to pot and set aside.
  • (I puree in batches) Melt butter in a medium heavy saucepan over low heat.
  • Add flour and cook stirring constantly with a wire whisk for 2 minutes.
  • Whisk in reserved warm broth.
  • Increase heat to medium and cook, stirring, until smooth and thickened, about 5 minutes.
  • Transfer to pot with asparagus puree.
  • Bring to a simmer over medium heat, stirring often.
  • Slowly add half-n-half.
  • Season to taste with salt and pepper.

2 lb fresh asparagus spears, trimmed (about 35 spears per lb)
2 packages (5.2 oz each) Boursin® cheese with garlic and herbs, softened
1 cup heavy whipping cream
3/4 cup shredded fresh Parmesan cheese
2 medium plum (Roma) tomatoes, seeded and chopped
1 teaspoon fresh thyme leaves

Steps:

  • Heat oven to 400°F.
  • To blanch asparagus, heat 4 quarts water (add 1 tablespoon salt, if desired) in 6-quart Dutch oven to boiling. Add asparagus; cook 3 to 4 minutes or until asparagus is crisp-tender. Remove asparagus, and immediately immerse in bowl of ice cold water. Let stand 5 minutes. Drain well; pat dry with paper towels.
  • Place asparagus spears in ungreased 13x9-inch (3-quart) baking dish.
  • In medium bowl, mix Boursin™ cheese and whipping cream with whisk or fork until blended. Stir in Parmesan cheese; spread over asparagus. Top with tomatoes.
  • Bake 15 to 20 minutes or until heated through. Sprinkle with thyme.
