CORNISH HENS

Cornish Hens image

I like this recipe for Cornish hens because it's easy to do and a delicious entrée for two. The basting ingredients result in a beautifully browned hen, sealing in the juices so that it is moist, tender and quite flavorful.

1 lemon (cut into quarters)
4 garlic cloves
4-8 sprigs fresh thyme
1 tbsp kosher salt
1 tbsp fresh black pepper

TERIYAKI HENS WITH BOK CHOY

Teriyaki Hens with Bok Choy image

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 12

2 Cornish game hens (about 1 1/2 pounds each), halved
Kosher salt and freshly ground pepper
3/4 cup low-sodium soy sauce
1/4 cup hoisin sauce
1/4 cup rice vinegar
1 2-inch piece ginger, peeled and sliced
2 small red chile peppers, halved (remove seeds for less heat)
1 bunch scallions
1 grapefruit, halved
1 medium head bok choy, thinly sliced
1 tablespoon toasted sesame oil
2 teaspoons sesame seeds, toasted, for garnish

Steps:

  • Preheat the oven to 425 degrees F. Season the hens with salt and pepper and place skin-side up in a roasting pan. Roast until the skin is slightly crisp, about 25 minutes.
  • Meanwhile, combine the soy sauce, hoisin sauce, vinegar, ginger, 1 chile pepper and 1/4 cup water in a pot. Cut half of the scallions into large pieces, and zest and juice half of the grapefruit; add to the pot. Simmer, stirring occasionally, until thick and syrupy, about 20 minutes. Brush the hens with a few tablespoons of the sauce and continue roasting until golden, about 8 more minutes.
  • Peel and segment the remaining grapefruit half and place in a bowl. Thinly slice the remaining scallions and mince the remaining chile pepper; add to the bowl along with the bok choy, sesame oil, and salt and pepper to taste. Place half a hen on each plate. Stir any pan drippings into the remaining sauce and drizzle over the top. Serve with the bok choy salad and garnish with sesame seeds.

ROCK CORNISH HENS TERIYAKI

Rock Cornish Hens Teriyaki image

While we mainly serve a full breakfast at Charlie-Jane's B&B, there are special times when a guest will book all our rooms for a family reunion or other memorable get-to-gether in Mount Ayr. Occasionally we will be requested to assist by providing additional meals. This recipe is a result of such an event. (And, it's great for when the innkeeper's family is coming to visit.)

Yield 4

Number Of Ingredients 6

4 (one-pound) Rock Cornish Game Hens
2 cups seasoned packaged croutons (or better if you make your own)
1/4 cup butter, melted
1/2 cup soy sauce
1 clove garlic, crushed
1/4 cup diced mandarin oranges

Steps:

  • Begin by washing and patting dry all of your Rock Cornish Game Hens. Mix together your croutons, butter and mandarin oranges. Next, stuff the hens with the mixture of croutons, butter and mandarin organges. Place hens on roasting pan and brush with a mixture of soy sauce and crushed garlic. Roast in pre-heated oven at 400 degrees for 40 to 60 minutes, being sure to baste with soy sauce and garlic mixture every 20 minutes. Once golden-brown, cover with foil. Yield: 4 servings. We like to accompany these tasty hens with a wild rice and vegetable combo. Very Impressive!
