Takeout-Style Sesame Noodles image

Noodles dressed with sesame are popular in many parts of China, but this particular style, made with peanut butter and served cold, became a Chinese-American staple in the United States in the 1970s. The family of Shorty Tang - an ambitious restaurateur who emigrated from Sichuan to Taipei to New York - firmly believes that he invented the dish and still serve it at Hwa Yuan, the restaurant he opened in 1967 in Manhattan's Chinatown. They have never divulged the exact recipe; this is our own lush but refreshing version.

1 pound noodles, frozen or (preferably) fresh
2 tablespoons sesame oil, plus a splash
3 1/2 tablespoons soy sauce
2 tablespoons Chinese rice vinegar
2 tablespoons Chinese sesame paste
1 tablespoon smooth peanut butter
1 tablespoon granulated sugar
1 tablespoon finely grated ginger
2 teaspoons minced garlic
2 teaspoons chile-garlic paste, chile crisp or chile oil, or to taste
Half a cucumber, peeled, seeded and cut into 1/8-inch by 1/8-inch by 2-inch sticks
1/4 cup chopped roasted peanuts

Steps:

  • Bring a large pot of water to a boil. Add noodles and cook until barely tender, about 5 minutes. They should retain a hint of chewiness. Drain, rinse with cold water, drain again and toss with a splash of sesame oil.
  • In a medium bowl, whisk together the remaining 2 tablespoons sesame oil, the soy sauce, rice vinegar, sesame paste, peanut butter, sugar, ginger, garlic and chili-garlic paste.
  • Pour the sauce over the noodles and toss. Transfer to a serving bowl, and garnish with cucumber and peanuts.

1/3 cup creamy peanut butter
1/4 cup canola oil
3 tablespoons water

  • Cook linguine according to package directions. 8 ounces snow peas, slivered lengthwise
1 red bell pepper, cut into long, thin strips
1/2 cup smooth peanut butter
2 cloves garlic
1 jalapeno pepper (seeds removed, if desired)
1/4 cup soy sauce
1/4 cup rice vinegar
1/3 cup warm water
2 tablespoons toasted sesame oil
1/4 teaspoon salt

Steps:

  • In a large pot of boiling salted water, cook spaghetti until al dente, according to package instructions. Drain and rinse with cold water. In a large bowl, combine pasta with snow peas and red bell pepper.

1 1/2 tbsp Chinese sesame paste (Zhi Ma Jiang)
2 cloves garlic (minced)
1 tbsp light soy sauce
1 tbsp dark soy sauce
1/2 tsp rice vinegar (or Chinese black vinegar)
1 tsp sesame oil
1 tsp sugar (or honey)
2 tbsp hot water (or to taste, preferably from boiling the noodles)

Steps:

  • Cook noodles according to package instructions, reserving some of the hot water for the sauce. Drain and rinse the noodles under ice-cold water, carefully tossing them to cool evenly. Drain well and place in a bowl.

½ cup cucumber
½ cup bean sprouts
cilantro
Toasted sesame seeds
Handful of crushed peanuts
2 tablespoons peanut butter
1/2 teaspoon salt
1 tablespoon sesame oil
1 tablespoon canola oil
1 teaspoon Chinese sesame paste
1 tablespoon soy sauce
2 cloves garlic ((minced))
1 tablespoon fresh orange juice
2 tablespoon rice wine vinegar ((or white vinegar))
3 tablespoons reserved cooking water from the noodles

Steps:

  • Cook the noodles al dente and reserve some of the cooking liquid. Rinse the noodles with cold water and drain.
  • Stir together all the sauce ingredients in a small bowl until combined. Julienne the scallion, carrot, and cucumber.
  • Blanch bean sprouts in boiling water for 15 seconds and put into an ice bath and drain.

  • Put a large pot of water over high heat to boil. In a food processor or blender, combine all the ingredients for the dressing. Blend until smooth. (Taste dressing, adjusting acid, saltiness or sweetness as desired.) If dressing is too thick (it should be a thin, pourable texture), add 1-2 tablespoons of water and blend again.
  • Salt the boiling water with a few, large pinches of salt. Add the broccoli and cook for 2-3 minutes until crisp-tender. Remove broccoli with a slotted spoon or spider into a bowl. Place in colander and rinse under cold water to stop the cooking. Leave to drain in the colander.
  • In the same pot of boiling water, cook noodles according to package instructions. Drain. Combine noodles, broccoli, carrots, bell peppers, scallions and sesame seeds in a large mixing bowl. Dress with 3/4 of the dressing and toss well to combine. If noodles need more dressing, add more. Otherwise, reserve extra dressing to re-dress leftovers or another use.
  • Place noodle salad on a serving platter or bowl. Garnish with reserved scallions and sesame seeds, chopped peanuts or cashews, as desired.
