EASY CINNAMON PECAN PRALINE RECIPE

Easy Cinnamon Pecan Praline Recipe image

Provided by Sommer Collier

Categories     Dessert     Holiday

Time 13m

Number Of Ingredients 8

1 cup granulated sugar
1 cup light brown sugar (packed)
¾ cup heavy cream (or evaporated milk)
4 tablespoons butter
½ teaspoon ground cinnamon
2 cups pecan halves
1 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • Set a large 6-8 quart saucepot over medium heat. Attach a candy thermometer to the side of the pot, making sure the tip reaches the bottom. Measure both sugars, cream, butter, and cinnamon into the pot.
  • Meanwhile, set out two baking sheets lined with parchment paper.
  • Once the mixture starts to boil, stir. Continue to cook and stir until it reaches 235°F. Turn off the heat but leave the pot on the burner to keep warm. Quickly stir in the pecans, salt, and vanilla.
  • Once the pecans are fully coated, use a large tablespoon or cookie scoop to QUICKLY spoon clumps of candy mixture onto the baking sheets. WORK FAST. The praline mixture starts to dry and harden quickly and does not reheat with the original texture. It's common to have one "pretty" pan of pralines and one ugly pan (that tastes just as good) if you don't work fast. This is a time when two sets of hands is very helpful! *But be careful - hot molten sugar can be dangerous.
  • Allow the praline pecans to dry, then move to an airtight container until ready to serve.

  • In a medium-size heavy pot, combine the granulated sugar, brown sugar, salt, evaporated milk, butter, and cocoa powder. Cook and stir with a wooden spoon over medium heat until the sugars dissolve and the mixture comes to a boil.
  • Continue to cook until the temperature reaches between 235-240 degrees F on a candy thermometer (soft ball stage). Remove from heat and allow the praline mixture to cool for 5 minutes.
  • Stir in the pecans and vanilla, beating by hand with a wooden spoon just until the candy begins to lose its glossiness and thickens slightly, about 2 minutes. If you beat too long, the candy will seize and start to crumble. If you don't beat it long enough, then pralines won't set properly and will stay soft and sticky.

  • Butter Pecan Chicken. Chicken is such a versatile meat. You can boil it, fry it, roast it, bake it, and it works well with everything from squash to strawberries.
  • Pecan Tassies. It’s sad to say, but I didn’t grow up eating pecan tassies. In fact, I’d never tried one until I was a fully-fledged adult. The horror!
  • French Quarter Pecan Cheese Spread. You’ve just found the dip for your next party. Cream cheese with garlic and onion smothered in a salty-sweet-spiced pecan topping – need I say more?
