CHRISTMAS PRETZEL RODS RECIPE
Steps:
- Melt the candy coating according to package directions giving special care not to overheat the candy. If the candy coating is overheated, it will be too thick. You can add 2 teaspoons of vegetable shortening to help thin the candy but do not add any other type of liquid as the candy will seize and harden.
- Pour candy coating over two-thirds of the pretzel rod and shake gently to remove excess. If applying sprinkles, do so immediately rotating the pretzel rods to coat all sides. Larger sprinkles work best if placed individually.
- Place pretzel rod on waxed paper or cooling rack. (Cook's notes: Waxed paper makes for easier release.)
- If drizzling with additional colored candy melts, allow the initial candy coating to set completely. Then, use a spoon or fork to drizzle candy coating over the pretzel rods. Before the pretzel sets, gently pick it up and move to clean wax paper.
- Let pretzel rods dry completely before packaging or serving.
- Store in an airtight container at room temperature. Placing in the refrigerator may cause the pretzel to soften.

Steps:
- Prepare two large baking sheets lined with parchment paper.
- Prepare homemade caramel (or melt store-bought caramels). Remove from heat. Stir in vanilla. Allow homemade caramel to cool for about 15 minutes before dipping.
- Dip Pretzel Rods in caramel. I use a spoon to scoop the sauce onto the pretzels and turn them as I go. Allow excess sauce to drip off and place the dipped pretzels on a parchment lined baking sheet.
- After the caramel sets and cools some of it may pool at the base of the pretzel, causing the bottom to be flat. Use your hands to mold the caramel back around the rod (or just roll the rod gently on the parchment paper to smooth it around).
- Melt chocolate in a microwave-safe bowl, on half power, stirring every 30 seconds, until smooth.
- Pour the chocolate into a tall glass. Dip the caramel-coated pretzels in melted chocolate. You can use a spoon or spatula to help smooth the chocolate up and around if you need to.
- Lay the dipped pretzels on a parchment lined sheet. While the chocolate is warm, you can sprinkle on a few light weight toppings or sprinkles, if desired.
- Allow the chocolate to set up before eating or removing from parchment.

- In the top of a double boiler or in a metal bowl over a saucepan of boiling water, melt the chocolate chips, stirring occasionally.
- While the chocolate is melting, line a cookie sheet with parchment paper. Place the cake decorating toppings on a plate or a flat-bottomed bowl.
- Once chocolate is melted, dip half of a pretzel into the chocolate, coating thoroughly and allowing any excess chocolate to drip off back into the pan. Place the pretzel on its side in the desired decoration allowing the decoration to stick to the chocolate. Turn onto the other side to cover as well. Place on the parchment paper and allow to dry until hard (usually takes between 30-60 minutes); can be expedited by putting the tray into the refrigerator.
- Part of the reason I like to only coat part of the pretzel is for mobile outings (in the dark) especially, it allows the pretzel to be eaten without chocolate melting all over.

- In a mug, measure chocolate and microwave on high for 30 seconds. Stir very well with a spoon until the chocolate is smooth. If the chocolate isn’t smooth, continue to microwave for 5-second intervals, stirring very well after each time. Note that sometimes small pieces of chocolate will melt as you stir it into the melted chocolate surrounding it.
- Tilt the mug to create a deeper pool of chocolate and dip one end of the pretzel rod into the mug. Turn the rod continuously as you pull the rod out of the mug. Set on the prepared cookie sheet.

- Line a rimmed baking sheet with parchment. Sprinkle your pretzels on top of the parchment. Pro tip: if you're adding any toppings, make sure you chop them now.
- Add your chocolate to a microwave-safe bowl and microwave at 50% less power for 30 seconds. Allow it to rest for 30 seconds, and then microwave for an additional 30 seconds. Repeat this cycle one more time or until the chocolate is mostly melted. Stir gently with a spoon until smooth.
- Pour the chocolate over the pretzels, moving it around the pan to try to get as much coverage as possible. Use a silicone spatula and bring any wayward pretzels towards the chocolate. Pro tip: if you're adding any toppings, do so now.
- Allow the bark to fully cool. If your kitchen is warm, you can place the pan in the fridge or freezer for 20-60 minutes.

- Put the chocolate and butter together in a microwave safe container. We used a deep measuring cup to dip the ends in. Alternatively, use a shallow bowl to roll the ends of your pretzels in and you’ll get more chocolate on further up. Microwave for 30 second intervals until the butter has melted and the chocolate is soft. Stir.
- Have a bowl underneath your sprinkles so you can catch excess; consider a bowl for each type of sprinkles so you can pour those that spill back into the jar and re-use.
- Arrange a baking sheet lined with parchment next to your sprinkles, pretzels and chocolate. Make an assembly line.
- Dip a pretzel into the chocolate, let excess drip off then wipe one side against the bowl so it’s flat.
