1 small onion, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 baking dish.
  • Warm oil in a small skillet. Use tongs to dip tortillas into the oil one at a time, turning to warm both sides. Sprinkle an even amount of Cheddar cheese down the center of each warmed tortilla. Roll tortillas to enclose cheese; place seam side down in the prepared baking dish.
  • Combine the chili, onion, and half of the processed cheese in a large bowl. Pour the chili mixture over the tortillas; top with the remaining processed cheese.
  • Bake in the preheated oven until hot and bubbly, about 20 minutes.

Cheese Enchiladas are a family-friendly dinner recipe that's perfect for busy weeknights. You'll never buy canned again after tasting my easy homemade red enchilada sauce!

14-16 white corn tortillas (I like Mission GF Super Soft Tortillas)
16oz shredded Mexican cheese blend
3 Tablespoons vegetable oil
2 Tablespoons gluten free flour OR all purpose flour (dish will not be GF if using AP flour)
3 Tablespoons chili powder (see notes)
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
scant 1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon cumin
1/4 cup tomato paste
2 cups chicken broth

Steps:

  • Preheat oven to 350 degrees then spray a 9x13" baking dish, or two smaller casserole dishes, with nonstick spray and set aside.
  • For the Red Enchilada Sauce: Heat oil in a saucepan over medium heat then add flour and whisk constantly for 1 minute. Add seasonings - chili powder through cumin - then whisk until the spices are toasted and very fragrant, 1-2 minutes. Add tomato paste then whisk until combined, and then slowly stream in chicken broth while whisking to create a smooth sauce. Turn heat up to medium-high then simmer until sauce has thickened, 3-4 minutes, stirring often. Cool slightly - can be made up to several days ahead of time. Warm before using.
  • Assembly: Spread 1/2 cup enchilada sauce into the bottom of the baking dish then reserve 1 cup shredded cheese and set aside. Place 1 tortilla on a plate or cutting board then add 1/4 cup shredded cheese into the center and roll snugly. Place seam-side down into the baking dish then continue until the dish has been filled.
  • Spoon enchilada sauce over the tops of the tortillas ensuring they are completely covered - uncovered spots will come out tough and hard - then sprinkle reserved cheese on top.
  • Cover baking dish with nonstick sprayed foil then bake for 20-30 minutes, or until the cheese has melted and sauce is hot and bubbly. Let enchiladas rest for 5 minutes then serve.

1 pound ground beef
1 (15.5 ounce) jar prepared salsa con queso
20 (8 inch) flour tortillas
1 (8 ounce) package shredded Cheddar-Monterey Jack cheese blend

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish, and pour the salsa into the bottom of the dish. Set aside.
  • Cook and stir the ground beef in a skillet over medium heat for about 10 minutes, until meat is browned and crumbly. Drain the grease from the beef, and add the salsa con queso to the skillet, stirring to mix well. Place about 2 tablespoons of the beef mixture down the center of each tortilla, roll the tortillas, and place them seam side down on top of the salsa in the baking dish. Sprinkle the shredded cheese on top of the enchiladas.
  • Bake for 15 to 20 minutes in the preheated oven, until the cheese is browned and the enchiladas are hot and bubbling.

1 (15 ounce) can Wolf brand chili (with or with out beans)
2 cups shredded cheddar cheese (i use sharp)
1 lb Velveeta cheese (cubed)
10 flour tortillas

Steps:

  • Preheat oven to 350.
  • Brown ground beef drain put back in pan.
  • Add about 3/4 can of chili to ground beef.
  • Add i little bit of water to the 1/4 chili thats left in the can and stir should be a little runny put aside.
  • Add cubed velveeta to ground beef and chili.
  • Add about 1 cup of shredded cheese to ground beef, chili and velveeta.
  • Heat mix in large skillet on medium until all the cheese is melted.
  • Grease lightly a 9 x 13 casserole pan.
  • Spoon meat chili cheese mix into tortillas ( about 2 spoonfuls in each).
  • Roll them up and place in casserole dish ( should fit 8 to 10).
  • If anything was left of ur meat chili cheese mix add to the can of chili u had set aside, stir and if needed add little mre water to remake runny not to thin ( to cover tortillas).
  • Spoon that over all tortillas should cover all of them.
  • Sprinkle remaining shredded cheese on top.
  • Put in oven and Bake for 15 mins or until cheese on top is melted.

When you don't have a lot of time or money. I made this for my family for around a dollar per serving. If the only Mexican food your kids will touch is cheese quesadillas (cheese melted on a tortilla), give this a try as a "step up". My picky picky DD was okay with cheese enchiladas when we told her it was cheese in a tortilla with a sauce on top. Now she has been known to eat spinach enchiladas and chicken enchiladas! :) She gave this recipe two thumbs up. :)

2 cups shredded cheese (whatever floats your boat, I used a preshredded Colby or Monterey Jack blend)
3 ounces cream cheese, softened
1 -2 teaspoon garlic powder
1 -2 teaspoon instant minced onion (or a smidge of grated fresh)
12 corn tortillas
15 ounces enchilada sauce
1/2 cup more shredded cheese

Steps:

  • First, you want to mix the first four ingredients together until they are really well combined. Seriously, you will not see any little shreds of cheese and it will have the texture of stiff play dough (this is important).
  • Preheat your oven to 350 and grab a pan. I used an 11x7 inch oval baking dish, but you can also use an 8inch square.
  • Pour about 1/4 of the enchilada sauce into the bottom of the pan and swirl the pan until the bottom is coated.
  • Reach in with your clean hands and grab about 2 tablespoons of cheese mixture in your hands and shape into a log. Roll a tortilla around this log and place in the pan. Repeat for the rest of the cheese and tortillas.
  • Pour the rest of the sauce on top, spreading it to cover.
  • Sprinkle the last 1/2 cup of cheese on top, and place in the oven. Bake 20-30 minutes or until hot and bubbly.
  • For OAMC: Freeze before cooking, thaw in refrigerator and bake according to directions.

12 corn tortillas
1 pkg 8 oz chedder cheese
1 pkg 8 oz jack cheese
1 small package of shredded mexican blend cheese for the top
1 can(s) small, slices black olives
1 small onion
1 can(s) 16 oz enchilada sauce
1 pkg brown gravy mix (mccormicks)
1 pkg onion gravy mix (mccormicks)
1 tomato chopped
sour cream for garnish
oil for frying

Steps:

  • 1. Cut chedder cheese into 12 pieces, also cut the jack cheese into 12 pieces. Chop the onion fine. Slice the olives. Chop the tomato, set aside.
  • 2. Prepare gravy mix as directed on each package..(2 cups water mixed in with both packages, stir well and cook til thickened) add enchilada sauce and stir well. Pour about 1/2 cup into bottem of a 8x11 pan.
  • 3. Soften tortillas in a little bit of oil..you dont want to fry them, just soften them and put them on a plate.
  • 4. Take one tortilla and put in a slice of cheddar and a slice of jack cheese, about a teaspoon or a little less of onion and sprinkle a few olives on it, then roll up
  • 5. Pour Sauce over enchiladas and sprinkle some cheese on top, then some olives and bake 350 for 30 minutes. Let sit 10 minutes to set or they wont come out of the pan real nice. Top with chopped tomatoes , sour cream
  • 6. if I am having company over, I double this and put it in a 13x9 pan. I also have varied this adding some hamburger seasoned with taco seasoning mix and a can of green chilis and cheese, or refried beans and cheese. Another time I used a rottiserie chicken and shredded it with some cheese for teh filling. The plain cheese ones are the favorite though.

1 (15-ounce) can Wolf brand chili with no beans

1/8 teaspoon ground cumin
1 (8-ounce) block medium cheddar cheese, shredded

Sour cream, hot taco sauce, chopped green onions

Steps:

  • Preheat oven to 350° F. Lightly spray an 8 x 8" baking dish with cooking spray. In a medium mixing bowl, stir together the chili, a little salt and black pepper, and the cumin. Spread a thin layer of the chili mixture in the bottom of the baking dish, just enough to cover. Reserve about 1/2 cup of the shredded cheese for the top. Fill the tortillas with remaining cheese and onion then roll up and place seam side down on top of the chili in the baking dish, placing them close together. When all the tortillas are in the pan, spoon the remaining chili over the top of tortillas, then top with the reserved cheese. Cover dish tightly with aluminum foil and bake for about 25 minutes, until hot and bubbly. Serve immediately with toppings of choice and whatever sides you want. 1 clove garlic, minced
½ cup mild-to-medium-hot red New Mexican chile powder

  • To prepare sauce: Heat oil in a medium saucepan over medium heat. Add 1/2 cup onion; cook, stirring, until it begins to soften, about 1 minute. 4 cups Jack's Chili (or your own favorite chili recipe)
2 tablespoons butter
2 tablespoons flour
1½ cups whole milk
2 cups shredded cheddar
½ teaspoon kosher salt
¼ teaspoon white pepper
2 shakes of your favorite hot sauce
6 8-inch flour tortillas
2 cups shredded jack cheese
2 tomatoes, seeded and diced
¼ cup cilantro chopped
¼ cup red onion minced fine

Steps:

  • Heat chili to hot and hold.
  • Preheat oven to 425 degrees F.
  • In a medium sauce pan over medium heat, melt butter and add flour. Cook over medium heat for three minutes stirring often.
  • Add cold milk one third at a time, mixing each third in before you add the next. The mixture will start out thick then thin down as you add the remaining milk.
  • Add cheddar, salt, pepper and hot sauce and stir. Add more milk if too thick.
  • Ladle a little of the sauce in the bottom of a 9X13 pan. Lay out the six tortilla shells on your counter and divide the chili between them filling one at a time.
  • Fold in each side and place seam down in the pan.
  • Repeat for remaining five.
  • Pour the remaining sauce over the tops of each and cover with the jack cheese.
  • Bake uncovered for 30 minutes then finish under the broiler to brown the tops.
  • Serve with diced tomatoes, cilantro and minced red onions on each portion.

1 package (1-1/4 ounces) chili seasoning
1 can (8 ounces) tomato sauce

2-1/2 cups shredded cheddar cheese

There are a few cool tricks to this recipe, one of which I picked up from an old issue of Bon Appétit, one I learned from Robb Walsh, the great Tex-Mex scholar and restaurateur who runs El Real Tex-Mex in Houston, and a final one I learned by happenstance. First, for the thickening agent in the chile sauce, toast raw all-purpose flour in a pan until it is nutty and golden brown, then reserve it to stir in with the browned beef later in the recipe. Second, if you like truly melty cheese in the classic Tex-Mex tradition, use a mixture of American cheese, like Velveeta, with the Cheddar you use inside and on top of the finished enchiladas. Finally, if you're fearful that a casserole of cheese, chili and fried tortillas may be a little rich for dinner, serve it with a bowl of tomatillo pineapple salsa on the side. The acidity provides a nice balance. (Note also that as with all recipes, but particularly this one, some planning and practice can get the preparation down to 60 minutes.)

1 pound ground chuck beef, ideally 20 percent fat

1 jalapeño pepper or more to taste, seeds removed if you want it less spicy, stemmed and chopped
1 cup chopped or canned crushed tomatoes
3 tablespoons chile powder
1/2 teaspoon ground cumin

2 cups chicken stock, ideally homemade or low-sodium if store-bought
1/2 cup neutral oil, like canola
12 yellow corn tortillas
3 cups shredded Cheddar cheese, or a mixture of 1 1/2 cups Cheddar cheese and 1 1/2 cups American cheese, like Velveeta
1 medium-size white onion, peeled and chopped (optional)

Steps:

  • Prepare the chili con carne: Put flour in a large sauté pan set over medium-high heat. Cook, stirring frequently, until it begins to turn golden brown and smell nutty, then pour it onto a plate to cool.
  • Wipe out sauté pan and return it to high heat with 2 tablespoons oil. When oil is hot and shimmery, add ground beef to pan, and cook, breaking it up with a fork and stirring, until it is well browned, about 12 to 15 minutes. Season with salt and pepper, then use a slotted spoon to remove meat to a bowl, leaving drippings behind.
  • Add onion, garlic and jalapeño to pan and cook, stirring to scrape up any browned bits of meat, for 10 to 12 minutes, or until vegetables are soft. Stir in tomatoes and cook until their liquid has evaporated, then add chile powder, cumin and oregano and stir to combine. After a minute or so, when mixture begins to turn fragrant, return browned meat to pan, along with toasted flour, and stir well to combine.
  • Lower heat to medium-high and slowly stir in chicken stock, 1/2 cup at a time, until mixture has thickened and started to simmer. Lower heat again and allow chili to cook slowly for 45 minutes to 1 hour, until meat is tender. Add more stock or water if needed. Use immediately, or let cool, cover and refrigerate for up to a few days.
  • When you are ready to cook the enchiladas, heat oven to 425 degrees. In a medium sauté pan set over medium-high heat, heat 1/2 cup neutral oil until it begins to shimmer. Using tongs or a wide spatula, place a tortilla in the hot fat; it should start to bubble immediately. Heat tortilla for about 10 seconds a side, until soft and lightly browned. Remove tortilla and set on a rack set over a baking pan, or just on a baking pan if you don't have a rack. Repeat with remaining tortillas, working quickly.
  • Assemble the enchiladas: Using a ladle, put about 1/2 cup chili in the bottom of a 9-by-13-inch baking pan and spread it out a little. Roll a few tablespoons of cheese into each tortilla, along with a tablespoon or so of chili, then place it seam-side down in the pan, nestling each one against the last. Ladle remaining chili over top of rolled tortillas and sprinkle with remaining cheese.
  • Transfer to oven and bake until sauce bubbles and cheese is melted, about 10 to 15 minutes. Sprinkle chopped onions over the top, if using, and serve immediately.
