Easy Chickpea Salad image

Quick and easy salad. Great for barbeques. Use red or yellow bell pepper, whichever you prefer.

1 (10 ounce) basket cherry tomatoes, halved
1 large cucumber, diced
1 red bell pepper, cut into thin strips
2 scallions, or more to taste, finely chopped
1 (15.5 ounce) can chickpeas, drained and rinsed
1 (4 ounce) container crumbled feta cheese
3 tablespoons balsamic vinegar
1 ½ tablespoons dried basil
1 tablespoon olive oil

Steps:

  • Mix cherry tomato halves, diced cucumber, bell pepper strips, and chopped green onion together in a large bowl; add chickpeas and feta cheese and gently stir.
  • Whisk balsamic vinegar, basil, and olive oil together in a small bowl; drizzle over the salad and stir to coat.
  • Cover bowl with plastic wrap and refrigerate, 8 hours to overnight.

Easy Chickpea Salad with Lemon and Dill image

This easy chickpea salad is one of our favorite salads. I love how quick and simple it is. Eat this straight out of the bowl or use it to top salad greens. We love the combination of lemon and dill, but the salad is just as delicious with other fresh herbs - try basil, parsley, or even fresh mint.

Number Of Ingredients 10

2 (15-ounce) cans chickpeas or 3 cups cooked chickpeas
1 medium thin-skinned cucumber, often called hothouse or English
6 small tomatoes
1 1/2 ounces feta cheese (substitute crumbled goat cheese)
1/4 cup (60 ml) fresh lemon juice (1 large lemon)
1/4 cup (60 ml) extra-virgin olive oil
1 teaspoon Dijon mustard
1/2 teaspoon honey
1/4 cup coarsely chopped fresh dill (feathery fronds and tender stems only)
Salt and fresh ground black pepper

Steps:

  • Open, drain and rinse the chickpeas, and then add to a large bowl.
  • Cut the cucumbers into quarters, lengthwise, and then chop into bite-size chunks. Cut the tomatoes into small wedges. Add the cucumbers and tomatoes to the chickpeas then break the feta cheese into crumbles on top.
  • In a medium bowl, make the dressing. Whisk lemon juice, olive oil, mustard, honey, and the fresh dill together then season with salt and pepper, to taste. Pour the dressing over the salad and toss.

1/2 teaspoon crushed red pepper flakes
2 tablespoons rosemary, finely chopped, a few sprigs
2 tablespoons red wine vinegar
3 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper

Steps:

  • Combine chick peas with onions, peppers, celery, garlic, red pepper flakes and rosemary in a medium bowl. Dress salad with vinegar and oil, salt and pepper.

1 tsp black pepper
oil for frying

Steps:

  • Mash chickpeas in a bowl and chop all other vegetables and small. Add all ingredients to the bowl, except the oil and mix until combined.
  • Form patties and fry in a non-stick pan on both sides at medium-high until golden-brown.
  • Take out and serve with a salad and hummus or this garlicky avocado sauce.

1 (15 oz) can chickpeas, drained and rinsed, or about 1 1/2 cups
1 pint cherry tomatoes, cut in half
1 1/2 cups diced cucumber
1/2 cup crumbled feta cheese
1/3 cup diced red onion
1 small handful fresh herbs, such as mint, basil, cilantro or parsley
2 tablespoons olive oil
2 tablespoons red wine vinegar
1 teaspoon dijon mustard
1/2 teaspoon pure maple syrup
1 small clove garlic, grated or minced
1/4 teaspoon dried Italian herbs
Salt and pepper, to taste

Steps:

  • Add all the dressing ingredients to a large bowl and mix until combined. Or, mix them together in a small jar or bowl. Add in the remaining ingredients and mix again until everything is coated with the dressing.
  • Enjoy salad by itself or eat with my favorite Pan Fried Pita Bread.

2 cans chickpeas
1 can kidney beans
1 cucumber
8 tomatoes
1 bunch fresh parsley
juice of 1 lemon
5 tablespoons olive oil
1/2 Spanish onion
salt, to taste
black pepper, to taste

Steps:

  • Rinse the canned chickpeas and kidney beans.
  • Finely chop the Spanish onion. Dice the cucumber and the tomatoes.
  • Finely chop the parsley. Combine everything in a large bowl and stir in the lemon juice and the olive oil. Season with salt and pepper.

2/3 cup whole or low-fat plain Greek yogurt
1 lemon juiced (about 2 tablespoons)
2 teaspoons wholegrain mustard, such as Maille
1 teaspoon kosher salt
1/2 teaspoon fresh black pepper
3 tablespoons minced dill, plus more to garnish
2 tablespoons minced fresh parsley
3 15-ounce cans chickpeas, drained and rinsed
1 cup small-diced celery
1/2 cup thinly sliced scallions, white and green parts (2 to 3 scallions)

Steps:

  • Combine the yogurt, lemon juice, wholegrain mustard, salt, pepper, dill, and parsley in a small mixing bowl. Whisk until smooth. Set aside.
  • Place the drained chickpeas in a large mixing bowl. Use a potato masher or the back of a serving fork to lightly mash about 1/3. Add the celery and scallions and toss to combine.
  • Add the yogurt dressing and stir until well mixed. Serve, topped with additional fresh herbs. TIP: This can be made up to 2 days in advance and kept in the fridge. If making in advance, remove from the fridge about 30 minutes before serving. Give it a good stir before topping with fresh herbs.
