1 red bell pepper, cut into 1 inch pieces
1 yellow bell pepper, cut into 1 inch pieces
1 green bell pepper, cut into 1 inch pieces
2 tablespoons olive oil
2 cloves garlic, minced
1 (14.5 ounce) can peeled and diced tomatoes
1 (10 ounce) can diced tomatoes with green chile peppers
1 pound angel hair pasta
2 tablespoons butter
2 tablespoons olive oil
4 skinless, boneless chicken breast halves - cut into bite size pieces
½ teaspoon dried basil
½ teaspoon dried rosemary
½ teaspoon dried thyme
½ teaspoon garlic powder
¼ cup grated Parmesan cheese

Steps:

  • In a large skillet over medium heat, cook red, yellow and green bell peppers in 2 tablespoons olive oil with garlic until just tender. Stir in diced tomatoes and diced tomatoes with chiles, reduce heat to medium-low and simmer 10 minutes. Remove to a serving bowl.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • While pasta is cooking, heat 2 tablespoons oil and butter over medium heat in a large skillet. Cook chicken in butter mixture until juices run clear, 5 to 10 minutes. Place cooked chicken over tomato sauce and sprinkle with basil, rosemary, thyme, garlic powder and Parmesan. Serve with cooked pasta.

¼ cup butter
2 skinless, boneless chicken breast halves, cut into strips
1 clove garlic, minced, or more to taste
4 ounces sliced fresh mushrooms
1 green bell pepper, sliced

½ cup butter
1 pint heavy whipping cream
½ cup grated Parmesan cheese
1 (8 ounce) package cream cheese, cut into pieces

1 egg, beaten

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in the fettuccine, bring back to a boil, and cook pasta over medium heat until cooked through but still firm to the bite, about 8 minutes. Drain.
  • Melt 1/4 cup butter in a large skillet over medium heat; cook and stir chicken and garlic in butter until chicken is browned. Add mushrooms, green bell pepper, and red bell pepper; cook and stir until vegetables are tender.
  • Melt remaining 1/2 cup butter with half the heavy cream in a large saucepan over medium heat. Gradually add Parmesan cheese, alternating with pieces of cream cheese, stirring constantly. 1 small zucchini ((diced))
1/2 cup frozen peas
1/2 bell pepper ((use any color))
5 ounces tomatoes ((I prefer grape or cherry, cut into halves))
1 small carrot ((use a vegetable peeler to cut into ribbons))
3 cloves garlic ((minced))
1 teaspoon fresh lemon juice
1 dash Italian seasoning
1 tablespoon fresh basil ((torn/sliced thin))
1/2 cup freshly grated parmesan cheese
8 ounces uncooked pasta
Salt & pepper ((to taste))

Steps:

  • Prep your ingredients and boil water for your pasta (cook it al dente according to package directions). Add the oil and butter to a skillet over medium-high heat.
  • Once the pan is hot, add the vegetables and garlic and sauté, stirring often, for about 5 minutes until the vegetables are tender-crisp.
  • Stir in the lemon juice, Italian seasoning, and basil.
  • Before draining the pasta, add a splash of the pasta water (a tablespoon or two) to the skillet. Drain the pasta and add it to the pan and toss. Just before serving, stir in the parmesan cheese. Season with salt & pepper as needed.

Steps:

  • Season chicken with 1/4 teaspoon of the salt and 1/4 teaspoon of the pepper.
  • In 12-inch skillet, heat oil over medium heat. Add chicken; cook 5 to 8 minutes, stirring occasionally, until chicken is browned on both sides and cooked through. Remove chicken from skillet. 3 to 4 skinless boneless chicken breasts
olive oil
salt and pepper
1/2 onion
1/2 green pepper
1/2 yellow pepper
6 oz favorite pasta, cooked
1 c Italian blend cheese or mozzarella
garlic cream sauce (see below)
GARLIC CREAM SAUCE
olive oil
1 Tbsp flour
1/2 tsp garlic, minced
1/2 c white wine (less if yours is strong flavored)
1/3 c frozen chopped spinach
2 c half and half
1 to 1-1/2 c shredded Parmesan (not the stuff in the shaker)

Steps:

  • 1. Garlic Cream Sauce: Drizzle a little olive oil in pan, add garlic and saute for just a moment or two so as not to burn the garlic. Add the flour, cooking for a moment. Then add the half and half, wine, and spinach to the flour mixture. Bring to a boil. Add Parmesan and stir until blended. Set aside.
  • 2. Primavera: Cut chicken breast so they are even thickness and take the tips off. Save the extra bits for another dish.
  • 3. Add to a bowl with a little bit of olive oil, salt, and pepper. Coat evenly and then grill. Cut into chunks.
  • 4. Dice or chop your veggies and saute in a little bit of olive oil, salt, and pepper until they are soft. You can use other favorite veggies like zucchini and yellow squash, broccoli. Ideas are unlimited. If your kids don't like those then dice them finer. I am not a fan of zucchini or the squash but I can tolerate them cut small. :)
  • 5. Mix together your cooked pasta, cooked chicken chunks and veggies and the sauce. Spread into a baking dish and cover with cheese.
  • 6. Bake for 25 minutes at 350 degrees or until cheese is brown and dish is bubbly hot.

  • Remove from the oven. Using a spoon, pour some of the butter sauce left in the skillet onto the chicken breast before serving.

Steps:

  • Cook the pasta according to package directions till al dente.

  • Heat oven to 450 degrees F.
  • Place the vegetables in a large mixing bowl. Add garlic, oregano, and thyme. Season with a big pinch of kosher salt and black pepper. Drizzle a good amount of extra virgin olive oil. Toss to coat.
  • Transfer the vegetables to a large sheet pan (or two if needed). Spread them out well. Roast in heated oven for about 20 minutes (stirring half-way through).
  • While the vegetables are roasting, cook the pasta in salted boiling water according to package (about 10 to 12 minutes). Reserve some of the pasta cooking water. Drain pasta.

1/2 cup chicken broth
2 tablespoon lemon juice
1 cup cherry tomatoes, halved
1/2 cup shredded mozzarella
8 oz dry pasta (preferred type)
1/4 cup fresh parsley, chopped
1/4 cup grated parmesan

Steps:

  • Prepare pasta according to package directions. Drain, saving 1/2 cup of the pasta water and set aside.
  • Cut the chicken breasts into bite sized pieces or strips and season with salt and pepper.
  • In a large skillet, heat the olive oil over medium heat then place the chicken into the skillet and cook for 3-4 minutes stirring regularly until lightly browned on the outside then remove from the pan.
  • Add the carrots to the pan and cook for 1 minute stirring regularly.
  • To the pan, add the green beans and cook an additional 1 minute.
  • Add in the peas, garlic, and tomatoes and stir then top with chicken broth, lemon juice, and 1/2 cup of the pasta water.
  • Bring to a boil then add the chicken back into the pan for another 3-4 minutes or until cooked through.
  • Mix in the cooked pasta and cheese and stir until the cheese has melted and the mixture is well combined.
  • Serve with additional cheese and fresh chopped parsley as a garnish.

10 oz. dry Barilla Penne Pasta
Salt
1/4 cup olive oil
1/2 medium red onion, (sliced)
1 large carrot, (peeled and sliced into matchsticks)
2 cups broccoli florets, (cut into matchsticks)
1 medium red bell pepper, (sliced into matchsticks)
1 medium yellow squash, (sliced into quarter portions)
1 medium zucchini, (sliced into quarter portions)
3 - 4 cloves garlic cloves, (minced)
1 cup (heaping) grape tomatoes, (halved through the length)
2 tsp dried Italian seasoning
1/2 cup pasta water
2 Tbsp fresh lemon juice
1/2 cup shredded parmesan,* (divided)
2 Tbsp chopped fresh parsley

Steps:

  • Bring a large pot of water to a boil. Cook penne pasta in salted water according to package directions, reserve 1/2 cup pasta water before draining.
  • Meanwhile heat olive oil in a 12-inch (and deep) skillet over medium-high heat.
  • Add red onion and carrot and saute 2 minutes.
  • Add broccoli and bell pepper then saute 2 minutes.
  • Add squash and zucchini then saute 2 - 3 minutes or until veggies have nearly softened.
  • Add garlic, tomatoes, and Italian seasoning and saute 2 minutes longer.
  • Pour veggies into now empty pasta pot or a serving bowl, add drained pasta, drizzle in lemon juice, season with a little more salt as needed and toss while adding in pasta water to loosen as desired.
  • Toss in 1/4 cup parmesan and parsley then serve with remaining parmesan on top.
