This is a great supper dish that is full of flavour and very easy to make. The sauce creates a delicious broth, which is perfect paired with mashed potato or simply boiled rice.

2 tablespoons olive oil
4-6 boneless higher-welfare chicken thighs with skin on, (depending on the age and appetite of your children)
100 g higher-welfare bacon lardons or chopped bacon
1 large onion, chopped
2 small sweet potatoes, peeled and cut into cubes
16 button mushrooms, cut into quarters
500 ml fresh chicken stock
3 sprigs of thyme

Steps:

  • Heat the oil in a heavy-based pan over a medium to high heat and fry the chicken, skin side down, until it becomes crispy. It will take about 5 minutes to get a lovely golden colour. You may need to cook the chicken in batches if you have a small pan. Use a slotted spoon to remove the chicken pieces and set aside.
  • Pour away any excess fat and then, in the same pan, cook the bacon lardons and onions for about 5 minutes until they have taken on some colour.
  • Add the sweet potato and mushrooms and then return the chicken pieces to the pan, placing them on top, skin side up.
  • Pour over the stock until it just reaches the chicken skin, add the thyme and cover with a lid.
  • Leave to simmer very gently for about 10-15 minutes until the chicken is cooked through. The cooking time will depend on the size of the chicken pieces so do check by removing a piece of chicken and cutting into it with a sharp knife.
  • If you end up having more sauce than you'd like in the pan, simply strain into a clean saucepan, bring to the boil and reduce down and thicken by boiling it.

Can easily be prepared in advance, then popped in the oven for a nice hot meal. If making for the first time, add half of the sour cream and taste first. Add more if desired, tasting as you go, to reach desired flavor. Serve over cooked white rice.

1 sleeve buttery round crackers (such as Ritz®), crushed
2 tablespoons butter, melted
4 cups water
1 (32 fluid ounce) container chicken stock
salt and ground black pepper to taste

1 (26 ounce) can condensed cream of chicken soup

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Mix the crackers and melted butter together in a bowl; set aside.
  • Bring water and chicken stock to a boil in a pot over high heat. Season with salt and black pepper. Add the chicken. Reduce heat to a simmer, and cook, stirring occasionally, until chicken is no longer pink in the center, 5 to 7 minutes. Drain the chicken; set aside. 1 cup sour cream
32 buttery round crackers
¼ cup chopped onion

  • Boil chicken until cooked through (no longer pink inside), about 20-30 minutes. Chop into bite size pieces and place in a 9x13 inch baking dish.

  • Grease a medium-size casserole dish.
  • Mix the first 6 ingredients in a bowl.
  • Add the uncooked rice to the soup mixture; mix until combined.
  • Transfer the soup/rice mixture to the casserole then spread out in the dish.
  • Place the chicken on top of the mixture.
  • Sprinkle with the dry onion soup.
  • Cover with foil and bake for 1 hour 30 minutes or until rice is cooked and the chicken is done.
  • Allow to stand for 10 mins before serving.

4 slices swiss cheese
1 (10 ounce) can cream of chicken soup
1 (10 ounce) can cream of celery soup
1/4 cup Chardonnay wine (or cooking wine or chicken broth)
1/4 cup milk
1 1/2 cups Minute Rice
1/2 cup butter, melted (or margarine)
1 cup seasoned bread crumbs
2 cups chopped broccoli (optional)

2 cups of long-grain and wilde rice mix (cooked)
3 chicken breasts (cubed)
2 tbls of butter
1 medium onion (chopped)
2 stalks of celery (chopped)
1 can of condensed chicken soup or cream of chicken soup
1/2 cup of sour cream
1/2 cup of cooking white wine
1/2 cup shredded Parmesan cheese
1/3 cup fresly snipped basil

Steps:

  • Cook the rice according to direction in the package.
  • Preheat oven to 350F.
  • In a large skillet melt butter over medium heat and cook the chicken until no longer pink.
  • Add celery and onion and saute for 5 minutes or until tender.
  • Stir in the sour cream, cream of chicken soup, white wine, and basil, stir.
  • Add the cooked rice and chicken and mix well.
  • Transfer to an ungrease baking dish.
  • Sprinkle with parmessan.
  • Bake for 30 minutes, uncovered.

Easy casserole I modified from a couple different recipes I found.

2-3 dash(es) olive oil, extra virgin
4 boneless skinless chicken breasts
2 clove minced garlic
4 oz chopped onion
1-2 dash(es) dry white wine
1 c chicken broth (i use better than bullion)
1/2 c butter
4 c herb seasoned stuffing mix
1 can(s) cream of chicken soup
8 oz frozen chopped broccoli (thawed)
1 pt sour cream

Steps:

  • 1. In a frying pan add a couple of dashes of extra virgin olive oil and heat. Add garlic, onions and chicken breasts. I always season with salt and pepper and a little garlic powder too. Cook chicken breasts until done. (about 15 minutes) Don't brown them too much. Remove chicken to cutting board to rest.
  • 2. Add 1 tablespoon of Better than Bullion chicken to a cup of hot water to make a broth.. Add a couple splashes of white wine to deglaze the pan. Deglaze pan and scrape wine and onion/garlic bits into the measuring cup of chicken bullion. Set aside.
  • 3. Now that chicken has rested, cut into cubes or shred all the chicken and set aside.
  • 4. Put stuffing mix into a food processor and drizzle melted butter into processor and pulse until mixed. Set aside.
  • 5. In another bowl, whisk together the broth, sour cream and cream of chicken soup. Set aside.
  • 6. In a 9 x 13 baking dish, spread half the stuffing mix in the bottom of the pan. Distribute the shredded chicken over the stuffing mix layer. Spread the thawed broccoli over the chicken layer. Then spoon the soup mixture over the broccoli evenly. Top with the remaining half of the stuffing mix.
  • 7. Cover loosely with aluminum foil and put baking dish into a 350 degree over for 30 minutes. After 30 minutes remove the foil and bake an additional 15 minutes. Then take out and enjoy!

In a medium nonstick frying pan, heat 1 teaspoon of the extra-virgin olive oil over medium high heat. Add the chicken breasts and cook for 1 minute. Turn the chicken, cover the pan, reduce the heat to low and cook for 8 minutes. Remove from the heat and let it sit, covered, for 10 minutes, then shred the chicken with 2 forks.
  • In a large nonstick frying pan, heat the remaining 2 tablespoons of extra-virgin olive oil over medium high heat. Add the onions and cook for 5 minutes, until they soften and begin to brown. Add the diced potato and cook for 5 minutes. Add the carrot, red pepper and cauliflower and cook, stirring frequently for 5 minutes.
  • Add the brandy to the pan and use a wooden spoon to scrape up any browned bits on the bottom. Sprinkle the remaining 1/2 cup of flour over the vegetables and mix well. Add the water and stir until the sauce thickens, about 2 minutes.
