These potatoes are loaded with creamy goodness like sour cream and cheddar cheese and make a perfect side dish!

Steps:
- Preheat oven to 375˚F and grease a 9x13 inch baking dish.
- If using fresh potatoes, place in a saucepan with cold water. Simmer 12-14 minutes or until fork tender. Drain and allow to cool slightly.
- Melt butter, add sour cream, soup, onion and 1 ½ cups cheese.
- Toss in the potatoes (or frozen hash brown potatoes) and combine. Spread into a prepared baking dish.
- Top with remaining cheese and bake for 28-30 minutes or until browned and bubbly.

- Stir cream of chicken soup, cream cheese, and milk together in a saucepan over medium heat and cook until the cheese is completely melted and the liquid is heated through, about 5 minutes.
- Spread hash brown potatoes into a casserole dish; pour soup mixture over the potatoes.

CHEAP EASY CHEESY POTATO BAKE
A little like the cheesy Swiss bake, but for those on a budget! Great comfort food as well. This dish can be enjoyed as a full meal for two or a side dish for 4. Enjoy!

- Preheat the oven to 200c/fan 180c, Chop the potatoes into small squares and boil for about 10 mins. Drain and then leave.
- While the potatoes are boiling chop the bacon, onion, mushrooms and Garlic. Start to fry the onions and when they have gone a little soft add the rest.
- Once everything is cooked in the frying pan, add the soft cheese and stir until everything is coated. Pour the mixture into the potatoes and stir so it covers everything.
- Pour into an oven proof dish and sprinkle some paprika and a third of the cheese, then stir again. Once everything is coated cover with foil and bake for 25 mins.
- After the 25 mins remove the foil and put the rest of the cheese on top of the bake and put back in the oven for about 20 mins until the cheese has gone a nice golden brown.

- Place half of the sliced potatoes in a oiled 2 quart casserole dish.

- Preheat oven to 400 degrees. Prepare the baking dish with cooking spray or butter. Set aside.
- Pull out all of the ingredients.
- Wash and peel potatoes, then slice or chop.
- Next, boil potatoes in salted water, until they start to become tender; usually not more than 10 minutes. Do not overcook them or they will become mushy! Depending on the size, timing is difficult to predict. When cooked, drain.
- In the meantime, using a large skillet, fry the bacon pieces until crisp over medium heat. Use as much or as little bacon as you want. Drain on paper towel, crumble and set aside.
- Keep a few tablespoons of the bacon fat in the skillet and add sliced onions. Stir onions, over medium heat, until onions become very tender and start to brown.
- Add garlic, combine with onions and remove from heat.
- Cover the bottom of the pan with potato slices or chunks. Sprinkle with seasoned salt and pepper.
- Scatter onions all over top of potatoes, then the bacon.
- Add cheese. Then repeat the process.
- More potatoes.
- Onions.
- Bacon.
- More cheese.
- Totally cover the top with remaining potatoes. Try to cover up any holes with potato.
- Drizzle with melted butter, remaining bacon and some seasoned salt and pepper to taste.
- Pour chicken broth over top of casserole and cover with cheese.
- Cover with foil and bake for 30 minutes.
- Uncover and bake until cheese has completely melted and the top is golden brown; about another 15 minutes.
- Allow to rest for at least 5 minutes before serving, if not 10. Serve with sour cream if desired. Enjoy!

This crispy cheese and tomato potato bake is super easy to make. It's layered up with mature cheddar cheese, thinly sliced potatoes, and a rich tomato sauce - the perfect side dish.

- Heat the oil in a frying pan, and add the grated carrot and diced onion. Cook over a medium heat for around 5 minutes, until fairly soft. Add the minced garlic, smoked paprika and dried herbs, and cook for 2 more minutes.
- Next, add the tomato sauce, tomato puree and about two thirds of the cherry tomatoes (save some back for topping), along with a good pinch of salt and pepper. Bring to a gentle simmer, and cook for a few minutes.
- Thinly slice the potatoes - I didn't bother peeling mine. If you're not planning to pre-boil the potatoes, make sure you don't cut them any thicker than a few millimetres. Or, if you want to cut them a bit thicker or you're pushed for time, pre-boil them until they're just tender.
- Add one spoonful of sauce to the bottom of a baking dish (mine measured 8 x 8 inches), and spread it around - this just stops the potatoes from sticking to the bottom of the dish. If you have a dish with a lid, that's ideal.
- Now layer the sliced potatoes, tomato sauce and grated cheese - I ended up with 4 layers of each in total. Just make sure the potatoes are always laid out in a single layer, to help them cook through (less important if you've pre-boiled them).
- When you've used all the potatoes, finish with one final layer of tomato sauce, the last bit of grated cheese, and the breadcrumbs, as well as any cherry tomatoes you held back earlier.
- If you didn't pre-boil the potatoes, add a lid to the dish (or cover with kitchen foil, if you don't have a lid), and bake at 190°C (Gas Mark 5 / 375°F) until the potatoes are soft (check by poking with a sharp knife). Mine took around an hour and a half in total, but the exact time will depend on the exact thickness of your potatoes.
- If you did pre-boil the potatoes, you can cook your potato bake at 190°C (Gas Mark 5 / 375°F) without a lid, until golden brown and crispy - around 20-25 minutes.
