MEALIE BREAD (SOUTH AFRICAN SWEETCORN BREAD)



Mealie Bread (South African Sweetcorn Bread) image

Kernels of sweet corn stud this sweet and flavorful Mealie Bread, a South African sweetcorn bread that is sure to delight any cornbread fan.

2 c (330 g) sweet corn kernels, (thawed if frozen, cut off of the cob if fresh), divided
½ c (118 ml) milk
2 eggs, beaten lightly
2 Tbsp (28 g) salted butter, melted
1 ½ c (180 g) unbleached all purpose flour
2 Tbsp cornmeal
2 Tbsp sugar
2 tsp baking powder
1 tsp salt
½ tsp paprika

Steps:

  • Preheat your oven to 350F. Butter a 8 ½ x 4 ½ loaf tin.
  • Place 1 cup of corn and the milk into your blender and blend until the corn is nicely pureed.
  • Add the remaining 1 cup of corn and blend just enough to chop the kernels coarsely.
  • Transfer the corn and milk mixture to a medium bowl. Add the beaten eggs and melted butter.
  • Add the flour, cornmeal, sugar, baking powder, salt, and paprika to the bowl. Mix until incorporated and evenly moist.
  • Pour the batter into the prepared pan.
  • Bake the mealie bread for 45-50 min. Until a toothpick inserted into the center comes out clean.
  • Cool the bread in the pan for 5 minutes before turning the bread out onto a wire rack to continue cooling.
  • Serve warm.

A really easy mielie (AKA corn) bread, lovely with a braai (South African for BBQ) or just as a snack. It's delicious with apricot jam too. I sometimes bake in giant muffin tins and freeze for lunches.

480 g self raising flour (+/- 3tsp BP in 480g flour)
salt
50 ml sugar
30 ml cooking oil
2 eggs
200 ml milk
1 (410 g) can cream-style sweet corn
100 g strong cheese, grated
grated onion
chopped parsley

Steps:

  • mix flour,salt& sugar.
  • beat oil, eggs& milk.
  • add to the flour mixture.
  • add remaining ingredients, mix and place in well greased circular pot.
  • sprinkle cheese, onion and parsley over.
  • bake at 180°C for 1 hour.
  • spread with butter and enjoy.

Quick and Easy Cheese Bread image

This easy bread is excellent with anything from meatloaf, to soups, to chicken. Tastes wonderful, but is pretty crumbly.

1 ¾ cups all-purpose flour
¼ cup white sugar
2 ½ teaspoons baking powder
¾ teaspoon salt
1 cup shredded Cheddar cheese
1 egg, beaten
¾ cup milk
⅓ cup vegetable oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, mix together flour, sugar, baking powder, salt and cheese. In another large bowl, beat together egg, milk and oil. Stir the flour/cheese mixture into the egg mixture, stirring until just moistened. Pour batter into prepared pan.
  • Bake in preheated oven for 35 minutes, until a toothpick inserted into center of loaf comes out clean.

Of all the different appetizers I've made over the years, this one is always the first to go and it is SUPER easy to make. You can use either sweet or sour dough bread, both are tasty! I will usually assemble the Cheesy Breads the morning of the party on cookie sheets and cover with plastic wrap and keep in the fridge. When everyone has arrived at the party I just pop them in the oven and serve them piping hot! If you don't want the bread to be crunchy, broil them instead of baking them. I've tried them both ways and crunchy is better!

3 cups shredded Cheddar cheese
1 cup mayonnaise
1 (1 ounce) package dry Ranch-style dressing mix
1 (2 ounce) can chopped black olives, drained
4 green onions, sliced
2 French baguettes, cut into 1/2 inch slices

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, blend Cheddar cheese, mayonnaise, ranch-style dressing mix, black olives and green onions. Increase the amount of mayonnaise as desired if the mixture seems too dry.
  • Spread equal amounts of the Cheddar cheese mixture on French baguette slices. Arrange slices in a single layer on a large baking sheet. Bake in the preheated oven 15 minutes, or until cheese is bubbly and lightly browned. Serve warm.
