CHEESY GROUND BEEF MANICOTTI

Steps:
- Cook and drain manicotti as directed on package using minimum cooking time (cooking for the minimum time helps prevent the shells from tearing while filling).
- Meanwhile, in 10-inch skillet, cook beef, onion and garlic over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in pasta sauce.
- Heat oven to 350°F. Spray 13x9-inch glass baking dish with cooking spray.
- Squeeze thawed spinach to drain; spread on paper towels and pat dry. In medium bowl, mix spinach, cottage cheese, mushrooms, 1/3 cup Parmesan cheese, the nutmeg and pepper.
- In baking dish, spread 1 cup of the beef mixture. Fill manicotti shells with spinach mixture. Place shells on beef mixture in dish. Pour remaining beef mixture evenly over shells, covering shells completely. Sprinkle with mozzarella cheese and 2 tablespoons Parmesan cheese.
- Cover and bake 30 minutes. Uncover and bake 20 to 25 minutes longer or until hot and bubbly.

- Combine Ricotta, Mozzarella, grated Parmesan, sugar, egg, nutmeg, parsley, salt and pepper to taste.
- Stuff uncooked manicotti generously with the cheese mixture, from both ends.
- Arrange manicotti in a single layer in a baking pan.
- Bring sauce to a boil and pour over manicotti, covering completely.
- Cover baking pan with aluminum foil, crimping the edges to seal tightly.
- Bake in a preheated 400 degree Fahrenheit oven for 40 minutes.
- Remove foil; sprinkle generously with additional grated cheese.
- Bake uncovered for 5 minutes more.

- Preheat oven to 375°F.
- Bring a large pot of salted water to a rolling boil. Add manicotti and boil for the 7-8 minutes, until almost tender*.
- Drain and rinse manicotti 2-3 times under cold water until cooled to room temperature.
- In a medium bowl, stir together ricotta, 1 cup mozzarella, 1/4 cup Parmesan, egg, pesto, salt, and pepper.
- Place ricotta mixture in a large piping bag or large freezer bag and snip the end.
- Lightly grease a 9x13 baking dish and spread 1 cup of marinara sauce in the bottom.

- Preheat oven to 350 degrees.
- Mix spaghetti sauce and water until well combined. Set aside.
- In a large bowl combine chopped spinach, ricotta, a third of the mozzarella, Parmesan, egg, pesto, oregano, garlic powder, and a couple large pinches of salt and pepper.
- Transfer to a piping bag (a gallon Ziploc baggy works well too).
- Spread half the spaghetti sauce mixture in an even layer in the bottom of a 9x13 inch baking dish.
- Cut the tip off your piping bag about the width of the manicotti noodles. Fill each noodle with filling.
- Nestle filled manicotti into the baking dish. Then pour the remaining sauce in an even layer on top of the noodles.
- Top manicotti with remaining shredded mozzarella. Cover pan tightly with foil and bake for about 50 minutes or until the noodles are just about cooked through.
- Remove foil and bake for another 5-10 minutes or until the noodles are al dente. Broil on high for a minute or so if desired.
- Let rest for a few minutes before garnishing and serving. Garnish with fresh chopped parsley and grated Parmesan and enjoy!

- Cook manicotti noodles in boiling water until 3 minutes shy of al dente. Rinse in cold water and set aside. Cook ground beef in a skillet over medium heat until no longer pink. Drain and set aside.

- To make the noodles, combine the eggs, milk, flour and salt, whisking well until mixture is thin and smooth. I like to use a hand mixer because it makes it a lot easier to get all of the lumps out of the batter. It is easiest to make the crepes if you have a crepe maker but you can make the crepes in a skillet very easily as well. -To make the crepe noodles in a skillet, put about 1/4 cup of the batter in a heated skillet over medium heat, allowing the batter to coat the bottom thoroughly. Right after pouring the batter in the skillet, pick it up and tilt it around until it makes a nice circle. Cook about 30 seconds to 1 minute on each side. You don't want the noodles to get crispy, so just cook them until they are cooked through but still soft. You want the crepes to be about 5"-6" so a small skillet will work the best.-To make the crepe noodles with a crepe maker, set the crepe maker on medium heat. Once heated, pour 1/4 cup of the batter in the center and then use the crepe spreader
- To keep the noodles from sticking to each other, place a small piece of wax paper in between each crepe and stack them all up until you are out of batter. You should get about 16-18 crepes from this batter recipe.
- Mix the Ricotta cheese, half of the shredded Parmesan, the egg and the dried parsley until well combined.
- Pour half of the spaghetti sauce into the bottom of an ungreased 9X13 pan. Spoon about 2-3 tablespoonfuls of the cheese mixture into each noodle. Roll up each filled crepe and place into the pan, seam side down. Once all the noodles are filled and placed in the pan, pour and spread the rest of the spaghetti sauce over the top.
