Cheesy chicken bake with potatoes and broccoli. Only a few ingredients and very quick to prepare! Cheese soup instead of cheese gives a very cheesy flavor without all the fat.

1 (11 ounce) can condensed cheese soup
½ (10.75 ounce) can water
1 teaspoon dried parsley
3 skinless, boneless chicken breast halves
6 potatoes, sliced
1 head fresh broccoli, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl combine soup with water and parsley and mix together. Place chicken and potatoes in a 9x13 inch baking dish and pour cheese mixture over all. Cover dish with aluminum foil.
  • Bake, covered, in preheated oven for 60 minutes. Add broccoli to dish and bake for another 10 to 15 minutes, or until cooked through and tender.

1 Loaf French bread
1/2 cup salted butter (softened)
1/2 teaspoon garlic powder
3 garlic cloves minced
1 teaspoon Italian seasoning
1 cup Colby jack cheese (shredded)
1 cup mozzarella cheese (shredded)
fresh chopped parsley for garnish

Steps:

  • Preheat oven to 400 degrees. Cut your French bread loaf lengthwise and place on top of a baking sheet.
  • In a small bowl combine softened butter, garlic powder, minced garlic, and Italian seasoning. Spread evenly on each side of the garlic bread. Top with Colby Jack and mozzarella cheese.
  • Bake in the oven for 12-15 minutes until butter is melted an bubbly. You can also broil the top for 1-2 minutes at the end to give it a more crisp top.
  • Garnish with fresh chopped parsley if desired.

4 boneless skinless chicken breast halves (about 1 1/4 lbs)
1 medium tomatoes, coarsely chopped (or 1 small can diced tomatoes)
1 (1 ounce) envelope Lipton Recipe Secrets savory herb with garlic soup mix
1/3 cup water
1 tablespoon olive oil or 1 tablespoon vegetable oil
1 cup shredded mozzarella cheese (about 4 ounces)
1 tablespoon grated parmesan cheese

Steps:

  • Preheat oven to 400°F.
  • In 13x9-inch baking dish, arrange chicken; top with tomato.
  • Combine soup mix, water and oil in small bowl with a whisk for complete blending.
  • Pour soup mixture over chicken.
  • Bake uncovered for 20 minutes, or until no pink remains in center of chicken breasts.
  • Top with cheeses and bake 5 minutes or until cheese is melted.
  • Serve, if desired, with crusty Italian or garlic Texas Toast.

4 chicken breasts
4 cloves garlic (sliced)
½ cup grated mozzarella cheese
½ cup grated parmesan cheese (divided)
4 tablespoons unsalted butter (room temperature)
2 teaspoons Italian seasoning (divided)
1 cup all-purpose flour
3 eggs (beaten)
2 cups Panko breadcrumbs
Salt and pepper (to taste)
Oil

Steps:

  • Preheat the oven to 375°F.
  • In a small bowl, stir together the garlic, mozzarella, ¼ cup parmesan, butter, and 1 teaspoon Italian seasoning until well mixed.
  • Cut about a 3-inch wide pocket into the thick side of each chicken breast (almost to the other side, but do not cut all the way through).
  • Stuff ¼ of the cheese filling into each chicken breast and secure it with toothpicks. Set aside.
  • Get out 3 shallow bowls for the breading station. In one bowl, mix the flour with a pinch of salt and pepper. Put the eggs in the second bowl. Mix the breadcrumbs, ¼ cup parmesan, 1 teaspoon Italian seasoning, salt, and pepper together in the third.
  • Heat a cast iron skillet over medium-high heat. Add enough oil to cover the bottom of the skillet.
  • Dip each side of the chicken in the flour, then egg, and finally breadcrumb mixture. Place the chicken in the hot skillet and repeat until each chicken breast is breaded and cooking.
  • Cook the chicken until golden brown on both sides, about 3-4 minutes per side. Transfer the skillet to the oven and bake for about 20 minutes or until the chicken is 165°F at the thickest point.
  • Remove from the oven, let rest for 5 minutes, and serve.

  • Pour the melted butter into a good bit of minced garlic. I use about 8 large cloves. Pour in the olive oil. Microwave the mixture for 1 minute. Remove, and give it a quick stir with a fork. Microwave for another 30 seconds. This gets all that good garlic flavor infused with the butter & olive oil.
  • Mix together equal parts of Parmesan Cheese & Italian Bread Crumbs. Dip the chicken breasts in the garlic mixture, coating both sides thoroughly making sure to get a good bit of the minced garlic on each piece. Sprinkle with a little garlic salt & then dip into the dry mix, coating all sides well.
  • Place the chicken breasts into a baking dish. Bake in an oven preheated to 375 degrees for 35 minutes. Sprinkle a good bit of cheese on top of each chicken breast & then pop it back into the oven for just a couple minutes to melt the cheese on top. Garnish with diced green onions - you can also add chopped cooked bacon if you like.
