2 tablespoons olive oil
1 medium yellow onion, finely chopped
4 garlic cloves, minced
1 whole roasted chicken, bones and skin removed, meat shredded
1 cup shredded Mexican cheese blend
½ (8 ounce) package cream cheese, softened
¼ cup salsa verde
1 (2.5 ounce) can sliced olives, drained and diced
¼ cup chopped fresh cilantro
½ (4 ounce) can diced jalapeno peppers
¼ cup butter
¼ cup all-purpose flour
2 cups chicken broth
1 cup sour cream
½ cup salsa verde
16 corn tortillas
1 cup shredded Mexican cheese blend

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat olive oil in a saute pan over medium heat. Add onion; cook and stir until translucent, about 5 minutes. Add garlic and heat until fragrant, about 2 minutes. Remove from heat and let cool.
  • Combine chicken, onion mixture, cheese blend, cream cheese, salsa verde, olives, cilantro, and jalapenos in a large bowl for the filling. Mix well.
  • Melt butter in a saucepan over medium heat. Stir in flour, then chicken broth. Cook until sauce starts to thicken, 6 to 8 minutes. Stir in sour cream and salsa verde; cook until heated through. Spread a spoonful of sauce over the bottoms of two 9x11-inch casserole dishes.
  • Wrap a tortilla in a damp paper towel and microwave for about 30 seconds. Fill with the chicken mixture, roll up, and place seam-side down into a baking dish. Repeat with remaining tortillas until each dish holds 8 enchiladas.
  • Spoon remaining sauce over the enchiladas. Sprinkle cheese on top.
  • Bake in the preheated oven until heated through, about 20 minutes.

1 can (18.5 oz) Progresso™ Traditional Chicken and Cheese Enchilada Soup
1 can (10 oz) Old El Paso™ hot or mild enchilada sauce
2 cups shredded cooked chicken
2 cups shredded Monterey Jack cheese (8 oz)
10 corn tortillas (6 inches)
2 medium green onions, thinly sliced

Steps:

  • Heat oven to 350°F. In medium bowl, stir together soup and enchilada sauce. Spread 1 cup soup mixture in ungreased 11x7-inch baking dish.
  • In large bowl, mix 1 cup soup mixture with chicken and 1 cup of the cheese; reserve remaining soup mixture. On microwavable plate, stack tortillas and cover with paper towel; heat on High 1 minute to soften. Place 1/4 cup chicken mixture along middle of each tortilla. Roll up and place seam sides down in baking dish with sauce.
  • Pour remaining soup mixture over enchiladas. Sprinkle with remaining 1 cup cheese. Sprinkle green onions on top. Bake about 30 minutes or until cheese is melted and sauce is bubbly around edges.

Amazingly delicious homemade Green Enchiladas made with the BEST homemade green enchilada sauce, chicken, and cheese.

1 1/2 cups shredded chicken, about 1 lb raw or 12 oz cooked (we like to use home-canned, rotisserie, or leftover chicken)
2 cups shredded cheese, mozzarella, cheddar jack, colby jack, or Monterey jack
2 cups green enchilada sauce, about 16 oz
5-6 tortillas, 8-inch round
sour cream for serving, optional
cilantro for garnish, optional
lime wedges for serving, optional

Steps:

  • Preheat oven to 350'F.
  • In a mixing bowl add cooked shredded chicken, about 1 cup cheese, 2/3 cup green enchilada sauce. Mix until combine.
  • Using an 8x8 inch baking dish (or 9x9), add 1/3 cup green enchilada sauce to the bottom.
  • Next, scoop about 1/2 cup filling into each tortilla. Roll tightly then place seam-side down in the baking dish. Repeat for all tortillas.
  • Smoother the enchiladas with the remaining green enchilada sauce (about a cup).
  • Bake at 350'F for 25 minutes or until hot and bubbly. Remove from oven and add remaining cheese. Place back in the oven until cheese is melted (about 5 minutes).
  • Serve with sour cream, lime wedges, and cilantro if desired.

I make this or a version of this every single week-so easy! Sometimes I make them with all cheese, sometime with ground beef seasoned with taco seasoning and use a can of red sauce instead of green. The possibilities are endless!!!!!

4 chicken thighs or 2 chicken breasts-seasoned and roasted in oven, then shredded
1 large can green enchilada sauce
6 large la tortilla low carb corn tortillas or substitute regular large corn tortillas
1 1/2 c shredded cheddar cheese

Steps:

  • 1. Preheat oven to 350 degrees. Spray a 9x13-inch baking dish with nonstick cooking spray. In a large skillet on medium low heat, add enchilada sauce and warm.
  • 2. Dip a tortilla into sauce and shake off and place in prepared baking dish. Add a heaping amount of shredded cooked chicken and sprinkle with about 1 Tablespoon or so of shredded cheese. Roll and place seamside down in pan. Continue with the other 5 tortillas, using all of the chicken but reserving some cheese for top.
  • 3. Pour the remaining sauce over top of enchiladas and sprinkle with remaining cheese. That's it! Bake for appx. 30 minutes until bubbly and hot. Serve with a big heaping spoonful of sour cream and sliced avocado, if desired. Makes 6 very large enchiladas. I eat one; my husband eats 2; some may eat 3. May serve 2, 3, 4 or 6!
  • 4. *Note - To make this very easy, you can substitute shredded rotissiere chicken. *2nd Note - Sometimes I add a splash of heavy cream to the sauce to make it a little creamier.

Between 10-12 small Tortillas for rolling (corn, low carb, or flour)
1 cup shredded cheddar for the topping
1 (15 ounce) can Green Chile Enchilada Sauce
8 ounces sour cream
4 cups cooked, shredded chicken
4 ounces cream cheese
1 (4 ounce) can mild green chiles
1/4 cup chopped green onions
1 cup shredded cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large bowl combine the shredded chicken, cream cheese, shredded cheese, green onions and green chiles. Set the bowl aside.
  • To make the enchilada sauce combine the green chile enchilada sauce and sour cream. Whisk until smooth.
  • Next, grease a 7x11 casserole dish and add about 1/2 cup of the enchilada sauce to the bottom of the pan. This will be a thin layer, just enough to lightly cover the bottom of the baking dish.
  • To assemble the enchiladas, spoon the chicken mixture into a tortilla and tightly roll (see notes in post for tips to prevent cracking). Lay the enchilada seam side down. Repeat until all the chicken mixture has been used.
  • Top the rolls with the remaining enchilada sauce, top with the shredded cheese and bake 25 minutes until golden brown.

1½ lbs chicken breasts ((boneless, skinless))
2 tsp sea salt ((divided))
1 tsp black pepper ((divided))
6 cloves garlic ((divided))
2 tsp dried oregano ((divided))
2 dried bay leaves
14 corn tortillas
¼ cup vegetable oil ((for frying tortillas))
28 ounce green enchilada sauce ((mild, medium, or hot))
8 ounces cream cheese ((softened and cubed))
7 ounces canned, diced green chiles ((drained))
4 cups shredded jack cheese ((divided))

Steps:

  • Filet chicken breasts in half so that they can cook faster. Add 1 teaspoon salt, ¼ teaspoon black pepper, 3 cloves garlic, 1 teaspoon oregano, bay leaves, and 8 cups of water. Bring to a boil over medium-high heat, then simmer over low heat for 20 minutes.
  • While the chicken is cooking, fry the tortillas in hot oil for a few seconds on each side. Drain on paper towels.
  • Preheat oven to 375 degrees F. Lightly grease a 9"x13" baking dish. Pour ½ cup of enchilada sauce into the baking dish.
  • Shred cooled chicken and add to a large bowl. Season with 1 teaspoon salt, ¾ teaspoon black pepper, and 1 teaspoon oregano. Crush 3 cloves garlic and add to the bowl; stir. Add softened and cubed cream cheese, drained diced green chiles, 2 cups shredded jack cheese, and one cup enchilada sauce. Blend until the cream cheese melts into the mixture.
  • Fill each tortilla with approximately ¼ cup of chicken enchilada filling. Fold the tortilla over the filling and place enchiladas seam-side down into the prepared pan.
  • Pour the remaining enchilada sauce over the enchiladas then cover the pan with foil; seal. Bake in preheated oven for 30 minutes.
  • Remove pan of enchiladas from the oven and cover with the remaining shredded cheese. Bake, uncovered for an additional 15 minutes or until the cheese is melted and bubbly.
  • Rest for 15 minutes (not you, the enchiladas). Sprinkle with chopped fresh cilantro, salsa, Creamy Guacamole, and sour cream.

These comforting, authentic ground beef enchiladas are smothered in green enchilada sauce and baked to cheesy tex mex goodness!

2 pounds ground beef, 80/20 blend
1 t. kosher salt
1/2 onion, small dice
2 garlic cloves, minced or pressed through a garlic press
1/2 t. onion powder
1 t. black pepper
1 t. Texas chili powder
1/2 t. garlic powder
3 T. water
1/2 c. tomato sauce (4 oz. can)
1 batch of Green Enchilada Sauce
25-10 corn tortillas
1/4 c. oil for heating the tortillas
1 c. shredded Monterrey Jack or Quesadilla or Oaxaca cheese

Steps:

  • Prepare the Green Enchilada Sauce according to the instructions found here. For the enchilada filling: Place the ground beef in a saute pan over medium-high heat and sprinkle with kosher salt. Sear the meat well, drain, and then add in the diced onion and garlic. Add the spices. Cook 2 minutes to soften the vegetables. Add in water and cook 5-10 minutes to a saucy consistency. The beef filling should be moist but not runny with water. Continue simmering if you need to evaporate excess water. Add the tomato sauce. Simmer 5 minutes or so and season to taste. Remove from the heat and cool. In a saute pan, add a little oil and fry each corn tortilla for several seconds on both sides. Remove the tortilla to a plate lined with paper towels and repeat with the remaining corn tortillas. This warms them for the filling and makes them rollable. Place about 1/4 c. of green enchilada sauce in a large casserole dish. Lay a tortilla flat and fill with about 2-3 T. of filling. Roll up and place into the casserole dish, seam side down. Repeat with the remaining tortillas until your casserole dish is full. Pour the green enchilada sauce over the enchiladas and cover with cheese of your choice. Bake at 350 degrees for 25 minutes. Remove and top with pickled jalapenos, sour cream, cilantro, or your favorite toppings! Serve hot with beans and rice!
