My family tells me these hearty stuffed beef rolls with creamy sauce "taste like home". They're attractive enough to serve for a special dinner but economical and easy to prepare. -Pat Habiger, Spearville, Kansas

1-1/2 pounds boneless beef round steak
1/4 cup chopped onion
1/4 cup butter, melted
2 cups fresh bread cubes
1/2 cup chopped celery
1 tablespoon dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon poultry seasoning
1/4 teaspoon pepper
1 cup all-purpose flour
2 tablespoons canola oil
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1-1/3 cups water
3/4 teaspoon browning sauce, optional

Steps:

  • Flatten steak to 1/3-in. thickness. Cut into six pieces. In a small bowl, combine the next eight ingredients. Place 1/3 cup on each piece of steak; roll up and fasten with a toothpick. Roll in flour. , In a large skillet, brown roll-ups in oil. In a small bowl, combine the soup, water and browning sauce if desired; pour over roll-ups. Cover and simmer for 2 hours or until meat is tender, turning occasionally.

2 tablespoons canola oil, divided
3 tablespoons garlic, chopped
2 sweet onions, like Vidalia, chopped
2 cups mushrooms, thinly sliced
½ tablespoon kosher salt
½ tablespoon freshly ground black pepper
2 lb flank steak
4 oz fresh baby spinach, 1 package
9 slices provolone cheese

Steps:

  • Preheat oven to 350°F (175°C).
  • Heat one tablespoon of the oil in a pan over medium-high heat. Combine the garlic, onions, mushrooms, salt, and pepper in the pan and cook until almost all of the moisture has evaporated and the onions are caramelizing, 15-20 minutes. Remove from heat and set aside.
  • Lay the flank steak on a cutting board. Add salt and pepper on both sides, to taste.
  • Spoon the mushroom and onion mixture on top, spreading it evenly across the steak. Sprinkle the spinach on top, followed by the slices of provolone. Press down lightly to compress the spinach.
  • Starting at the bottom of the flank steak, roll it up tightly, making sure the grain of the meat is running horizontally. Use six toothpicks to secure the steak roll. Slice the steak roll into six equal rolls.
  • Heat the remaining oil in a pan over high heat. Sear the steak rolls on one side for one to two minutes, then flip. Sear the second side for about one minute, then bake for 10-15 minutes, until medium rare.
  • Remove the toothpicks, then serve!
  • Enjoy!

1 tsp Worcestershire Sauce
8 oz Cheez Whiz or shredded Velveeta
1 tbsp Butter
1 cup sliced sweet peppers*
1/4 large Vidalia onion sliced*
1 clove of Garlic (minced)
1 can Crescent Roll Dough
Salt & Pepper (to taste)

Steps:

  • Preheat oven to 350.
  • Grease 13x9 baking dish (or coat with non stick spray) and set aside.
  • Place skillet over med-high heat. Saute beef, mushrooms and Worcestershire until beef is browned.
  • Drain and spread out into baking dish.
  • Spread cheese over top of beef mixture.
  • Sauteed garlic and vegetables over medium-high heat until peppers are soft.
  • Spread the vegetables over cheese layer.
  • Top the casserole with crescent dough.
  • Bake 30 minutes or until dough is golden brown on top.

2 pounds shaved steak
6 slices American cheese
1 green bell pepper, chopped
1 red bell pepper, chopped
1 yellow bell pepper, chopped
salt and ground black pepper to taste
1 (16 ounce) package egg roll wrappers
2 cups vegetable oil for frying

Steps:

  • Cook and stir half of the shaved steak in a large skillet over medium heat until browned, 3 to 5 minutes. Transfer to a plate. Repeat with remaining steak. Drain juices from the steak; cut into small pieces.
  • Combine steak, American cheese, green bell pepper, red bell pepper, and yellow bell pepper in a bowl. Season with salt and pepper.
  • Lay 1 egg roll wrapper on a flat surface in the shape of a diamond. Place a large spoonful of the steak mixture in the center. Fold the bottom corner and opposing sides over the steak mixture; roll up wrapper towards the top corner. Repeat with remaining egg roll wrappers and steak mixture.
  • Heat oil in a deep-fryer or large saucepan. Place a few egg rolls in the hot oil, seam-side down. Fry, turning occasionally, until golden brown, 2 to 3 minutes. Repeat with remaining rolls.

Canola oil, for frying
2 eggs
2 tablespoons milk
2 tablespoons olive oil
1 small red onion, thinly sliced
1 small red bell pepper, thinly sliced
1 small green bell pepper, thinly sliced
1 pound roast beef, thinly sliced
16 ounces pepper jack cheese, shredded
8 egg roll skins

Steps:

  • Preheat oil to 350 degrees F in medium saucepan. Fill with enough oil that egg rolls will not rest on the bottom of pan. Mix egg and milk together, in a small bowl, for egg wash.
  • In medium saute pan over medium heat add olive oil, onion, and peppers. Sweat vegetables until slightly softened, about 2 minutes. Add roast beef and saute until onions are translucent, about 5 minutes more. Add cheese and mix thoroughly, until cheese begins to melt. Remove from heat, strain in a fine mesh sieve to remove excess moisture, and let cool.
  • Divide cooled mixture into 8 equal parts. Place mixture in center of each egg roll skin. Fold in side corners and roll, sealing edges with egg wash. Submerge egg rolls in oil and fry, making sure the rolls do not touch the sides or the bottom of the pan. Fry in batches, to avoid over-crowding. until golden brown. Remove egg rolls to paper towels to blot excess oil. Cut egg rolls on bias, place on a serving platter and serve hot

2 slice steak ums
2 slice velveeta queso blano cheese
1/2 tsp liquid smoke flavoring
1/2 tsp worcestershire sauce
1 tsp steak sauce
1 flour tortilla

Steps:

  • 1. Cut up your steak ums while they are still frozen. About 1 inch slices or so.
  • 2. Fry up your Steak um according to the directions. ( Steak um is the bread I used of Thin Sandwich steaks. In the freezer section of your grocery store. Any brand will work fine.)( They are paper thin.. )
  • 3. A picture for reference on Steak Ums
  • 4. Season the meat with the Worcester sauce and liquid smoke. ( You also can do this ahead of time. cutting up the meat and putting the season on it and let it marinade..)
  • 5. Place your cheese on top of the cooked meat. Turn off the heat. Place a cover on the steak um with a few drops of water to make a steam, to melt the cheese while it is covered.
  • 6. Place your tortilla on a plate and warm it in the mico wave for a few seconds. Just enough to warm it.. Do not over cook..
  • 7. place your meat in the center of your warm tortilla and place on your steak sauce.
  • 8. Roll up your tortilla and enjoy your roll..

Steps:

  • Combine 3/4 cup flour, undissolved yeast, sugar and salt in a large bowl. Heat milk, water and butter until very warm (120 degrees to 130 degrees F). Add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add 1/4 cup flour; beat 2 minutes at high speed. Stir in enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.
  • Divide dough into 12 equal pieces; shape into balls. Place in greased 8-inch round pan. Cover; let rise in warm, draft-free place until doubled in size, about 30 minutes.
  • Bake in preheated 375 degrees F oven for 20 minutes or until done. Remove from pan; brush with additional melted butter, if desired. Serve warm.

3 -4 slices Steak-ums
1/4 cup sliced onion
1 teaspoon salt
1 egg
1 tablespoon milk
1 cup cheddar cheese
egg roll wrap
vegetable oil (for deep frying)

Steps:

  • In a frying pan, cook the steak-umm and onion in two tablesspoons of vegetable oil.
  • Season with salt and pepper.
  • Once cooked, chop up the steak and onion. Set aside in bowl.
  • Whisk together the milk and egg to form an egg-wash.
  • Brush the edges of the wrapper with the egg-wash.
  • Place two spoonfuls of the steak and onion in the center of the wrapper.
  • Generously sprinkle with cheese.
  • Fold according to directions. Set aside. Fill and fold the other wrappers.
  • Deep fry for 2 1/2 minutes. (Trick: Turnover every 30 seconds to keep eggroll from getting top heavy with oil.).
