EASY CHEESELESS MANICOTTI
A new delicious twist on manicotti for people who don't like cheese. A great weekday meal.

Steps:
- 1. Brown meat and mix with garlic powder, bread crumbs, salt, onion salt, Italian seasoning, pepper and 1/2 cup Marinara sauce.
- 2. Fill manicotti with the meat mixture.
- 3. Pour half of the Marinara sauce in a 9 X 13 inch casserole dish.
- 4. Lay in manicotti and cover with remaining sauce.
- 5. Bake about 40 minutes in a 350 degree oven. Can add some Parmesan cheese on top, if you must have some cheese.
EASY MEATLESS MANICOTTI
Whip up thi meatless manicotti for a vegetarian version of a favorite Italian pasta dish. GOOD TO KNOW: Cheese pasta dishes fon't always have to be extremely high in fat. This recipe calls for fat-free cheese, so you get the flavor, the calcium but not all the saturated fat.

- Preheat oven to 375°F.
- Combine 1 1/2 cups mozzarella, cottage cheese, and the next 5 ingredients (through black pepper) in a medium bowl. Spoon about 3 tablespoons cheese mixture into each uncooked manicotti. Pour half of tomato-basil pasta sauce into a 13x9-inch baking dish coated with cooking spray. Arrange stuffed shells in a single layer over sauce, and top with the remaining sauce. Pour 1 cup water into dish. Sprinkle the remaining 1/2 cup mozzarella evenly over sauce. Cover tightly with foil. Bake at 375° for 1 hour or until shells are tender. Let stand 10 minutes before serving.

NO BOIL MANICOTTI
This is an easy recipe since you don't need to precook the pasta and the shells are firm when you try to stuff them.

Steps:
- Preheat oven to 400°F.
- Combine Ricotta, 4 oz Mozzarella, Parmesan, 1 tsp sugar, egg, nutmeg, parsley, salt and pepper.
- Stuff uncooked manicotti generously with cheese mixture, from both ends. (Tip: I put mixture in a plastic bag and cut off a small corner to squeeze the mixture in the shells easily).
- Arrange manicotti in a single layer in a slightly greased 13 x 9 inch baking dish.
- Combine diced tomatoes, tomato paste, water, onion flakes, basil, rosemary, oregano, sugar, salt and pepper in a small or medium sauce pan and bring to just a boil.
- Pour sauce over manicotti covering completely.
- Cover baking dish with aluminum foil, crimping edges to seal tightly.
- Bake for 40 minutes at 400°F.
- Remove foil, sprinkle generously with remaining mozzarella.
- Bake uncovered for 5 minutes or until cheese is melted.
EASY HEALTHY MEATLESS MANICOTTI
I got this recipe out of a Cooking Light magazine and it is really good. The best part is - it is easier and healthier than most traditional manicottis. It has become one of the regular dinner around here.

Steps:
- Preheat oven to 375°.
- Combine 1 1/2 cups of the mozzarella, cottage cheese, and next five ingredients (through pepper) in medium bowl.
- Fill and stuff each shell (will have enough mixture for all - so don't worry).
- Spray 13 x 9-inch baking dish with non-stick.
- Pour 1/2 of sauce on bottom.
- Arrange shells on top in single layer.
- Pour remaining sauce over shells.
- Pour water into dish.
- Sprinkle with remaining mozzarella.
- Cover tightly with foil.
- Bake for 1 hour in preheated oven.
- Let stand for ten minutes before serving.
