1/4 cup chopped onion
2 garlic cloves, minced
1/4 cup butter, cubed
3 cups cooked long grain rice
2 cups shredded cheddar cheese
1 cup minced fresh parsley
1 cup whole milk
4 large eggs, lightly beaten
2 teaspoons Worcestershire sauce
1 teaspoon salt

Steps:

  • In a large saucepan, saute onion and garlic in butter until tender. Add remaining ingredients; mix well. Transfer to a greased shallow 1-qt. baking dish. Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted in the center comes out clean.

2 tablespoons butter, plus more for dish
1 small onion, minced
Pinch cayenne pepper
1 package frozen spinach, thawed, drained and chopped
1 cup milk
2 eggs
2 cups shredded sharp Cheddar, plus extra for top
4 cups cooked rice
1 teaspoon freshly chopped parsley leaves
1 teaspoon freshly chopped thyme leaves
1 teaspoon chopped basil leaves
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees F. Butter a large casserole dish.
  • In a large pan over medium-high heat, saute onions with 2 tablespoons of butter and cayenne until translucent. Add the spinach and cook for 3 minutes. Set aside.
  • In a large bowl, whisk together milk and eggs.
  • Add the cheese, rice, parsley, thyme, basil and spinach mixture and combine well. Season with salt and pepper.
  • Pour into prepared casserole dish and top with extra shredded cheese. Bake for 30 minutes and serve piping hot.

1 small onion, diced (or about 1 cup of frozen pre-diced onion for a shortcut)
1 (10.5 ounce) can condensed cream of mushroom soup, NOT diluted
1 (10.5 ounce) can condensed cream of celery soup, NOT diluted
1 ¼ cups milk
½ teaspoon salt
½ teaspoon dried chives
¼ teaspoon black pepper
¼ teaspoon garlic powder
4 cups cooked rice ((I use 2 packages (8.8 oz each) of Uncle Ben's Ready Rice microwaved according to package instructions))
2 cups frozen mixed vegetables, thawed ((I use a 10-ounce package))
1 cup grated cheddar cheese
1 cup crushed Corn Flakes cereal ((about 1 ¾ c. whole cereal before crushing))
2 tablespoons melted butter

Steps:

  • Preheat oven to 350 degrees F. Spray a 9 x 13-inch baking dish with cooking spray and set aside.
  • Cook beef and onion in a large skillet over medium-high heat until meat is no longer pink (about 5-7 minutes). Drain.
  • In a separate bowl, stir together condensed soups, milk, salt, chives, pepper and garlic powder.
  • Add cooked rice, soup mixture and vegetables to the cooked beef. Stir to combine. Transfer to prepared baking dish. Sprinkle cheese over top.
  • In a small bowl, toss together Corn Flakes crumbs and melted butter. Sprinkle over top of the casserole.
  • Bake, uncovered, at 350 degrees F for 30 minutes, or until hot and bubbly. Allow to rest for 5 minutes before serving.

1 cup sliced or chopped mushrooms
1 bunch green onions, thinly sliced
4 tablespoons all-purpose flour
1 1/2 cups chicken broth
1 cup milk or cream
1 1/2 cups shredded Cheddar cheese, divided
1/8 teaspoon freshly ground black pepper
1 teaspoon kosher salt, or to taste
2 ounces chopped pimiento, drained
3 cups cooked rice
3 cups cooked diced chicken
1 tablespoon chopped fresh parsley, optional
1 cup soft bread crumbs
2 tablespoons melted butter

Steps:

  • Gather the ingredients.
  • Heat oven to 350 F. Grease a shallow 2-quart casserole dish.
  • In a Dutch oven or large saucepan, melt the butter over medium heat.
  • Add the mushrooms and cook for 2 minutes, stirring constantly.
  • Stir in the green onions and continue cooking, stirring, for 1 minute.
  • Stir in flour until blended into the butter and vegetable mixture.
  • Add the chicken broth and cook, stirring, until thickened.
  • Add the milk or cream, 1 cup of the cheese, salt, pepper, and drained pimiento. Cook, stirring, until cheese is melted.
  • Add the rice, chicken, and parsley; stir to blend. Taste and adjust the seasonings, as needed.
  • Spoon the chicken and rice mixture into the prepared casserole and top with the remaining 1/2 cup of cheese.
  • Toss bread crumbs with the melted butter until the crumbs are well drenched with the butter. Sprinkle over the cheese layer.

2 Tablespoons butter
2 boneless skinless chicken breasts (or 2 cups diced rotisserie chicken)
1 teaspoon Italian Seasoning
Salt/Pepper (to taste)
2 1/2 cups chicken broth
1 Tablespoon olive oil
1 1/4 cups white long grain rice (uncooked)
2 cups fresh broccoli florets (uncooked)
10.5 oz. Condensed Cream of Chicken Soup
½ cup milk
½ cup sour cream
2 cups shredded cheddar cheese (separated)
1 teaspoon dried thyme
1/2 teaspoon garlic powder
1 cup Ritz crackers (crushed)
2 Tablespoons melted butter

Steps:

  • Note: This recipe is designed to allow you to prepare all of the casserole ingredients in one pot before transferring to a casserole dish for baking. Before you begin, refer to your rice package for the amount of liquid (we'll use chicken broth) and cooking time. I use white long grain rice and the cooking time/liquid amount below works perfectly.
  • Preheat the oven to 350 degrees.
  • Cut chicken into bite-sized pieces and season with Italian seasoning and desired amount of salt and pepper.
  • Heat butter in a large pot over medium heat until melted. Add the chicken and cook until golden brown on all sides, about 5 minutes. Remove and set aside. Note: This step is not needed if using a cooked rotisserie chicken.
  • Add the chicken broth, olive oil, and rice to the pot and bring to a boil, then reduce heat to a simmer.
  • Cover tightly and cook for 7 minutes.
  • Add the broccoli and replace the cover. Cook for 8 more minutes. Refrain from stirring.
  • Turn off the heat and leave the cover on. Let the rice stand for 10 minutes, do not stir. Any rice on the bottom of the pot will release.
  • Add the cooked chicken, soup, milk, sour cream, optional seasonings, and half of the cheddar cheese.
  • Add to a lightly greased 9 x 13 casserole dish and top with remaining cheese.
  • Cover and bake for 15 minutes.

3 cups fresh spinach

1/2 cup heavy whipping cream
1 teaspoon onion powder
1 teaspoon dried oregano
1/2 teaspoon black pepper
1 1/2 teaspoon cumin
1 1/2 teaspoon chili powder

2 cups white cheddar cheese, shredded, divided
3 tablespoons fresh cilantro leaves, for garnish

Steps:

  • Preheat the oven to 400F. Spray the inside of a 1.5-quart casserole dish with olive oil cooking spray.
  • If the cauliflower rice was frozen, thaw it to room temperature. Put the cauliflower rice in a microwave-safe dish, drape a paper towel over the top, and microwave on high for 3 minutes.
  • Heat the oil in a large skillet over medium-high heat. Once hot, add the chicken and cook until browned, about 5 minutes. Add in spinach and garlic, and cook until spinach is wilted, about 3-5 minutes.
  • Reduce the heat to medium and stir in the cream cheese, heavy whipping cream, onion powder, dried oregano, black pepper, cumin, chili powder, and salt.
  • Bring to a simmer and cook until thickened slightly, about 5 minutes, stirring constantly. Stir in 1 cup of the shredded white cheddar and cauliflower rice.
  • Pour the creamy mixture into the prepared casserole dish. Sprinkle the remaining 1 cup shredded whitecheddar on top.
  • Bake until it's warm throughout, about 15 minutes, and then broil for a couple minutes to helpbrown the cheese on top.
  • Sprinkle the cilantro on top, squeeze the lime over the top and serve. Add red pepper flakes for a little heat.
