1 lb large cauliflower floret
1 lb large broccoli floret
1/2 cup water
4 ounces light cream cheese, cubed
1/4 cup low-fat milk
1/2 cup low-fat sour cream
1 1/2 cups shredded cheddar cheese
10 Ritz crackers, crushed
3 tablespoons grated parmesan cheese

Steps:

  • Place cauliflower and broccoli in 2-qt. microwaveable dish. Add water; cover. Microwave on HIGH 8 to 10 minute or until vegetables are tender; drain. Set aside.
  • Microwave cream cheese and milk in 2-cup microwaveable measuring cup or medium bowl 1 minute or until cream cheese is melted and mixture is well blended when stirred. Add sour cream; mix well. Pour over vegetables; sprinkle with Cheddar cheese.
  • Microwave 2 minute or until cheese is melted.
  • Mix cracker crumbs and Parmesan cheese. Sprinkle over vegetables.

1 (15 ounce) jar Alfredo sauce
½ cup panko bread crumbs

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine cauliflower and Alfredo sauce in a 9-inch square baking dish; top with bread crumbs.
  • Bake in the preheated oven until bubbly and cauliflower is tender, 30 to 35 minutes.

1 large cauliflower, steamed till crisp o r tender and broken up into small florets
white pepper
1/2 cup grated parmesan cheese
1 cup shredded cheddar cheese
1 cup shredded swiss cheese
1 1/2 cups half-and-half, beaten with
2 whole eggs
1/2 cup dry breadcrumbs, lightly fried in
2 tablespoons butter

Steps:

  • Lightly butter a 13 X 9" pyrex baking dish and put in cauliflower.
  • Season lightly with white pepper and sprinkle all the cheeses over.
  • Beat the eggs into the half and half (you can also use 1 1/2 cups milk, 2 eggs and 1 tblsp cornflour as a sub). Pour over cauliflower-cheese mixture and top with buttered breadcrumbs.
  • Bake in a 375F oven until lightly golden-brown.
  • Allow to cool slightly before serving.
  • This is also super good at room temperature or cold.
  • (Try it for breakfast!) Reheats well, so can be made in advance- just pour a couple of tablespoonfuls of cream (or milk) over for moisture.

2 heads cauliflower, broken into florets
1 tablespoon butter
1 onion, chopped
2 garlic cloves, crushed
1 cup sour cream
1 cup shredded Cheddar cheese
½ (10.5 ounce) can cream of chicken soup, or more to taste
salt and ground black pepper to taste
1 cup crushed buttery round crackers (such as Ritz®)

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower florets, cover, and steam until tender, about 15 minutes. Drain; transfer cauliflower to a 9x13-inch baking dish.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a large skillet over medium heat. Add onion and garlic; cook and stir until softened, 5 to 7 minutes.
  • Combine sour cream, Cheddar cheese, cream of chicken soup, salt, and black pepper in a large bowl; fold in onion mixture. Pour sour cream mixture over cauliflower in baking dish. Scatter cracker crumbs on top.
  • Bake in the preheated oven until bubbly and cheese is melted, about 20 minutes.

3 slices white sandwich bread, torn into large pieces
2 tablespoons grated Parmesan cheese
3 tablespoons butter
1/3 cup all-purpose flour
2 cups milk
1 head cauliflower (about 2 pounds), cored and cut into small florets
Coarse salt and ground pepper
4 ounces Gruyere cheese, grated (1 cup)

Steps:

  • Preheat oven to 350 degrees. In a food processor, combine bread and Parmesan. Pulse until coarse crumbs form, about 3 to 4 times; set aside.
  • In a large saucepan with a lid, melt butter over medium heat. Add flour; cook, whisking constantly for 1 minute. Whisk in milk.
  • Add cauliflower, and season with salt and pepper. Bring to a boil, and reduce to a simmer. Cover, and cook until starting to soften, about 5 minutes. Remove from heat; gradually stir in Gruyere.
  • Pour mixture into a 2-quart baking dish, and sprinkle with breadcrumb mixture. Cover with aluminum foil; bake until cauliflower is easily pierced with a knife, about 20 minutes. Remove foil, and bake until breadcrumbs are golden brown, about 20 minutes more. Serve.

1 cup heavy cream
1 tablespoon all-purpose flour
1 cup grated Parmesan
Coarse salt and ground pepper
1/2 cup fresh breadcrumbs
1 tablespoon unsalted butter, cut into small pieces

Steps:

  • Preheat oven to 400 degrees. In a large bowl, combine cauliflower, heavy cream, flour, and 3/4 cup grated Parmesan. Season with salt and pepper and toss to combine. Transfer mixture to a 2-quart baking dish, cover tightly with foil, and bake 30 minutes. In a small bowl, combine 1/4 cup grated Parmesan and breadcrumbs. Sprinkle over cauliflower. Dot with butter and bake, uncovered, until topping is golden brown and cauliflower is tender when pierced with a knife, 10 to 15 minutes. Let cool 5 minutes before serving.

Kosher salt
4 tablespoons (1/2 stick) unsalted butter, divided
3 tablespoons all-purpose flour
2 cups hot milk
1/2 teaspoon freshly ground black pepper
1/4 teaspoon grated nutmeg
3/4 cup freshly grated Gruyere, divided
1/2 cup freshly grated Parmesan
1/4 cup fresh bread crumbs

Steps:

  • Preheat the oven to 375 degrees F.
  • Cook the cauliflower florets in a large pot of boiling salted water for 5 to 6 minutes, until tender but still firm. Drain.
  • Meanwhile, melt 2 tablespoons of the butter in a medium saucepan over low heat. Add the flour, stirring constantly with a wooden spoon for 2 minutes. Pour the hot milk into the butter-flour mixture and stir until it comes to a boil. Boil, whisking constantly, for 1 minute, or until thickened. Off the heat, add 1 teaspoon of salt, the pepper, nutmeg, 1/2 cup of the Gruyere, and the Parmesan.
  • Pour 1/3 of the sauce on the bottom of an 8 by 11 by 2-inch baking dish. Place the drained cauliflower on top and then spread the rest of the sauce evenly on top. Combine the bread crumbs with the remaining 1/4 cup of Gruyere and sprinkle on top. Melt the remaining 2 tablespoons of butter and drizzle over the gratin. Sprinkle with salt and pepper. Bake for 25 to 30 minutes, until the top is browned. Serve hot or at room temperature.
