1 large clove garlic, crushed
½ teaspoon grated fresh ginger
1 (12 ounce) package Green Giant® Riced Cauliflower Medley
2 tablespoons soy sauce
1 egg, lightly beaten and scrambled

Steps:

  • Heat vegetable oil in a large nonstick skillet and cook garlic and ginger over medium heat 1 minute.
  • Add Green Giant Riced® Cauliflower Medley and cook 5 minutes, stirring frequently, or until vegetables are until tender-crisp.
  • Stir in soy sauce and cook 1 minute.
  • Stir in cooked egg and continue cooking 1 minute or until heated through.

2 tbsp Unsalted butter ((or ghee for dairy-free or whole 30; divided))
2 cloves Garlic ((minced))
1/2 large Onion ((finely diced))
1/2 medium Red bell pepper ((finely diced))
2 large Eggs
Sea salt ((to taste))
Black pepper ((to taste))
1 medium head Cauliflower ((or 4 cups riced cauliflower))
2 tbsp Coconut aminos
1 tsp Toasted sesame oil
3 medium Green onions ((chopped))

Steps:

  • Rice the cauliflower: Remove the cauliflower leaves and stems. (Cut off as much of the stems as you can.) Push the cauliflower florets into a running food processor with a grating attachment, to make cauliflower rice. Alternatively, rice the cauliflower using a box grater.
  • Saute the veggies: In a large saute pan over medium heat, heat a tablespoon of butter. Add the garlic, onions, and red peppers. Saute for about 8-10 minutes, until the onions are translucent and just starting to brown.
  • Cook the eggs: Meanwhile, whisk the eggs with 1/2 tsp (2 g) sea salt and a pinch of black pepper. When the onion is done enough, push the veggies to one side of the skillet. (If the pan is dry, you can melt in more butter.) Add the whisked eggs to the other side and cook for a few minutes, until barely scrambled.
  • Stir fry the cauliflower: Push everything to the side again and add the remaining tablespoon of butter to the pan. Once it melts, increase heat to medium-high, immediately add the cauliflower, and stir everything together to coat. Season with sea salt and black pepper. Stir fry for about 5 minutes, until the cauliflower is soft, but not mushy.
  • Finishing flavors: Remove from heat. Stir in the coconut aminos, sesame oil, and chopped green onions.

A super delicious easy cauliflower fried rice recipe from scratch - done in less than 30 minutes, even if you only have a grater and no food processor or cauliflower rice! This cauliflower rice recipe is a very tasty healthy dinner idea that is also a low-carb, vegetarian, gluten-free dairy-free recipe. To make it paleo - use coconut aminos!

1 small head cauliflower or 2-3 cups cauliflower rice
2 Tbsp tamari or soy sauce
2 Tbsp olive oil or other oil
1 carrot, chopped
2 eggs
3 garlic cloves, minced
2 scallions, thinly chopped
sesame oil (optional)

Steps:

  • Grate the cauliflower or put it in your food processor to make your rice.
  • Chop the onion and carrot, mince garlic.
  • In a large non-stick skillet, heat 1 tbsp olive oil and lightly scramble the two eggs.
  • Once they're almost done, add the garlic and saute until fragrant.
  • Mix in your cauliflower rice, combine well. Let cook for about 2 minutes.
  • Add the other tbsp of olive oil and the tamari or soy sauce.
  • Cook for 3-4 minutes, stirring well, so that all the cauliflower gets covered with the tamari sauce. I actually needed to add some salt to taste, but I was using low-sodium tamari sauce, so do taste your cauliflower at the end of the 3 minutes.
  • Lastly, stir in the carrots and the scallions and cook for 2-3 more minutes. Add a tsp of toasted sesame oil (optional).
  • Serve hot and enjoy!

  • Cut off the bottom. While you could try to dig into the cauliflower and break it up without removing the stem, I find that to be challenging. I like to remove the bottom of the cauliflower first, making it easier to break up the cauliflower into florets.
