Steps:
- In a large pot, place the can of sweetened condensed milk with the label taken off, in the pot and cover with water. Cook on high until water comes to a boil, then turn on medium/high for 4 hours, only adding water to keep the can covered.
- Carefully open can and pour into pie shell. Cool pie in refrigerator. When completely cooled, top with frozen whipped topping. Serve.

EASY CARAMEL PIE
This recipe uses three simple ingredients,. It is perfect for entertaining, because it cooks on the back of the stove while everything else is being prepared for dinner. It can be made the day before. The cook time does not include the time it takes to boil the sweetened condensed milk. This pie recipe was shared with me by a friendly grocery check-out clerk that I used to swap recipes with each week. She liked my soups and I liked her desserts.

Steps:
- Remove paper wrapper from cans. Wash the cans and place them in a large pot. Cover with water and bring to a boil. Lower heat until there is a slow boil. Let cans boil until the ends begin to bulge out. Keep adding water to cover the cans as needed. This may take 2 to 3 hours. Remove pot from heat. Let the pot cool for a few minutes. Use tongs to remove the cans. DO NOT OPEN THE CANS. YOU WILL GET A NASTY BURN. After the cans have completely cooled, carefully open them. The contents are under pressure, so expect it to ooze out as you open the cans. Pour the brown contents into the pie shells. Refrigerate until ready to serve. When time to serve, top with whipped frosting. Be sure to lick the spoon -- life is short!

- Add apples, caramel topping and lemon juice; mix well.
- Pour mixture into pie crust.

- Pulse together the chocolate sandwich cookies and the butter in a food processor until a fine crumble forms. Pour the crumbs into a 9 inch round pie dish. Press the cookie crumbs into the dish and up the sides to form the crust.
- In a large bowl whisk together the Dulce de Leche with 16 ounces of Cool Whip until fully incorporated. Pour mixture into the pie crust, and spread into an even layer.
- Spread 8 ounces Cool whip over the caramel layer. Top with candy bar pieces and Dulce de Leche drizzle if desired (or more crushed up chocolate cookies!).

- Preheat oven to 350°F. Spread pecans in a single layer on a baking sheet. Toast for 6-8 minutes then cool. (This can be done while pie crust is baking, if desired)
- To make filling: In a heavy bottomed saucepan, melt together butter and brown sugar over medium heat. Add 2 cups half and half. Cook over medium for 5 minutes, or until mixture begins to bubble along the edge.
- Meanwhile, whisk together remaining 1/2 cup cold half and half, cornstarch and eggs. Add 1/4 cup hot liquid from saucepan to temper. Stream tempered eggs into saucepan, whisking constantly.
- Cook over medium heat until mixture begins to thicken, whisking constantly. Lower heat to simmer and allow to bubble while whisking for 1-2 minutes longer.
