I have had this recipe for over 30 years. Cream may be substituted for the milk for added richness.

2 tablespoons butter
3 tablespoons milk
½ cup packed brown sugar
1 cup confectioners' sugar
½ teaspoon vanilla extract

Steps:

  • In a saucepan over medium heat, melt the butter, and mix in 3 tablespoons milk and brown sugar. Boil vigorously for 1 minute.
  • Remove from heat, and beat in 1/2 cup confectioners' sugar. Cool slightly, and beat in the vanilla and remaining 1/2 cup confectioners' sugar. Add more milk if the mixture is too thick.

Great for drizzling on an apple cake, spice cake, chocolate cake or you name it! Any recipe calling for a caramel frosting, this is it!

1 cup light brown sugar, packed
5 tablespoons evaporated milk
1 tablespoon butter
1/8 teaspoon salt
1 teaspoon vanilla
2 2/3 cups powdered sugar

Steps:

  • In saucepan, mix brown sugar, milk, butter and salt. Heat to boiling, stirring constantly. Once boiling, remove from heat. Let cool down.
  • Stir in vanilla flavoring. Add powdered sugar by adding 3 tablespoons at a time. Beat until smooth and creamy.

This frosting recipe was the one my Grandma used on top of her oatmeal cake, spice cake, and banana nut cake. I also like it on a yellow or white cake. You do have to use at once because this does stiffen as it cools.

1 cup butter
2 cups packed brown sugar
½ cup milk
6 cups sifted confectioners' sugar
1 pinch salt

Steps:

  • Melt butter in a 2-quart saucepan over medium heat; stir in brown sugar. Bring to a boil, stirring constantly. Cook until thickened, about 1 minute. Let cool for 5 minutes.
  • Whisk milk into the saucepan until mixture is smooth.
  • Beat 3 cups confectioners' sugar and salt into the butter mixture with an electric mixer on low speed. Add remaining confectioners' sugar 1 cup at a time, beating until smooth.

2 cups packed dark brown sugar
1/2 cup butter, unsalted
1/2 teaspoon salt
1/2 cup heavy cream
1 teaspoon vanilla
1 1/2 cups powdered sugar, sifted
4 tablespoons butter, cut in pieces

Steps:

  • Place in saucepan over med heat; let it melt. Cook until a ring of little bubbles appears around the edge of melted sugar/butter mixture.
  • Whisk in ½ cup heavy cream. Cook until bubbles reappear. Remove from heat.
  • Add 1 tsp vanilla.
  • Pour into mixer bowl. Add 1 ½ cups sifted powdered sugar. Beat at medium speed until combined; add ½ stick butter cut in pieces, beat until smooth and color is lighter. Frosting will still be a little warm.
  • Place 3/4 cup frosting on top of bottom layer. Add 2nd layer and frost with remaining icing. Do this quickly so it doesn't set up before you finish spreading.

2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1 1/2 cups sugar
4 eggs
2 teaspoons vanilla extract
1/2 cup buttermilk
16 tablespoons unsalted butter, slightly soft, cut in 1 TB pieces

Steps:

  • Combine dry ingredients and sugar in mixer bowl; set aside.
  • Whisk together the eggs, vanilla, and buttermilk in large measuring cup; set aside.
  • Make batter using Reverse creaming method:.
  • Start mixer on low speed. Add butter 1 TB at a time mixing constantly, until butter is incorporated into flour mixture. Should not be any large pieces of butter left. Mixture should appear yellowish and dry.
  • Add half of the egg/buttermilk mixture. Beat on low to medium speed until smooth but thick.
  • Add remaining egg mixture, beat about 15 seconds until smooth.
  • Divide batter between pans & spread evenly.
  • Bake at 350 on middle rack, until toothpick in center comes out clean, about 20 minutes.
  • Cool in pans for 10 minutes, remove and cool completely on racks.

2 cups plain flour
2 teaspoons baking powder
1/2 teaspoon bicarbonate of soda
1 pinch salt
1/2 cup unsalted butter
3/4 cup caster sugar
1/2 cup light brown sugar
2 eggs
2 teaspoons vanilla extract
1/2 cup milk, I used skim
1 1/2 cups fresh raspberries
1 (14 ounce) can of carnation caramels (or any other thick caramel)
1/2 cup unsalted butter, at room temp
2 cups icing sugar, sifted
1 pinch salt
1/2 cup fresh raspberry, plus extra to garnish if desired

Steps:

  • Preheat the oven to 350F and grease and line two 8 inch round cake tins.
  • Measure out the flour, baking powder and bicarb into a medium sized bowl and mix together briefly. Set to one side.
  • Place the raspberries into a medium sized bowl and then take a spoonful of flour out of the measured ingredients and toss the raspberries in it. (This will stop the raspberries sinking).
  • Place the butter and sugars into a large bowl or the bowl of a stand mixer and mix on med-high for 2-3 minutes until light and fluffy.
  • Add in the eggs and vanilla, scraping the sides down as necessary and mix until well incorporated, about 1 min on med-high speed.
  • Add in the milk and flour mix and mix on low-med until light and smooth.
  • Add in the raspberries and fold in gently by hand.
  • Divide the batter between the two cake tins and smooth over with the back of a wooden spoon/spatula.
  • Place in the oven for 30-35 mins until golden brown, springy to the touch and an inserted skewer into the centre comes out clean.
  • Leave to cool in the tins for at least 30 minutes, before transferring to a wire rack to cool completely.
  • Once cool, make the frosting: Place the caramel, butter, icing sugar and salt into a large bowl or the bowl of your stand mixer and beat on med-high until light and fluffy, 2-3 minutes (This frosting makes enough to frost the top and sides, if you just want to do the top and middle like me, halve the recipe).
  • Take one cake layer and place on a cake stand/plate/cake board. Spread a good layer of frosting onto the cake and, smooth with a spatula. Sprinkle the 1/2 cup of raspberries over the top. (reserving 3 for garnish if you want).
  • Turn the second cake layer bottom side up and place on top of the frosted cake layer. Spread another layer of frosting over the top (and sides if you want) and garnish with a few raspberries, if desired.
  • Cake will keep in the fridge, covered for 2 days.
