1 can fruit cocktail (drained)
1 can mandarin oranges (drained)
1 can pineapple chunks (drained)
1 banana (sliced)
8 oz Cool Whip
3 oz. vanilla pudding mix
2 cups miniature marshmallows

Steps:

  • Empty the entire container of Cool Whip into a large bowl.
  • Mix the vanilla pudding mix into the Cool Whip until smooth.
  • Mix all of the drained fruit together in a separate bowl.
  • Add the marshmallows to the fruit and mix.
  • Fold the fruit into the Cool Whip and pudding mixture.
  • Chill then serve.

1 (20 oz) can pineapple chunks, drained
1 (11 oz) can mandarin oranges, drained
1 cup seedless red grapes (halved)
1 cup miniature marshmallows
1/2 cup maraschino cherries, drained and stems removed
2 bananas, sliced (use firm bananas, no overripe ones)

Steps:

  • Combine all ingredients in a bowl and mix well.
  • Transfer to an airtight container, cover, and refrigerate at least 2 hours or overnight.

Fruit cocktail salad takes less than 5 minutes to prep and only has 3 ingredients!

2 15 oz cans of canned fruit cocktail packed in water
1 8 oz container of Cool Whip lite
1 cup of pastel mini marshmallows

Steps:

  • Drain the juice out of the canned fruit cocktail. Reserve 1/4 of the fruit cocktail for the top.
  • Add fruit cocktail, mini marshmallows, and cool whip to a medium to large sized bowl.
  • Stir or fold the cool whip together with the fruit and marshmallows until well combined.
  • Serve the salad in a clear glass bowl and flatten the top out with a spatula. Add some extra marshmallows and the reserved fruit cocktail to the top of the salad. This lets people know what is in the salad.
  • Makes a total of 10 servings and I used a ½ cup for each serving.

My dear friend Linda in Chicago, Ill. submitted this recipe for The Messiah Lutheran Church, Ladies Guild Cookbook. Using a can of fruit salad, or any canned fruit of you choice. Peaches, apples, berries etc. It is a very fast and easy recipe, and sure to please all.

1 c sugar
1 c milk
1/3 tsp cinnamon
1/3 tsp allspice or nutmeg
1 stick butter
1 can(s) canned fruit salad --- or any canned fruit

Steps:

  • 1. Mix flour,sugar, milk, cinnamon.and spice together. Melt butter in a 9x12 baking dish. Pour in batter , then drop in fruit around the batter. Do not touch or mix anymore. Bake in 350F oven for 40 minutes.

Quick and easy fruit salad with pudding and canned fruit.

1 4.6-oz package cook & serve vanilla pudding
1 3-oz package cook & serve tapioca pudding
1 large can mandarin oranges - keep the juice
1 large can pineapple tidbits - keep the juice
1/2 cup lemon juice
Other fruit to add in (such as: chopped apples, sliced bananas, sliced strawberries and/or grapes)

Steps:

  • Using a mesh strainer, drain the cans of fruit into a large measuring cup. Add water to the juice if needed in order to make it equal 2-1/2 cups. Add in 1/2 cup lemon juice, so juice should equal 3 cups.
  • Pour both puddings into a medium size saucepan. Add in juice and stir. Heat on medium, stirring until pudding is thickened. Take off heat and let cool.
  • When cool, add in mandarin oranges, pineapple and any other fruit you desire. Serve it up and enjoy!

1 ½ cups purple grapes
1 lime
2 tablespoons instant vanilla pudding mix

Steps:

  • Zest the lime.
  • Drain one of the cans of peaches into a large bowl. Stir 2 tablespoons pudding mix into the juice.
  • Drain remaining can of peaches, mandarin oranges and pineapple chunks. (Juice is not needed for this recipe).
  • Add all fruit and lime zest to the pudding mixture. Gently stir to combine.
  • Chill at least 30 minutes before serving.

3.4 oz instant lemon pudding mix

  • Drain the pineapple and mandarin oranges, reserving the juice.
  • Wash the fresh fruits and pat dry.
  • Slice the apples and bananas.
  • Combine the pineapple chunks, mandarin oranges, apples, bananas, strawberries, and grapes in a large bowl and stir.
  • Mix the lemon pudding mix with the reserved juice and stir until the pudding mix is dissolved. Pour over the fruit mixture and stir to coat the fruits.

1 cup fresh blueberries
1 cup peeled and diced kiwi fruit
1 cup mandarin oranges (drained, or fresh mandarin/navel orange segments)
1 cup diced apples or pears
1 cup halved grapes
1/2 cup pomegranate seeds
1 tablespoon honey
2 tablespoons orange juice (see note for lemon variation)
Light pinch of cinnamon

Steps:

  • Place the fruit in a serving bowl. (If using pears, because they sometimes darken faster than apples, I like to toss them with a light squeeze of lemon juice before adding to the salad.)
  • Whisk together the dressing ingredients and pour over the fruit and toss to combine.
  • The fruit salad can be made a couple hours ahead of time - keep in mind that depending on what type of fruit is used, the colors may seep into each other as the salad sits.
