BEST EVER BRUSCHETTA
I went through a major bruschetta phase and tried many many recipes until I found the perfect one. This was originally Guy Fieri's but is slightly adapted to my taste after making it about a billion times. Cookingt time is marinating time.

Steps:
- In a large bowl, mix the onions, tomatoes, garlic and basil, taking care not to mash or break up the tomatoes too much. Add the balsamic vinegar and extra virgin olive oil. Add salt and pepper to taste. Mix again. Cover and chill for at least an hour. This will allow the flavours to soak and blend together.
- Slice the baguette loaf diagonally into 12 thick slices and lightly toast them until they are light brown on both sides. Serve the mixture on the warm slices of bread. If you prefer the mixture at room temperature, remove from the fridge half an hour before serving.

Steps:
- For tomato mixture: Heat olive oil in a small skillet or saucepan over medium-low heat. Add garlic and saute until just starting to turn golden (don't brown it), about 1 minute.
- Pour into a large mixing bowl. Let cool while you chop the tomatoes and basil.
- Pour tomatoes into bowl with cooled oil mixture. Add parmesan, basil, balsamic vinegar, salt and pepper. Toss mixture well. Serve right away over toasted bread (spoon some of the juices along with it). Garnish with more parmesan if desired.
- To toast bread*: position oven rack a few inches below broil and preheat broiler. Align bread slices on an 18 by 13-inch baking sheet. Broil first side until golden brown, about 1 minute (don't walk away and keep and eye on them they'll brown quickly), then flip slices to opposite side and broil opposite side until golden brown.

- Combine ingredients for the bruschetta in a medium size and set it aside while you make the pesto and the crostini. Bruschetta can sit out for up to 1 hour without needed refrigeration.
- Arrange the bread side by side on a large, rimmed baking sheet. Brush each side with olive oil and sprinkle lightly with salt.
- Bake for 7-10 minutes, flipping it over halfway through. You want the crostini to be crispy but not so hard you can't easily bite into it.

- Heat the oil to medium-high, and then add in the garlic and herbs. Allow the raw garlic smell to cook off, and then take off the heat and leave to cool a little.
- Mix the soy milk and water together, add half the oil when it's cooled down a bit but still warm. (not if it's sizzling hot! DANGEROUS!). Reserve the rest of the oil, you'll need it later on.

Work the dough, kneading and folding it, for around roughly 3-4 minutes until it's smooth and springs back when you poke a hole in it with your finger.

- Cut the tomatoes into halves and remove most of the seeds. Finely dice the tomatoes and add them to a mixing bowl.
- Also, finely chop the basil and the garlic and add both to the tomatoes along with the balsamic vinegar, sea salt, ground pepper, and about 1/2 tablespoon of olive oil.
- Stir with a spoon and leave to marinate for at least 15 minutes (up to 60 minutes is fine). After marinating, taste the tomato mixture and adjust any of the flavors as needed; more garlic, balsamic, salt, pepper, etc. Then drain off the excess marinade (you can use it for your next salad).

- Finely dice the tomatoes and combine them with the oil, salt, pepper, and ribboned (or finely chopped) basil. For a super easy bruschetta - use a mandoline or sharp knife to evenly slice the tomatoes instead of removing the seeds and dicing them.
- Slice the bread of your choice to around ½-inch in thickness. Then lightly brush each slice with olive oil.
- Using a garlic clove, rub it over the toasted bread slices (both sides) until well coated. While the bread is warm, the garlic practically melts into it. Feel free to adjust the amount you use to personal preference (I use 1 clove per toast almost).Alternatively, you can skip this step and add minced garlic to the tomato bruschetta mixture in step 1 (allowing it to marinate).
- If you have tomato slices, arrange them over the bread and drizzle with a bit of olive oil, salt, pepper, and some freshly chopped basil. For the diced tomato, spoon over some of the topping on each bread slice and then, optionally, top with a little additional olive oil or a drizzle of balsamic vinegar or glaze. Serve immediately and enjoy!
