1/2 teaspoon shredded orange peel
1/2 cup buttermilk baking mix
2 teaspoons sugar
2 tablespoons orange juice
2 teaspoons butter or 2 teaspoons margarine, softened

Steps:

  • Heat oven to 400 degrees.
  • Mix pie filling and orange peel in ungreased 2-1/2 cup casserole.
  • Heat in oven 15 minutes.
  • Stir baking mix, sugar, orange juice and butter with fork to soft dough.
  • Drop dough by spoonfuls (2 or 3) onto hot blueberry mixture.
  • Bake until topping is light brown, 15-20 minutes.
  • Serve warm, with light cream or ice cream if you like.

I've tinkered and tinkered, and this is the very best blueberry cobbler recipe I've found. Cakey/biscuit topping with a slight crunch on top and ooey gooey delicious blueberries hidden on the bottom. It can also work with other fruit fillings. Works best with delicious fresh blueberries and is the perfect summer treat.... An amalgamation of mine and my grandmother's cobbler recipe.... I think it is the best! Serve plain or with whipped cream. Enjoy!

2 ½ cups fresh or frozen blueberries
1 teaspoon vanilla extract
½ lemon, juiced
1 cup white sugar, or to taste
½ teaspoon all-purpose flour
1 tablespoon butter, melted
1 ¾ cups all-purpose flour
4 teaspoons baking powder
6 tablespoons white sugar
5 tablespoons butter
1 cup milk
2 teaspoons sugar
1 pinch ground cinnamon

Steps:

  • Lightly grease an 8 inch square baking dish. Place the blueberries into the baking dish, and mix with vanilla and lemon juice. Sprinkle with 1 cup of sugar and 1/2 teaspoon of flour, then stir in the tablespoon of melted butter. Set aside.
  • In a medium bowl, stir together 1 3/4 cups of flour, baking powder, and 6 tablespoons sugar. Rub in the 5 tablespoons butter using your fingers, or cut in with a pastry blender until it is in small pieces. Make a well in the center, and quickly stir in the milk. Mix just until moistened. You should have a very thick batter, or very wet dough. You may need to add a splash more milk. Cover, and let batter rest for 10 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Spoon the batter over the blueberries, leaving only a few small holes for the berries to peek through. Mix together the cinnamon and 2 teaspoons sugar; sprinkle over the top.
  • Bake for 20 to 25 minutes in the preheated oven, or until the top is golden brown. A knife inserted into the topping should come out clean - of course there will be blueberry syrup on the knife. Let cool until just warm before serving. This can store in the refrigerator for 2 days.

4 cups blueberries ((fresh or frozen))
1/2 cup granulated sugar
1 teaspoon lemon zest
6 Tablespoons butter
1 cup all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
ground cinnamon

Steps:

  • Preheat oven to 350 degrees F.
  • Slice butter into pieces and add to a 9x13 inch baking dish. Place the pan in the oven while it preheats, to allow the butter to melt. Once melted, remove the pan from the oven.
  • Add blueberries, sugar and zest to a bowl and stir to combine.
  • In a separate bowl mix together the batter ingredients: flour, sugar, baking powder, and salt. Stir in the milk, just until combined.
  • Pour blueberries over melted butter in pan. Drizzle batter over the top. Sprinkle with a little bit of cinnamon.
  • Bake at 350 degrees for about 35-40 minutes, or until lightly golden on top.

I just bought a cookbook "Small Batch Baking" and this was the second thing I tried. My ramekins are 7 oz each. I used frozen raspberries because that's what I had, even though the recipe calls for mixed berries I think any frozen fruit could be subbed. If you think your berries are tart adjust sugar to your tastes. This is also super easy to double or triple. I'm single and just don't need a bunch of leftover dessert sitting around trying to get my attention!:)

1 cup mixed berry
1 -1 1/2 tablespoon sugar
2 teaspoons all-purpose flour
1/2 teaspoon fresh lemon juice
2 tablespoons all-purpose flour
2 tablespoons brown sugar, packed
1 tablespoon unsalted butter, cold, cut into pieces
2 tablespoons rolled oats
3 tablespoons pecans, toasted chopped

Steps:

  • Preheat oven to 375 degrees. Two 7 oz up to 1 c capacity ramekins.
  • For the filling, toss all ingredients together and split between the two ramekins.
  • For the topping mix flour and brown sugar in a bowl. Add butter, cut into small pieces, and toss to coat. Mix with fingers until crumbly. Mix in the oats and the nuts. Divide evenly over the berries. Gently press to make sure none of the topping slides off.
  • Place both ramekins on a baking sheet. Place in the preheated oven and bake about 20 minutes or until top is golden and crisp.

1/8 of a cup of flour (all-purpose)
1/4 of a cup white sugar
1 pint of fresh or frozen blueberries
2/3 of a cup of flour (all-purpose)
1/4 of a cup of brown sugar
1/4 of a tsp of powdered cinnamon
1/4 of a cup of unsalted butter

Steps:

  • Preheat your oven to 450°F.
  • For the blueberry cobbler filling, take a large mixing bowl, and add your freshly washed blueberries. If you're using frozen blueberries, you can soak them in water for 30 to 45 min beforehand to defrost them - this will help to ensure they cook evenly. (Whether you're using fresh or frozen, make sure to dry the berries on a paper towel or clean cotton towel before preparing them, as this will prevent the flour from sticking in lumps.)
  • Sprinkle the sugar and flour evenly onto the berries, and toss them in the bowl until they are evenly coated throughout.
  • Divide the mixture between each of your ramekins, leaving at least a half-inch gap between the mixture and the top of the ramekin.
  • For the blueberry cobbler topping, combine the remaining ingredients in another mixing bowl, and using your fingertips, mix thoroughly until you achieve a crumbly texture. (To avoid melting the butter, which prevents the crumbly parts from forming correctly, try running your wrists under cold water for a minute or two, cool down your hands).
  • When you have achieved the desired consistency, top each blueberry cobbler with a layer of topping about half an inch thick.
  • Bake the ramekins in your heated oven 10 min, and then reduce the heat to 350°F and bake for another 15 min.
  • The top of each individual blueberry cobbler should be a golden brown color, with the fruit filling beginning to bubble up around the edges. Use gloves to carefully transfer each blueberry cobbler to a wire cooling rack (watch out as the boiling sugar in the filling will be extremely hot).
  • Cool to a comfortable eating temperature and serve your blueberry cobbler with vanilla ice-cream or simply pour some heavy whipping cream over the top.

2 c milk

2 c bisquick (or self-rising flour)
2 c fresh fruit or fruit pie filling
THIS IS A DOUBLE RECIPE. CUT ALL AMOUNTS IN HALF FOR REGULAR RECIPE FOR 8X8 PAN.

Steps:

  • 1. Melt margarine in microwave.
  • 2. Add milk, flour and sugar; use wisk to blend all ingredients well
  • 3. Spray 9x13 baking dish with baking spray.
  • 4. Put 2 cups of fruit or (pie filling, if desired) in bottom of dish.
  • 5. Pour milk mixture over fruit.
  • 6. Bake at 350 degrees for 45 minutes to an hour. (Less time for single recipe.)

1 c flour
1 tsp baking powder
20 oz can of any fruit ( blueberry was used in this one)

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Place stick of butter into a 1 1/2 quart baking dish and place in oven to melt butter. In a mixing bowl, combine sugar, flour, baking powder, milk and salt. Stir to mix well. Remove baking dish from oven and pour mixture over melted butter- do not stir. Pour can of fruit (juice and all) on top- once again, do not stir. Bake 45-60 minutes. Dough will be done when it is golden brown on top. Spoon hot into dessert bowls and top with ice cream or whipped cream, if desired.
