EASY BEEF & BROCCOLI STIR FRY

Easy Beef & Broccoli Stir Fry image

Please read blog post for more recipe details. If you like your broccoli soft, add about 1/4 cup of water to the broccoli while it cooks. It should be absorbed and evaporated off by the time the broccoli is soft. For the sauce, you can substitute more oyster sauce or hoisin sauce for the other one (use 1/4 cup of hoisin or oyster sauce instead of 2 Tablespoons for each one).

Provided by Diane

Categories     Main Course

Time 25m

Number Of Ingredients 14

1 pound beef sirloin (, top round, chuck steak, or flank steak, sliced thin for a tender bite)
1 pound broccoli florets (, cut into bite sized pieces)
3 Tablespoons vegetable oil (, divided)
1 small onion (, diced)
3 cloves garlic (, minced)
1 inch knob of fresh ginger (, minced)
2/3 cup water
1 Tablespoon corn starch
1/3 cup soy sauce
1/3 cup brown sugar
2 Tablespoons oyster sauce
2 Tablespoons hoisin sauce
2 teaspoons rice vinegar ( or distilled white vinegar)
1 teaspoon sesame seed oil

Steps:

  • Make the sauce: in medium bowl whisk together the water and cornstarch until smooth. Whisk in the remaining all sauce ingredients (soy sauce, brown sugar, oyster sauce, hoisin sauce, rice vinegar, and sesame seed oil). Set aside.
  • Heat a large sauce pan on medium high heat. Add 2 Tablespoons of oil, onion, garlic and ginger. Cook until soft and translucent. Add broccoli and cook until broccoli is tender, stirring constantly (if you like your broccoli soft, add about 1/4 cup of water to the broccoli while it cooks - it should be absorbed and evaporated off by the time the broccoli is soft). Remove all ingredients from pan.
  • Add remaining 1 Tablespoon of oil to pan. Heat pan to high heat. Add beef and sear until cooked through. Add broccoli back into the pan with the beef and stir.
  • Stir the sauce one more time to make sure the cornstarch is incorporated, then pour the sauce over the beef and broccoli. Heat the sauce to a strong simmer. Cook for about 1-2 minutes to thicken the sauce, stirring occasionally to make sure all beef and broccoli is coated with sauce.
  • Serve warm over rice or noodles.

SIMPLE BROCCOLI STIR-FRY

Simple Broccoli Stir-fry image

Stir-frying has stood the test of time. It's a wonderful way to cook small pieces of vegetables and meat quickly, without a lot of fat. Prepping your ingredients ahead of time and having them near your stovetop is the key to success. This recipe can be made in a large nonstick skillet, but consider purchasing a wok: Carbon steel and cast-iron take on high heat well, and the concave shape makes stir-frying foods easy and fast.

Provided by Food Network Kitchen

Time 10m

Yield 4 servings

Number Of Ingredients 11

1 large bunch broccoli (about1 1/2 pounds)
2 tablespoons soy sauce
1 tablespoon cornstarch
1 teaspoon sugar
2 tablespoons plus 1 teaspoon vegetable or peanut oil
1 scallion, chopped
2 to 3 cloves garlic, chopped (about 2 teaspoons)
1-inch piece ginger, peeled and chopped (about 2 teaspoons)
Pinch to 1/4 teaspoon crushed red pepper flakes
1/4 teaspoon toasted sesame oil
Cooked white or brown rice, for serving

Steps:

  • Trim the florets off the broccoli, and cut into 1- to 1 1/2-inch pieces. Peel the broccoli stalks with a vegetable peeler to remove the tough outer skin, and slice 1/4 inch thick on the diagonal. Set aside.
  • Whisk together 1/2 cup water, soy sauce, cornstarch and sugar in a small bowl. Set aside.
  • Heat a large wok over high heat. Add 2 tablespoons of the vegetable oil, and swirl to coat the wok. Once the oil begins to smoke, add the broccoli florets and stems. Cook, stirring constantly, until browned around the edges, about 2 minutes. Add 2 tablespoons of water to steam the broccoli, and cook, stirring constantly, until tender, about 2 minutes more. Push the broccoli to the edges of the pan, forming an empty well in the center. Add the remaining 1 teaspoon vegetable oil, then the scallions, garlic, ginger and pepper flakes, and stir until aromatic, 30 to 45 seconds. Add the soy mixture, and stir until the sauce has thickened and the broccoli is coated, about 30 seconds. Remove from the heat, add the sesame oil and stir to coat. Serve with rice.

Add the lard or peanut oil and the moment it begins to smoke, add in all the venison. Spread the venison out in the pan in one layer if possible, and let it sit for 30 seconds.
  • Now stir fry the venison for 2 minutes, moving the meat constantly. Add all the remaining ingredients except the sesame oil, plus about 3 tablespoons of water. Stir fry 1 to 2 minutes more, until the sauce has thickened a bit.
