- Cook ground beef in a large pot over medium-high heat until browned and crumbly, 5 to 7 minutes. Add bell pepper and onion. Cook and stir until the pepper and onion have softened, about 5 minutes. Drain and discard grease.
- Add corn, kidney beans, pinto beans, diced tomatoes, water, brown sugar, chili seasoning mix, and mustard to the pot. Cover and cook over medium heat for 20 minutes. Uncover, reduce heat to low, and cook until beans are tender, about 20 minutes more.

- In a skillet over medium heat, brown pork in oil; drain. Add the next 10 ingredients; bring to a boil. Reduce heat; cover and simmer for 1 hour or until pork is tender. , Combine cornstarch and water until smooth; gradually stir into pork mixture. - Mix Brown Gravy Dry Mix, Hidden Valley Dry Mix and Italian Dressing Dry Mix together.
- Place chuck roast in your crock pot. Pour ⅓ cup water over your roast. Sprinkle Mix all over the top of your roast. Cook on HIGH for 4 hours or until tender.
- Once Roast is slightly warm, shred it.
- Place meat back in the crock pot or in a pan. Add your green chile sauce and cook until your sauce is warm.
- Serve on warm tortillas. ENJOY!

- In a Dutch oven, heat oil over medium heat until hot, but not smoking. Pat the meat dry with paper towels and brown in batches, transferring the meat with a slotted spoon to a bowl as they are done.
- In the fat remaining in the pot, cook the onions until softened, about 5 minutes. Stir in the garlic and cook for 1 more minute.
- Return meat to the pot with any juices in the bowl and add the tomatoes with juice, chiles, beer, beef broth, oregano, cumin, and Worcestershire sauce. Season with salt and pepper to taste.

- Heat the oil in a large pan - a casserole is ideal. Fry the onions for 8 mins, then add the garlic, spices and oregano and cook for 1 min. Crumble over the mince and sizzle for 5 mins, stirring, until browned. Stir in the sugar and leave for a minute, then splash in the vinegar and pour in the tomatoes.
- Simmer for 5 mins then tip in the beans and the water from the can. Season, stir and simmer everything for 20 mins until the beef is in a thick gravy. The sauce can be prepared up to 2 days ahead, chilled and reheated with a splash of water or frozen for 6 months.
- To make the burritos, heat the tortillas following pack instructions. Pile some rice and beef sauce along each tortilla and scatter over your choice of topping. Fold over the ends and roll up to seal. Secure by wrapping with foil if you want. Eat immediately.

GREEN CHILE BURROS
Not sure where I got this recipe - first time I had Burros was in a little cafe in Wyoming. Not a burrito, not an enchilada - something in between but oh so good ! The ones we had were fried, I place mine in a warm oven until tortillas are toasted, Watching to make sure they do not burn. You can keep them warm in the oven until ready to serve. There are three ways to serve these, like a toasted sandwich,or topped with the sauce or along with lettuce, avocado,cheddar cheese and salsa. I like all three.

- Combine all ingredients except tortillas in a saucepan and simmer until thickened. I slow cook mine for 60 minutes, shredding the meat as the sauce thickens. You can combine 1/4 cup flour with some of the liquid from the saucepan and add gradually until thickened if you want to speed up the process.
- Strain sauce out of the meat mixture and reserve.
- Divide some of the meat mixture on the 8 flour tortillas and fold two ends to the middle, same on the other sides.
- Keep burros warm in oven, 275 degrees, until ready to serve. Serve lightly toasted but be careful not to burn.
- Place two burros on each plate. You can at this point eat them sandwich style or you can, if you desire, pour the reserved sauce over the burros.
- Serve this way or along with shredded lettuce, avocado,topped with salsa and cheddar cheese if you desire.

- Trim fat from roasts; cut meat into large chunks. Place in a 5- to 6-qt. slow cooker. Top with the chiles, onion, jalapenos, garlic, chili powder, cumin and, if desired, seasoning blend. - Place roast on a large piece of foil for easy clean up.
- Combine salt, garlic powder, black pepper, onion powder, and chili powder.
- Press the seasonings into all sides of the roast.
- Select saute or brown on the pressure cooker and add oil. When oil is hot and rippling add the meat and brown 3-4 sides. Turn the pressure cooker off.
- Remove beef from the pot and set on a plate.
- Pour beef broth into the pot and scrape up the browned bits from the bottom. Return beef to the pot and any juices from the plate.
- Pour enchilada sauce, green chilies, and tomato sauce over the beef, do not stir.
- Secure the lid and turn pressure release knob to a sealed position. Cook at high pressure for 90 minutes.
- When cooking is complete, use a natural release.
- Move beef to a cutting board to rest.
- Optional: Pour drippings from the pot into a fat separator then pour it back into the pot, discarding the fat. If you don't have a fat separator, you can skim the top of the liquid with a spoon to remove some of the fat, or just skip this step.
- Shred the beef into bite size pieces, add it back to the liquids in the pot to soak up the flavor and stay moist.
- Set up a burrito station with meat, fillings, and toppings and let everyone fill and top however they'd like.
- To make a smothered burrito, top rolled burrito with desired sauce and shredded cheese, place under the oven broiler to melt and brown the cheese.

- Roast the Anaheim, poblano, and jalapeños chiles under the broiler until blackened, about 5 minutes per side. Place the chiles in a paper sack or plastic food-storage bag, close it tight and let the chiles steam for 20 minutes. When done, take the chiles out of the bag and gently rub off the skin of each chile. Remove the stems and seeds, and then dice.
- Meanwhile, sprinkle the beef with the salt and pepper. Heat the bacon grease or oil on medium-low in a large heavy pot, such as a Dutch oven, and then working in batches brown the beef on all sides. This should take about 5-7 minutes per batch. If using a slow cooker, after the beef has browned, remove it from the pot and place in the slow cooker. If using the Dutch oven, place the browned beef into a large mixing bowl.
- Once the beef has been browned, leaving the heat on medium-low, add the onions to the pot and cook until translucent, about 5 minutes. Add the garlic and cook for another 30 seconds.
- If using the large pot to cook the beef green chili, pour into the pot the chicken broth, and then scrap the bottom of the pot to incorporate all the cooked bits into the broth. Add the chopped chiles, the cooked beef, the tomatillos, half of the chopped cilantro, cumin, oregano, and allspice to the pot.
