Mile-High Shredded Beef for a Crowd image

This tender beef has become a tasty tradition when I cook for our harvest crews and for neighboring ranchers who come to help us sort our cattle. Those hungry folks have been a good testing ground for recipes. They let me know if a new one I try is a keeper.-Betty Sitzman, Wray, Colorado

Number Of Ingredients 16

1 boneless beef chuck roast (3 pounds)
1 can (14-1/2 ounces) beef broth
1 medium onion, chopped
1 celery rib, chopped
3/4 cup ketchup
1/4 cup packed brown sugar
2 tablespoons white vinegar
1 teaspoon salt
1 teaspoon ground mustard
1 teaspoon Worcestershire sauce
1 garlic clove, minced
1 bay leaf
1/4 teaspoon garlic powder
1/4 teaspoon paprika
3 drops hot pepper sauce
12 to 15 hoagie buns, split

Steps:

  • Place roast in a Dutch oven; add the broth, onion and celery. Bring to a boil. Reduce heat; cover and simmer for 2-1/2 to 3 hours or until the meat is tender. , Remove roast and cool slightly; shred meat with two forks. Strain vegetables and set aside. Skim fat from cooking liquid and reserve 1-1/2 cups. Return the meat, vegetables and reserved cooking liquid to the pan. , Stir in the ketchup, brown sugar, vinegar, salt, mustard, Worcestershire sauce, garlic, bay leaf, garlic powder, paprika and hot pepper sauce. Bring to a boil. Reduce heat; cover and simmer for 30 minutes. Discard bay leaf. Serve beef on buns.

Are you getting the family together for a big weekend? This big-batch recipe for barbecue beef sandwiches is delicious and can serve up to 50 people (you can scale it down for smaller groups too, of course!)

12 pounds beef briskets, trimmed
6 cups barbecue sauce
2 cups water
50 hamburger buns

Steps:

  • Place briskets in a large roasting pan. Combine barbecue sauce and water; pour over meat. Cover tightly and bake at 325 degrees F for 4 to 4 1/2 hours or until fork-tender. Remove meat from juices; cool. Skim fat from juices. Thinly slice meat; return to pan and heat in juices. Serve on buns.

3 lbs beef chuck, roast
2 medium onions, sliced and separated into rings
12 ounces chili sauce
8 -10 crusty rolls, split
2 tablespoons chili powder
2 tablespoons brown sugar, packed
2 tablespoons hot pepper sauce
3 garlic cloves, minced
sliced lettuce
slivered jicama
chopped onion
chopped fresh cilantro

Steps:

  • Heat oven to 325. Place 28x18" piece heavy duty aluminum foil in roasting pan. Combine seasoning ingredients; spread on beef steaks. Place roast in center of foil; top with onions and chili sauce. Bring shorter ends of foil together above steaks; fold down to seal. Fold in sides of foil to seal.
  • Bake in 325 oven 1-3/4 hours or until roast is fork tender. Carefully open foil. Remove steaks; keep warm.
  • Toppings are optional.

EASY BBQ PULLED PORK 'FOR A CROWD'



Easy BBQ Pulled Pork 'for a crowd' image

Number Of Ingredients 7

10 lb Boston Butt Pork Roast
1 cup vinegar
1 Tbsp salt
1 cup of your favorite bbq sauce (for this recipe with love kraft original)
2 cups ketchup
2 Tbsp vinegar
4 cloves garlic, minced

Steps:

  • Place roast in a large stock pot.
  • Add vinegar and salt to the pot then cover the roast completely with water.
  • Bring to a boil over medium high heat and boil for 1 hour.
  • Reserve some of the cooking liquid.
  • Carefully remove roast to a roasting pan or dutch oven with a lid.
  • Add about 1 inch of cooking liquid to the bottom of the pan.
  • Cover and cook for about 3 1/2 hours at 350 degrees.
  • Carefully ladle out any excess liquid that has pooled in the bottom of the pan, leaving only about 1 inch.
  • Mix together ketchup, bbq sauce, minced garlic and vinegar.
  • Pour half of the bbq sauce mixture over the roast and cover and cook for 20 more minutes.
  • Remove lid and cook for 10 more minutes.
  • Allow to rest and cool slightly before shredding.
  • After shredding, pour the remaining bbq sauce mixture over the top.

1 c chopped onin
1/4 c lemon juice
1 c water
2 Tbsp brown sugar
2 tsp butter
14 oz ketchup
1/2 c chopped celery
1 Tbsp worcestershire sauce
1 Tbsp salt
1/2 tsp dry mustard
2 tsp vingar

Steps:

  • 1. Brown beef and onion in butter. Add cooked beef, onions and remaining ingredients to a crock pot and cook on low for 2 hours or more. Serve on hamburger buns. Also, good to top with cole slaw.

  • Place the roast in the slow cooker and cover water. Cook on low for five hours. Remove the meat and while still warm, shred it.
  • At four and a half hours into the slow cooking, add the butter, sugar, ketchup, A-1 sauce, onion, beef stock, Worchestershire sauce, apple cider vinegar, garlic, and lemon juice to a small sauce pan. Bring to a simmer and cook for 30 minutes uncovered.
  • Add the shredded beef back to the slow cooker and cover it with the sauce. Place the top on, slightly a jar. Cook on low for 2 hours, stirring 2 to 3 times during cooking. Serve on sandwich buns.
