1 cup black beans (drained and rinsed)
1 cup sweet kernel corn (canned or frozen)
1/2 green pepper (finely diced)
1 cup barbecue sauce
1 cup sharp cheddar cheese (shredded)
1/2 cup french fried onions
2 tbsp cilantro (chopped)

Steps:

  • Mix the shredded chicken, black beans, corn, green pepper, and barbecue sauce until combined.
  • Pour mixture into a large casserole dish and top with cheddar cheese.
  • Place the dish in the oven loosely covered with foil and bake at 375˚F for 25 minutes.
  • Remove the foil and top with french fried onions and continue to cook for 10 more minutes or until the sides are bubbling and the onions are browned.
  • Let rest for 5 minutes, then garnish with cilantro. Enjoy!

  • Preheat oven to 350 degrees F (175 degrees C).

1 bottle (18 oz) barbecue sauce
2 cups shredded mozzarella cheese (8 oz)
3 tablespoons chopped fresh cilantro, if desired

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • Heat 10-inch nonstick skillet over medium-high heat. Add chicken; cook 10 minutes, stirring occasionally, until no longer pink in center. Remove from heat. Cool slightly, about 5 minutes.
  • Meanwhile, separate dough into 8 biscuits. Cut each biscuit into 8 pieces. Set aside.

1 cup all-purpose flour
1 broiler/fryer chicken (3 to 4 pounds), cut up
2 tablespoons canola oil
1 cup chopped onion
1 cup chopped green pepper
1 cup thinly sliced celery
1 cup ketchup
1/2 cup water
3 tablespoons brown sugar
3 tablespoons Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1 package (16 ounces) frozen corn, thawed

Steps:

  • Preheat oven to 350°. Place flour in a large resealable plastic bag. Add chicken, a few pieces at a time, and shake to coat. In a large skillet, brown chicken in oil; transfer to an ungreased 13x9-in. baking dish. , Drain skillet, reserving 2 tablespoons drippings. In drippings, saute onion, green pepper and celery until tender. In a small bowl, combine ketchup, water, brown sugar, Worcestershire sauce, salt and pepper; add to vegetables. Bring to a boil. 1 bottle honey bar-b-que sauce

Steps:

  • 1. Preheat the oven to 400 degrees. In a casserole dish smear the butter all over the bottom of it. Place the 4 chicken breasts into the dish and place in oven for 20 minutes.
  • 2. Flip the chicken over and bake in oven for 20 minutes.
  • 3. Flip the chicken over and pour the whole bottle of bar-b-que sauce over the chicken. Bake for 20 minutes. Serve chicken and you can use the extra butter/sauce that the chicken is swimming in to pour over your chicken or to dip into.

3 cups cooked and diced chicken breast

½ pound bacon (cooked crisp and crumbled, divided)
15 ounce can petite or fire roasted diced tomatoes (drained)
1 red onion (diced)
2 1/2 cups grated Cheddar-Jack cheese (divided)
2 green onions (thinly sliced)
Fresh minced cilantro or parsley (for garnish)

Steps:

  • Preheat oven to 375 degrees F. Spray a 13x9-inch casserole dish with nonstick cooking spray.
  • In a large bowl, combine barbecue sauce, sour cream, garlic powder and black pepper. Stir in chicken, pasta, bacon (reserve 2 tablespoons for topping), tomatoes, red onion and half of the cheddar-jack cheese until well combined.
