Perfect oven-baked chicken thighs are ready in only 35 minutes. With deliciously crispy skin and juicy inside, baked chicken thighs are economical, tasty, and require almost no skill.

chicken thighs (do as many as you want)
7:2:1 or 7:2:2 Seasoning (or kosher salt and pepper to taste)

Steps:

  • Preheat oven to 425°F convection. Pat dry the chicken.
  • Trim any loose skin with no meat off. Also, remove any fat that is easily removed.
  • Prep a baking sheet. Line with aluminum foil, add a rack, and give a heavy spray of PAM. Use a baking sheet or pan big enough to hold all the thighs without touching.
  • Place thighs skin down and sprinkle lightly with the spices of your choice. I went with 7:2:1 or 7:2:2. If you don't have that, just a little salt and pepper to taste. A pinch of cayenne would be good also. Flip and tuck in any thin parts underneath and sprinkle skin side.
  • With skin side up, bake until internal temp of 180° to 185°F-about 30 minutes of cooking time. Then rest for 5 minutes or more before serving.

Number Of Ingredients 10

4 chicken thighs (skin and any excess fat removed)
Salt and pepper
Sauce
1 can tomato sauce (8 ounces)
1 small onion (finely chopped)
½ teaspoon garlic powder
2 tablespoons low sodium soy sauce
1 tablespoon sugar (I use Splenda instead of sugar)
½ teaspoon dry mustard
Pinch cayenne pepper

Steps:

  • Preheat oven to 400F.
  • In a small bowl mix together all the sauce ingredients.
  • Lightly spray a shallow baking dish with cooking spray. (I used a 1.75-quart baking dish)
  • Pat chicken dry using paper toweling and arrange chicken on the bottom of the baking dish in a single layer - salt and pepper to taste.
  • Spoon the sauce over the chicken and bake uncovered for 45 minutes to 1 hour or until chicken is done. (185F.)
  • Serve over rice or hash browns.

4 teaspoons garlic powder
4 teaspoons onion flakes

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place thighs in a baking dish. Season chicken thighs on all sides with garlic powder and onion flakes.
  • Bake chicken in the preheated oven until no longer pink at the bone and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 165 degrees F (74 degrees C).

This baked dish brings home all the flavors of a roast chicken with vegetables, and it makes just enough for two.

2 boneless skinless chicken breast halves (1/2 pound)
2 tablespoons Dijon mustard
1/2 cup Bisquick Heart Smart® mix or Original Bisquick™ mix
3/4 pound small red potato, cut into fourths
1 small red or green bell pepper, cut into 1/2-inch pieces
1 small onion, cut into 8 wedges
Cooking spray
2 tablespoons grated Parmesan cheese, if desired
1/2 teaspoon paprika

Steps:

  • Heat oven to 400°F. Spray baking dish, 13x9x2 inches, with cooking spray.
  • Brush chicken with 1 tablespoon of the mustard, then coat with Bisquick mix. Place 1 chicken breast half in each corner of pan. Place potatoes, bell pepper and onion in center of pan; brush vegetables with remaining mustard. Spray chicken and vegetables with cooking spray; sprinkle evenly with cheese and paprika.
  • Bake 35 to 40 minutes, stirring vegetables after 20 minutes, until potatoes are tender and juice of chicken is no longer pink when centers of thickest pieces are cut.
