BEST TOFFEE EVER - SUPER EASY
Chocolate and almonds top off a rich buttery toffee. A simple recipe that you could easily remember and whip up any time. I always get compliments and requests for more. Use any type of nut that you like in place of the almonds.

Steps:
- In a large heavy bottomed saucepan, combine the butter, sugar and salt. Cook over medium heat, stirring until the butter is melted. Allow to come to a boil, and cook until the mixture becomes a dark amber color, and the temperature has reached 285 degrees F (137 degrees C). Stir occasionally.
- While the toffee is cooking, cover a large baking sheet with aluminum foil or parchment paper.
- As soon as the toffee reaches the proper temperature, pour it out onto the prepared baking sheet. Sprinkle the chocolate over the top, and let it set for a minute or two to soften. Spread the chocolate into a thin even layer once it is melted. Sprinkle the nuts over the chocolate, and press in slightly. Putting a plastic bag over your hand will minimize the mess.
- Place the toffee in the refrigerator to chill until set. Break into pieces, and store in an airtight container.

EASY BUTTER TOFFEE
This microwave recipe was given to me by my mom about 20 years ago. It is sooo easy to make and tastes delicious!

Steps:
- Rub the top of a microwavable mixing bowl with (extra) butter. Place butter into bowl. Pour sugar directly on butter. Add salt and water.
- Cook approximately 7-8 minutes (sometimes I have seen some microwaves take up to 12 minutes). Start watching at this point so as not to overcook. Candy is done when it's the color of a Heath bar or brown sugar.
- Pour mixture over sliced almonds on a buttered cookie sheet. Don't scrape the bowl! Cool!
- Top with melted chocolate (and more almonds if you wish) and let cool some more.
- Break into pieces and serve. (I use a regular table knife -- just be sure not to cut into your cookie sheet!) Enjoy!

NUT FREE ENGLISH TOFFEE
This simple recipe for English toffee is fuss free. It's a great candy recipe for beginners. It's gluten free and nut free. This makes a great gift or dessert - or just make some for yourself and enjoy!

- Add butter, sugar, salt, and water to a heavy pot. Turn stove to medium and bring to a boil.
- Stir periodically if you choose, and add candy thermometer once the mixture boils.
- While candy cooks, place a silpat on a jelly roll pan to contain the toffee and chop chocolate.
- Cook candy to 300 degrees, then pour the toffee onto the silpat. Smooth the toffee with a spatula and spread it to desired thickness.
- Give it a minute, then use a pizza wheel to score the toffee. Immediately top with chopped chocolate.
- Let residual heat from the toffee melt the chocolate. Use a new spatula to smooth the chocolate over toffee.
- Let the chocolate harden for an hour. To finish, lift one edge and gently break it along the score lines.
- Serve immediately, or place in a tightly sealed container and store on your counter for up to a month.

- Heat the sugar and butter.
- Boil on med heat, stirring constantly for 7 minutes (start your timer once you see bubbles).
- Immediately spread mixture evenly over the nuts in the pan.

- While still hot cut into squares.

- Line an 8 or 9-inch square pan with foil, allowing the edges of the foil to hang over the pan. Grease the foil lightly with cooking spray. Set aside.
- In a large saucepan, bring the butter and brown sugar together over medium heat, stirring to help melt the butter. Bring the mixture to a boil, and stirring constantly, boil the mixture for exactly five minutes. Mixture will be thicker and caramel colored.
- Pour the toffee into the prepared pan. Immediately sprinkle with the semi-sweet chocolate chips and place the pan in the microwave so it can sit undisturbed for five minutes. Remove from oven and spread the chocolate into an even layer; immediately top with the toffee bits or nuts, if using. Allow toffee to come to room temperature before placing in the fridge to set for about an hour or two. Break into pieces.

- Get all of your ingredients measured and set out before you start the recipe. Then place your almonds on a plate and microwave them for 2-3 minutes on high to toast them. Line a baking sheet (preferable a 9x13 pan) with foil and place the almonds in a single layer on the foil - space them out as best you can.
- Add sugar, butter, vanilla, and salt to a large sauce pan (at least 2-quarts and it needs to have a thick bottom - not a thin metal one or your toffee will burn!) and melt over medium heat, stirring throughout.
- When ingredients are completely melted, continuously stir and gradually increase heat to medium-high. Keep stirring, stirring, stirring for 9-15 minutes until the toffee is a golden brown color (similar to the color of the raw almonds). As soon as it reaches that color, quickly pour over almonds in your prepared pan.
- Allow to cool for about 2-3 minutes, then sprinkle with chocolate chips. Allow to sit for another couple of minutes so the chocolate chips will melt, then spread over the toffee. Sprinkle with chopped pecans and allow to cool completely. (If you put the pan in the fridge it will speed up the process a bit).
