Easy Butternut Squash Soup image

This is the BEST EVER Easy Butternut Squash Soup! Only a few ingredients to make this incredible soup. This is one of our favorite soups to make on a cold day!

Number Of Ingredients 6

½ Tbsp. olive oil
2 garlic cloves (minced)
1 onion (diced)
1 butternut squash (peeled and diced into cubes)
32 ounces vegetable broth
1-2 tsp. salt

Steps:

  • In a dutch oven pot (or heavy pot), heat olive oil over medium heat. Add onion and garlic. cook until softened, about 5 minutes.
  • Add cut up butternut squash and vegetable broth. Bring to a boil then cover and simmer for 15-20 minutes until squash is softened.
  • Carefully pour entire contents of pot into blender (I use my Vitamix). Add salt.
  • Carefully blend until smooth. Serve in bowls with thyme if desired. Enjoy!

30 Minute Butternut Squash Soup image

Save yourself some time by using store-bought, frozen squash for this recipe. It's one of those one-pot, all ingredients in at the same time, type of recipes. 30 Minute Butternut Squash Soup is creamy, full of flavour, and a perfect warm and cozy family meal!

10 cups frozen diced butternut squash ((two 750 gram bags))
1 large white onion, (finely chopped)
2 cloves garlic, (finely minced)
5 cups low sodium vegetable stock
1/2 teaspoon ground black pepper
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme
salt to taste

Steps:

  • Dump all of the ingredients into a large soup pot, or Dutch oven.
  • Stir to combine.
  • Turn on the heat to medium-high and bring the soup to a boil, stirring occasionally. The soup should come to a boil in about five minutes.
  • Reduce the heat to simmer, place a lid on pot, and allow the soup to cook for 20 minutes, stirring occasionally.
  • Once the onions, garlic, and butternut squash should be tender and cooked all the way through, use a hand-held immersion blender to puree the soup. Or, transfer the soup to a counter-top blender and puree. Be careful for splatters! This soup is hot!
  • Taste soup and season with salt if needed. Serve immediately.

1 tablespoon olive oil
1 large onion, chopped
3 garlic cloves, minced
1 medium butternut squash (3 pounds), peeled and cubed
4 cups vegetable broth
3/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup heavy whipping cream
Optional: Additional heavy whipping cream and crispy sage leaves

Steps:

  • In a large saucepan, heat oil over medium heat. Add onion; cook and stir until tender. Add garlic; cook 1 minute longer., Stir in squash, broth, salt and pepper; bring to a boil. Reduce heat; simmer, covered, 10-15 minutes or until squash is tender. Puree soup using an immersion blender. Or cool slightly and puree soup in batches in a blender; return to pan. Add cream; cook and stir until heated through. If desired, garnish with additional heavy whipping cream and crispy sage.

2 tablespoons butter
1 small onion, chopped
1 stalk celery, chopped
1 medium carrot, chopped
2 medium potatoes, cubed
1 medium butternut squash - peeled, seeded, and cubed
1 (32 fluid ounce) container chicken stock
salt and freshly ground black pepper to taste

Steps:

  • Melt the butter in a large pot, and cook the onion, celery, carrot, potatoes, and squash 5 minutes, or until lightly browned. Pour in enough of the chicken stock to cover vegetables. Bring to a boil. Reduce heat to low, cover pot, and simmer 40 minutes, or until all vegetables are tender.
  • Transfer the soup to a blender, and blend until smooth. Return to pot, and mix in any remaining stock to attain desired consistency. Season with salt and pepper.

Cayenne pepper gives a little kick to bowls of this pretty golden soup, a first course that everyone seems to love. It can be made several days ahead to fit a busy schedule, then heated up whenever needed.

1 butternut squash (about 1-3/4 pounds)
1 large onion, chopped
2 garlic cloves, minced
2 tablespoons canola oil
1 tablespoon all-purpose flour
1 teaspoon salt
1 teaspoon curry powder
1/8 teaspoon cayenne pepper
5 cups chicken broth
1 bay leaf
CILANTO CREAM TOPPING:
1/2 cup sour cream
1/4 cup heavy whipping cream
1/4 cup minced fresh cilantro

Steps:

  • Cut squash in half lengthwise; discard seeds. Place squash cut side down in a greased or foil-lined baking pan. Bake, uncovered, at 400° for 40-50 minutes or until tender. When cool enough to handle, scoop out pulp; set aside., In a large saucepan, saute onion and garlic in oil until tender. Add the flour, salt, curry powder and cayenne until blended. Stir in broth. Add bay leaf. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; simmer, uncovered, for 20 minutes. Discard bay leaf. Cool to room temperature., In a blender, combine half of the broth mixture and squash; cover and process until smooth. Repeat with remaining broth mixture and squash. Return to the saucepan; heat through. Combine the topping ingredients; place a dollop on each serving.
