This moist, apple-y cake is delicious as an afternoon snack or for breakfast, toasted and slathered with cream cheese. Dried cranberries can be substituted for the raisins. Posted in a newsletter from America's Test Kitchen.

2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon allspice
1/4 teaspoon ginger
1/4 teaspoon table salt
1 cup packed light brown sugar
8 tablespoons unsalted butter, softened (1 stick)
2 large eggs, at room temperature
1/2 cup applesauce
1 teaspoon grated lemon zest
2 granny smith apples, peeled, cored, and diced medium (2 cups)
1/2 cup raisins (optional)

Steps:

  • Adjust an oven rack to the middle position and heat the oven to 325 degrees. Lightly coat an 8-inch-square cake pan with vegetable oil spray.
  • Whisk the flour, baking powder, spices, and salt together in a large bowl and set aside.
  • Beat the brown sugar and butter together in a large bowl with an electric mixer on medium speed until light and fluffy, 3 to 6 minutes.
  • Beat in the eggs, one at a time, until incorporated, scraping down the bowl and beaters as needed.
  • Beat in the applesauce and lemon zest.
  • Whisk the flour mixture into the egg mixture until no streaks of flour remain.
  • Stir in the apples and raisins (if using).
  • Pour the batter into the prepared pan and smooth the top.
  • Bake until a toothpick inserted into the center of the cake comes out with a few crumbs attached, 1 hour to 1 hour and 15 minutes, rotating the pan halfway through baking.
  • Let the cake cool in the pan on a wire rack, about 2 hours, before serving.

1 2/3 cups Gold Medal™ all-purpose flour
1 cup packed brown sugar
1 1/2 teaspoons ground allspice
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup applesauce
1/3 cup chopped nuts
1/2 cup water
1/3 cup vegetable oil
1 teaspoon white vinegar
1/2 cup packed brown sugar
1/4 cup butter or margarine
1/4 cup apple cider or orange juice
2 tablespoons whipping cream

Steps:

  • Heat oven to 350°F. In ungreased 8-inch square pan, mix flour, 1 cup brown sugar, the allspice and baking soda with fork. Stir in all remaining cake ingredients until blended.
  • Bake 35 to 40 minutes or until toothpick inserted in center comes out clean.
  • In 1 1/2-quart saucepan, heat all sauce ingredients to rolling boil over high heat, stirring constantly; reduce heat slightly. Boil 3 minutes, stirring frequently. (Watch carefully; mixture burns easily.) Store sauce in refrigerator.

1-3/4 cups sugar
1 cup vegetable oil
3 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1-1/4 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon baking soda
2 cups finely chopped peeled tart apples
1 cup chopped walnuts
1-1/4 cups whipped topping

Steps:

  • Preheat oven to 350°. In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. Combine the flour, baking powder, salt, cinnamon and baking soda; gradually beat into sugar mixture until blended. Fold in apples and walnuts., Transfer to a greased 13x9-in. baking dish. Bake until a toothpick inserted in the center comes out clean, 35-45 minutes. Cool on a wire rack. Serve with whipped topping.

2 eggs
1/2 teaspoon vanilla
1/2 cup sugar
1/2 cup flour
1 teaspoon baking powder
1/4 teaspoon cinnamon
2 cups apples, chopped (about 1 1/2 apples)

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 8" round baking pan with cooking spray.
  • Chop up your apples.
  • Beat the eggs in a small bowl until fluffy.
  • Combine sugar, flour, baking powder and cinnamon in a bowl. Whisk together.
  • Combine wet and dry ingredients together.
  • Sprinkle 1/2 apples in bottom of pan.
  • Pour over batter. It will be thick and you'll have to work it around the pan with a spatula.
  • Sprinkle remaining apples on top and sort of press them down into batter.
  • Bake for approximately 25 minutes or until golden.

2 large granny smith apples, chopped (leave the skins on or take them off)
2 eggs, room temperature
1 cup chopped walnuts (optional)
1 teaspoon vanilla
Browned Butter Cinnamon Glaze:
2 tablespoons unsalted butter
2 cups powdered sugar
2 tablespoons to 3 of milk
1 teaspoon cinnamon
1 pinch of sea salt (I like the large crystals for this.)

Steps:

  • Preheat your oven to 350 degrees F and grease an 8x8-inch baking dish with cooking spray. In a bowl, stir together the flour, sugar, cinnamon, baking soda, baking powder, salt and nutmeg with a whisk. (This is your "box" mix. Yes, this is what you're paying the big bucks for.) In a small bowl, whisk together the two eggs. Add this to the dry ingredients along with the chopped apples, vanilla and walnuts. Now stir, stir, stir. Keep stirring until all the flour/sugar mixture begins to look wet and well combined. Pour the cake batter into the prepared baking dish and bake for 45 minutes. Allow to cool on a wire rack. For the glaze, melt the butter in a small sauce pan (do not use nonstick, you need to be able to see the butter change color.) Cook the butter for about a minute until brown particles form on the bottom of the pan. This can burn quickly, so once you see the brown specks form, remove it from the heat and pour it into your mixing bowl. Add the powdered sugar and cinnamon, then beat in about 2 tablespoons of milk.
