1 cup packed brown sugar
1-1/4 cups all-purpose flour, divided
1/2 teaspoon salt, divided
1 cup water
1 teaspoon lemon juice
2 teaspoons baking powder
5 tablespoons butter, divided
3/4 cup 2% milk
5 cups sliced peeled apples
1/2 teaspoon plus 1/8 teaspoon ground cinnamon, divided
1/2 teaspoon ground nutmeg
1 teaspoon vanilla extract
1 tablespoon coarse sugar
Whipped cream, optional

Steps:

  • In a saucepan, combine brown sugar, 1/4 cup flour and 1/4 teaspoon salt. Add water and lemon juice; cook and stir over medium heat until thick. Cover and set aside. , In a bowl, combine baking powder and remaining flour and salt. Cut in 3 tablespoons butter. Add the milk and mix just until moistened (a few lumps will remain); set aside. , Arrange apples in a 1-1/2-quart baking dish; sprinkle with 1/2 teaspoon cinnamon. Add nutmeg, vanilla and remaining butter to sauce; pour over apples. Drop dough by spoonfuls over sauce. Combine remaining cinnamon and coarse sugar; sprinkle over dough. Bake at 350° until top is brown and apples are tender, about 55 minutes. Serve warm, with whipped cream if desired.

1 roll puff pastry (thawed)
5-6 large apples (cooking/pie apples, peeled and cored)
6 Tbsp unsalted butter
2 Tbsp all-purpose flour
3 Tbsp water
6 Tbsp white sugar
6 Tbsp packed brown sugar
1/4 tsp cinnamon
2 Tbsp white or turbinado sugar

Steps:

  • Preheat oven to 425F.
  • Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature to low and stir in cinnamon. Keep warm while you prepare the apples.
  • Grease an 8-inch round skillet, pan, pie plate (or equivalent sized) pan. Set on a baking sheet and set aside.
  • Peel and core apples, then thinly slice. Add to prepared baking pan, filling the pan about 2/3-3/4 full.
  • Using a sharp knife or pizza cutter, cut thawed puff pastry into irregular, 1-inch-ish shapes. Scatter about 1/3 of the pastry pieces randomly over top of apples. Slowly pour the sugar mixture over-top, pouring all around the pan to make sure the filling reaches all parts of the pan. Pour slowly so it drips down into the apples and not over the side. Place the remaining pastry pieces on top, overlapping, as necessary and leaving a few small open spots (to allow steam to escape). Sprinkle a bit of sugar on to the top of pastry.
  • Place into preheated oven (on baking sheet to catch overflowing juices!) and bake for 15 minutes, then reduce oven temperature to 350F and continue baking for an addition 35-40 minutes, or until filling is bubbly and pastry is golden brown and puffy. Let stand a few minutes before serving. Lovely served with a dusting of icing sugar and a scoop of ice cream.

A pandowdy is a rustic dessert that is basically a cross between a pie and a cobbler. It's super easy to make as well. As with all rustic desserts, the more homemade it looks, the more attractive it is. Plus it has a pretty cool name - "pandowdy" which just scream old school country right? Choose a mix of apples if you can (my go-to apples include Jonagold, Gala, Granny Smith and if I can find them Gravenstein) to get a nice blend of flavors. And if you can't find fresh blackberries, just use some frozen ones. No need to defrost them, just sprinkle them on the apple filling like the fresh blackberries before you add the crust on top.

8 medium apples (peeled, cored and cut into pieces or about 8 cups chopped apples)
1 tablespoon lemon juice
1/2 cup brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon cornstarch
pinch salt
1 teaspoon vanilla extract
1/4 cup maple syrup
2 tablespoons butter
1 9 inch regular pie crust

Steps:

  • Put chopped apples in a large mixing bowl and toss with lemon juice. Whisk together the brown sugar, cinnamon, nutmeg, cornstarch and salt. Pour over apples and toss again. Spray a round baking dish (could use a 9 x 9 square dish) with cooking spray and pour in the apples. Sprinkle on vanilla extract and maple syrup. Cut butter up in small pieces over the apples. Put pie crust on and cut 3 slits in top. (I use a Pillsbury frozen pie crust but you could make your own).
  • Place in preheated 400 degree oven for 30 - 35 minutes. Remove from oven and cut pie crust into small squares. Press the crust down into the pie filling. (You can use a spoon, spatula or whatever is convenient for you). Lower oven temperature to 350 degrees and return to oven for 30 - 35 more minutes until brown on top. Serve with ice cream on top

FRUITY BOTTOM LAYER:
6 large apples (any kind you like), peeled, sliced thin
2/3 c molasses
1/4 c butter
1/4 c water
CRUSTY BISCUIT TOP:
2 c bisquick
1/2 c sugar
1 tsp cinnamon
1/2 tsp nutmeg
2 eggs yolks
1/4 c milk
2 egg whites, beaten til stiff
OPTIONAL:
1 pt cold heavy cream (for serving)

Steps:

  • 1. FRUITY BOTTOM LAYER: Bring to boil in a large pan the apples, molasses, butter and water -- then reduce the heat to medium and cook for 1 minute
  • 2. Then pour the apple mixture into a 9x13 pan and spread out evenly with a wooden spoon.
  • 3. CRUSTY BISCUIT TOP: Combine the Bisquick, sugar, cinnamon, and nutmeg in a large mixing bowl with a fork, then make a well for the wet ingredients
  • 4. In a separate bowl combine the 2 egg yolks and milk till incorporated, then add to the dry ingredients by pouring into the well -- stir to incorporate -- do not overmix
  • 5. Beat the egg whites until stiff and fold into the biscuit mix -- do not overmix.
  • 6. Drop the biscuits by small spoonfuls onto the apples in the pan till all the dough is used. Don't make them too tall in the pan... flatten with a fork if necessary so they are all about the same height (this prevents burning the tips).
  • 7. Bake 375 F, 20-25 minutes or til golden brown
  • 8. To dowdy: break up the biscuits with a fork or knife, to get some of the golden brown baked parts of the biscuits covered with the syrup and apples, but leave some dry.
  • 9. SERVING SUGGESTION: Pour a little cold cream over the warm dessert in each serving bowl, if you like. (optional)

An old fashioned recipe my mother has made since 1954. You add a cooked syrup over the apples, and top with a flour combination topping. It is a different type of apple cobbler you will really enjoy. You can serve plain or top with milk or ice cream.

4 cups peeled and sliced apples
1 cup brown sugar
¼ cup all-purpose flour
2 tablespoons vinegar
1 cup water
1 teaspoon vanilla extract
1 tablespoon butter
1 cup all-purpose flour
2 teaspoons baking powder
2 ½ tablespoons shortening
¾ cup milk

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9-inch square baking dish. Layer the sliced apples evenly into the baking dish.
  • Mix together brown sugar and 1/4 cup flour in a saucepan, and stir in vinegar and water until the mixture is well blended and the sugar has dissolved. Bring to a simmer over low heat, and stir constantly until the mixture has thickened, about 3 minutes. Remove from heat, let cool for about 10 minutes, and stir in the vanilla extract and butter. Pour the mixture over the apple slices in the pan.
  • Mix together 1 cup flour and the baking powder in a bowl until there are no more lumps, and cut the shortening into the flour mixture until the mixture forms crumbs the size of peas. Stir in the milk, and spread the batter over the apples and syrup.
  • Bake in the preheated oven until the topping is golden brown and the apples are tender, about 35 minutes.
