2 cups chopped apples (peeled and chopped)
1/2 cup sugar
1/2 teaspoon chili flakes
1/2 teaspoon cumin powder
1/2 teaspoon cardamom powder
1/4 teaspoon cinnamom powder
1/2 teaspoon salt
2 tablespoons lemon juice (or lime juice or vinegar)

Steps:

  • Peel, core and finely chop the apples
  • Combine apples and sugar in a pan. Mix well and cook covered for 10-12 minutes in medium flame
  • Uncover, add salt, spice powders and lemon juice. Mix well and cook for 7-8 more minutes.
  • The chutney is done when it leaves the sides of pan and thickened well. Let cool and store in a clean dry jar. Serve apple chutney as required.

500 grams apples ((½ kg, 1 Lb, 3 medium))
1 tablespoon oil ((or ghee) (refer notes))
1 gram cinnamon ((2 inches) (True/Ceylon cinnamon))
2 parts star anise ((2 segments/petals) )
4 cloves
1½ tablespoon ginger (minced)
¼ teaspoon red chili powder ((or chili flakes, adjust to taste))
1 teaspoon ground fennel ((saunf powder))
1 teaspoon ground cumin ((roasted jeera powder))
3 tablespoons brown sugar or jaggery ((substitute with dates or raisins))
3 tablespoons sugar or jaggery ((substitute with dates or raisins))
¼ teaspoon ground pepper ((black pepper powder))
½ cup apple cider vinegar

Steps:

  • Rinse the apples well under running water and peel them. Chop them finely. You can also use a chopper.
  • Pour oil or ghee to a hot pan or pot. Add the spices - cloves, star anise & cinnamon.
  • When they begin to sizzle add the ginger & let it fry for a minute. Then lower the flame and quickly stir the red chilli.
  • Add apples, sugar, cumin powder, fennel powder, pepper and vinegar.
  • Stir and cook covered on a low heat until the apples turn tender.
  • Then open the lid and cook further until almost all the liquid evaporates.
  • Mash a small portion of this mixture with the spatula to give a thicker texture to the apple chutney.
  • Turn off the stove when most of the excess moisture evaporates. (refer video or pics below)
  • Cool the apple chutney completely and store it in a clean dry glass jar. It keeps good for several months if you keep it in a dry shelf.

2 apples (I used 1 granny smith & 1 pink lady)
1/4 cup red wine vinegar
1/4 cup honey (or maple syrup)
1/2 a medium yellow onion or 1 small yellow onion
1/2 inch knob of ginger (approx 2 tsp)
2 cloves garlic
1 lemon - zest & juice
1/8 tsp coriander
2 tbsp chili flakes (or 1 for less of a spicy kick)
salt and pepper to taste

Steps:

  • Peel and chop the onion, ginger and garlic.
  • Also peel and chop the apples
  • Add the apples, red wine vinegar, honey, onion, ginger, and garlic in a heavy bottomed pan and place pan over low heat and let simmer for 15 minutes. While cooking, make sure to stir often.
  • Using a micro-plane grater, zest the lemon, being careful to not get any of the white part. And add the zest into the pan with the apples, etc.
  • Cut the zested lemon in half and squeeze the juice into the pan.
  • As the mixture cooks, the apples and onion should turn a golden brown like the honey.
  • When the mixture has been simmering for 15 minutes and it is starting to thicken, remove it from the heat.
  • Add in the chili flakes and season with salt and pepper to fit your taste.
  • Enjoy immediately after it has cooled a bit or store in an airtight container and enjoy later.

1 tablespoon unsalted butter
1 cup yellow onions, (chopped (approximately 1/2 large))
3 cups tart apples (such as Granny Smith), (peeled, cored and chopped (2-3 medium))
3/4 cup golden raisins
1/4 cup packed light brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground allspice
3 tablespoons apple cider vinegar
1 teaspoon orange zest
1/4 cup fresh-squeezed orange juice ((approximately 1 orange))

Steps:

  • Set a medium-sized saucepan over medium-low heat. Add the butter; once melted, add the onions. Cook for 3-5 minutes, until the onions are fragrant and translucent.
  • Add the apples, raisins, brown sugar, cinnamon, allspice, vinegar, orange zest and juice, stirring to combine the ingredients. Turn the heat up to medium-high and bring the mixture to a simmer, then turn the heat back down to low and cover.
  • Simmer for 40 minutes, stirring occasionally. Remove the cover and check the chutney consistency. If it's watery, allow excess liquid to cook off for 3-5 minutes, turning the heat up slightly if necessary. When finished, the chutney should be the consistency of applesauce.
  • I recommend serving warm apple chutney alongside chicken or pork. Store in an airtight container in the refrigerator and use within 3 weeks.

1 pound onions (quartered and thinly sliced, 2-3 medium)
2 tablespoons oil or butter or a combination
1 pound tart apples (such as Granny Smiths (2-3 medium), peeled, cored, and cut into small pieces)
1 cup granulated sugar
1/3 cup + 2 tablespoons apple cider vinegar
2 tablespoons grated or finely minced fresh ginger
1 tablespoon fresh lemon juice
1 1/2 teaspoons curry powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 teaspoon Dijon mustard

Steps:

  • Caramelize the onions in the fat (oil, butter or combination). Deglaze the pan with 2 tablespoons of the cider vinegar and pour the onions and the deglazing liquid into a large, heavy enamel or stainless steel pot.
  • Add the apples, sugar, ginger, and the rest of the cider vinegar. Mix all the ingredients and bring them to a rolling boil over high heat. Lower the heat and simmer the mixture, uncovered for 20 minutes, stirring every few minutes.
  • Add the lemon juice, curry powder, alt, cinnamon and Dijon mustard. Raise the heat slightly and continue cooking at a high simmer for another 5 minutes.
  • Let the mixture cool before putting in an airtight container. The mixture should be kept refrigerated and is best eaten cold. Will last for weeks (or longer) refrigerated.

700 g cooking apples or windfalls - peeled (cored and roughly chopped)
1 large onion - peeled and finely chopped
2 large garlic cloves - peeled and finely chopped
250 ml apple cider vinegar or kombucha vinegar
125 g demerara or golden granulated sugar
1 red chilli - finely chopped or 1 tsp dried chilli flakes
1 tbsp root ginger - grated
1 tsp turmeric
1 tsp garam masala
½ tsp sea salt

Steps:

  • Place all the ingredients in a large pan and bring to the boil.
  • Simmer uncovered for about 20 minutes, stirring occasionally. The chutney is ready when the apples have virtually disintegrated and the mixture has thickened.
  • Pour into warm sterilised jars. Tap the jars to remove air pockets. Cover with waxed discs, then screw on the lids, label and store.

100g (⅔ Cup) Onion
50g (⅓-½ Cup) Large Golden Raisins
1 Tsp Mustard Seeds
2 Tsp Ground Ginger
100g (½ Cup) Brown Sugar
175ml (¾ Cup) Apple Vinegar
1 Tsp Salt

Steps:

  • Peel and cut the onion into a 5mm (¼") dice.
  • Peel and core the apples and then cut them into a 1-1.5cm (½") dice.
  • Combine all of the ingredients in a 15-17cm (6-7") saucepan and stir to combine.
  • Bring to a boil, reduce the temperature to low-medium, and simmer for an hour.
  • Allow to cool completely before serving or storing in a jar.

1 cup chopped yellow onion
2 tablespoons minced fresh ginger
1 cup freshly squeezed orange juice (2 oranges)
3/4 cup good cider vinegar
1 cup light brown sugar, lightly packed
1 teaspoon whole dried mustard seeds
1/4 teaspoon hot red pepper flakes
1 1/2 teaspoons kosher salt
3/4 cup raisins

Steps:

  • Combine the apples, onion, ginger, orange juice, vinegar, brown sugar, mustard seeds, pepper flakes and salt and in a large saucepan. Bring the mixture to a boil over medium-high heat, stirring occasionally. Reduce the heat to simmer and continue cooking, stirring occasionally, for 50 minutes to 1 hour, until most of the liquid has evaporated. Take off the heat and add the raisins.
  • Set aside to cool and store covered in the refrigerator for up to 2 weeks.

I liked to purée the chutney in my food processor to a coarse thickness — I have weird textural issues with cooked raisins and puréeing the chutney solves the issue for me … no need to do this if you have no trouble with cooked raisins.
  • Alternatively, process the chutney: prepare a boiling water bath, and sterilize three half-pint jars. Spoon the chutney into the prepared jars, leaving 1/2 inch (1.5 cm) of headspace. Wipe the rims, apply the lids and rings, and process in a boiling water bath for 15 minutes.
  • When the time is up, remove the jars and set them on a folded kitchen towel to cool. When the jars have cooled enough that you can comfortably handle them, check the seals. Sealed jars can be stored at room temperature for for up to 1 year. Any unsealed jars should be refrigerated and used promptly.
