2 pounds lean ground beef
2 large eggs, lightly beaten
1 cup shredded part-skim mozzarella cheese
1/2 cup dry bread crumbs
1/4 cup finely chopped onion
2 tablespoons grated Parmesan cheese
1 tablespoon ketchup
2 teaspoons Worcestershire sauce
1 teaspoon Italian seasoning
1 teaspoon dried basil
1 teaspoon salt
1/4 teaspoon pepper
SAUCE:
1 bottle (14 ounces) hot or regular ketchup
2 tablespoons cornstarch
1 jar (12 ounces) apple jelly
1 jar (12 ounces) currant jelly

Steps:

  • In a bowl, combine the first 12 ingredients. Shape into 1-in. balls. Place meatballs on a greased rack in a shallow baking pan. , Bake at 350° for 10-15 minutes; drain. Combine ketchup and cornstarch in roasting pan. Stir in jellies; add the meatballs. Cover and bake for 30 minutes.

1 (2 lb) package frozen homestyle meatballs, thawed
1 envelope brown gravy mix
2 (10 3/4 ounce) cans cream of mushroom soup
1 cup sour cream
1/4 cup water

Steps:

  • In a 2qt saucepan, mix the brown gravy according to package directions.
  • (I use one that requires 1 cup water) Once gravy is thickened, add the cream of mushroom soup and sour cream.
  • Blend well.
  • Place the thawed or partially thawed meatballs in a crockpot (or add to the gravy mixture and heat through on stovetop).
  • Add the gravy to crockpot and heat on low.
  • May be served over rice, noodles, or potatoes.

1 pound ground pork sausage
1 pound ground spicy pork sausage
1 (6 ounce) can frozen orange juice concentrate, thawed

Steps:

  • Combine pork sausage and spicy pork sausage together in a bowl using your hands. Form mixture into meatballs, about 1 tablespoon each.
  • Fry meatballs in a skillet over medium heat until browned and completely cooked through, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Transfer meatballs to a large bowl and add 1/2 of the orange juice concentrate; gently toss to coat, adding more if needed to completely coat.
  • Put meatballs in a slow cooker and add the remaining orange juice concentrate; turn on Low setting to keep warm before serving.

BBQ Meatballs are an easy appetizer that can be made from scratch or with frozen meatballs and your favorite barbecue sauce.

2 pounds lean ground beef
2 eggs
½ cup milk
½ cup plain dried breadcrumbs (panko or regular)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon kosher salt
½ teaspoon black pepper
2 cups BBQ sauce (your favorite)
Fresh minced parsley for garnish if desired

Steps:

  • Preheat the oven to 450 degrees F. Line 2 rimmed baking sheets with foil and set aside.
  • Place all ingredients into a large bowl and gently mix together with your hands or a metal spoon, careful not to over-mix. Just squish it all together a few times to combine.
  • Using a cookie scoop or your hands, divide the meat mixture into desired size meatballs. As long as they are uniform, they can be as large or small as you like.
  • Bake in the preheated oven for 12-14 minutes, depending on the size. Be sure to check for doneness.
  • Turn on the broiler. Remove the trays from the oven and brush a generous amount of bbq sauce over the tops of the meatballs. Broil for 2-3 minutes or until caramelized, watching closely so they don't burn. Transfer to a serving dish and sprinkle with fresh parsley for garnish, if desired. Serve with additional BBQ sauce for dipping.
