TORTILLA CASSEROLE
This a great overnight brunch casserole when you have a house full of holiday guests! Serve with salsa and sour cream.

Steps:
- Lightly grease a 9x13 inch baking dish. Line the bottom of the dish with 4 tortillas. Sprinkle with 1/3 each of the green onions, olives, chile peppers, pimento peppers, Monterey Jack cheese, and Cheddar cheese. Repeat twice with the remaining ingredients.
- In a large bowl, beat together eggs, milk, and salsa. Pour over the layered ingredients. Cover with plastic wrap, and refrigerate overnight.
- Remove the casserole from refrigerator, and remove plastic wrap. Preheat oven to 350 degrees F (175 degrees C).
- Bake 45 to 60 minutes in the preheated oven.

This is a yummy Mexican bake that is much easier than preparing individual tacos or burritos for the whole family. Delicious served for dinner or as an appetizer...great for potlucks :)

Steps:
- Preheat oven to 375*.
- Grease 13 x 9 inch pan.
- Line pan with tortillas, making sure tortillas go up the sides of the pan to the edge.
- Fry beef and onion over medium heat, stirring frequently to break up meat, until beef is browned.
- Drain and stir in seasoning mix and tomato sauce.
- Simmer for a minute or so and then spoon over tortillas.
- Sprinkle with cheese.
- Beat milk, eggs and biscuit mix on high speed for about 1 minute or until smooth.
- Pour over mixture in pan.
- Bake for 35 to 40 minutes or until knife inserted in center comes out clean.
- Cool for 10 minutes and then serve and slice.
- Top with veggies and sour cream, if desired.

- Place roughly chopped peppers, onion and garlic in a food processor. Pulse until the vegetables are finely chopped (but NOT pureed completely) so they still have some texture.
- In a large shallow pan (with lid) heat up 2 tablespoons of oil, add the vegetable mixture and cook gently for about 5 minutes stirring often. Add the ground meat, mash with a fork and stir until fully cooked and combined with the vegetables (about 3 minutes).
- Add the tomatoes, tomato puree, beans, seasoning and spices, stir, cover and simmer for 25 minutes stirring occasionally. 15 minutes into cooking preheat the oven to 375 F/ 190 C/ gas mark 5.Remove the filling mixture from the heat, add the sweet chili sauce, chopped cilantro and adjust the seasoning if needed.
- Place 1/3 of the filling in a round dish, such as pie dish (roughly the size of your tortilla), spread evenly, scatter a handful of cheese (about ¼) over the top and cover with a tortilla. Make 2 more layers, spread the mascarpone over the top of the final tortilla and scatter the remaining cheese.
