1 onion, peeled and halved
28 oz crushed tomato, 1 can
½ cup unsalted butter
1 teaspoon salt
1 lb ground pork
1 lb ground beef
1 onion, finely chopped
2 cloves garlic, minced
1 cup shredded parmesan cheese
1 cup panko breadcrumbs
¾ cup fresh parsley, finely chopped
2 tablespoons worcestershire
1 egg
2 teaspoons salt
1 teaspoon black pepper
1 lb spaghetti
parmesan cheese, to serve

Steps:

  • Preheat the oven to 400˚F (200˚C).
  • Add the crushed tomatoes, butter, onion, and salt to a pot and bring to a simmer over medium heat.
  • Lower the heat and cook for 45 minutes, until the onions are soft and starting to break apart. Remove onion.
  • In a bowl, mix the ground beef, ground pork, panko, Parmesan, egg, garlic, onion, Worcestershire, salt, pepper, and parsley until fully combined.
  • Take a golf ball-sized handful of the meat mixture and roll it into a ball. Transfer to a baking sheet. Repeat with the remaining meat.
  • Bake the meatballs for 16 minutes.
  • Bring a pot of water to a boil, and cook the spaghetti according to the packaging instructions.
  • Drain pasta and toss lightly in about a tablespoon of oil (optional).
  • Pour the sauce over the pasta. Transfer the cooked meatballs and top with Parmesan.
  • Enjoy!

1/2 lb ground beef
1/2 lb ground medium Italian sausage
3/4 cup Italian breadcrumbs
1/4 cup parmesan cheese
1/4 cup milk
1/2 teaspoon pepper
1/2 teaspoon Worcestershire sauce
1 egg
1/4 cup onion, chopped
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon dried parsley
1/2 teaspoon garlic, minced

Steps:

  • Preheat oven to 400F.
  • Mix all ingredients together well using your hands.
  • Shape into 15-20 balls.
  • Place balls in an ungreased pan and bake for 20-25 minutes, until the juices run clear.
  • Serve with your favourite pasta sauce, over spaghetti noodles, with a glass of red wine (optional)!

3 tablespoons olive oil, divided
1 onion, minced
4 cloves garlic, minced
1 tablespoon Italian seasoning
1 pound medium ground beef
1 pound lean ground pork
2 eggs, beaten
1 cup bread crumbs
1 cup freshly grated Parmesan cheese
1 cup milk
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Drizzle a large baking sheet with about 2 tablespoons olive oil.
  • Heat remaining olive oil in a small saute pan over medium heat. Cook and stir onion in the hot oil until translucent, 5 to 7 minutes. Add garlic and Italian seasoning; continue to saute until garlic is softened, 2 to 3 minutes. Remove from heat and allow to cool enough to handle.
  • Combine beef, pork, bread crumbs, Parmesan cheese, milk, onion mixture, salt, and pepper in a large bowl. Mix together using your hands as quickly as possible as overmixing can produce a tough meatball.
  • Form 1 1/2-inch meatballs and place on the prepared sheet.
  • Bake in the preheated oven until browned and no longer pink in the centers, about 30 minutes, turning them over after 15 minutes.

1 tablespoon dried oregano
1 tablespoon canola oil
6 cloves garlic (minced)
1 egg (large, beaten)
3/4 cup Parmesan cheese (grated)
1 1/2 pounds ground beef (extra lean )
1/3 cup tomato paste
1/2 cup fresh parsley (finely chopped)

Steps:

  • In a large skillet, heat oil over medium heat. Add onion and saute for 5 minutes. Add garlic and stir. Remove from heat.
  • In a large bowl combine the egg, parmesan cheese, ground beef, tomato sauce and parsley. Add the onion garlic mixture and mix until the ingredients are blended.
  • Roll the mixture into small balls, about 1 1/2" in diameter. Fry in a bit of oil or, if you prefer to bake them, place them on a baking sheet and bake in preheated 350ºF (180ºC) oven for 20 minutes or until cooked through.
  • Add them to Italian tomato sauce and heat through to serve.

I make Italian food often casually and from memory, but rarely record the recipes. When I made meatballs using this recipe my family instantly asked if I had recorded the steps. I got up from the table and wrote it down while it was fresh in my mind. It has become a favorite treat for everyone. On the down side, my family became "meatball snobs" and no longer order them at restaurants because they will constantly compare my meatballs favorably.

1 lb lean ground beef
1 lb ground sausage, Country style
1 garlic clove, crushed
1 tablespoon garlic salt
1 teaspoon fresh coarse ground black pepper
1 teaspoon johnny's seasoning salt
1 egg
1 1/2 cups breadcrumbs
1 tablespoon italian seasoning
1/4 cup water

Steps:

  • 1.Add all ingredients into a large bowl.
  • 2.Knead / Mix all ingredients together with clean hands.
  • 3.Chill mixture for 30 minutes or until firm.
  • 4.Build meatballs using a 1 TBSP cookie dough scooper, and Hand-roll into balls.
  • 5.Place into cast-iron frying pan (you can snugly fit them in if needed).
  • 6.Set heat to medium, add 1/4 cup of water and cover. Simmer for 10 minutes.
  • 7.Remove cover and begin turning meatballs. As the remaining water evaporates, the edges of the meatballs will become crispy and brown. Turn frequently until all sides are seared.
  • 8.This is the best part - As the cook you are responsible to ensure the meat is cooked through. So pop one out and cut it in half. If there is ANY pink showing then it isn't ready. If not, then do a "quality control check" with a bit of red sauce you may have simmering at the same time. Be careful though - they taste best out of the pan and multiple checks will draw attention from the family.

3 tablespoons parmesan cheese
1-2 cloves garlic (minced)
3 tablespoons bread crumbs
1 large egg
1 teaspoon parsley (or ½ tablespoon chopped fresh)
½ teaspoon salt
1-2 dashes black pepper
¼ cup milk
2 tablespoons olive oil
⅓-½ cup broth (vegetable or beef)

Steps:

  • In a large bowl mix together the ground beef, egg, bread crumbs, parmesan cheese, minced garlic, chopped parsley, salt and pepper. Slowly add the milk until you have a soft compact mixture. Form the mixture into small balls.
  • In a large pan add the olive oil and the meatballs, brown on all sides turning often. Cook for approximately 5-6 minutes. Add the broth, cover and cook on medium/low heat for approximately 10-12 minutes or until cooked through. Stir occasionally to make sure the meatballs don't burn. Remove the lid and cook 2-3 minutes on high to thicken slightly. Serve immediately. Enjoy!

  • In a small bowl soak the bread in the milk for about 5 minutes, then squeeze out moisture and crumple into small bits.
  • In a medium bowl combine the bread with ground beef, eggs, parmesan and spices gently mix to combine well (I use my clean hands, its the best way to do it). Form into small balls ( I form the meatballs into the size of a golf ball). In a medium frying pan on medium heat, add the olive oil and the meatballs, brown them on all sides.
  • While meatballs are browning, in a separate, large deep pan add the olive oil, the tomato puree (or peeled tomatoes), spices and water, stir until well combined. Add the browned meatballs. Over medium heat, heat to boiling, then lower heat to medium low and simmer for approximately 20 minutes (covered), then raise the heat to medium, (leave pan slightly uncovered 1/3 uncovered) and cook an additional 20 minutes, until sauce has thickened and meatballs are cooked through. Serve immediately, top with freshly grated parmesan cheese if desired. Don't forget some crusty Italian bread to soak up the delicious sauce. Enjoy!
