500 g (17.6 oz/ 4 2/3 cups) plain flour (all purpose flour)
200 g (7 oz) butter ( room temperature)
100 g (3.5 oz/ ½ cup) sugar
2 teaspoons baking powder
2 medium eggs Germany, large US
1 teaspoon vanilla extract ((SEE NOTES))
1 kg (2.2 lbs) apples
1 teaspoon lemon juice (freshly squeezed)
50 g (1.8 oz/ ¼ cup) sugar
50 g (1.8 oz) raisins (SEE NOTES)
1 teaspoon cinnamon

Steps:

  • Start off by lining a 26 cm (10 inch) spring-form (or cake tin with removable base) with a parchment paper at the bottom and grease the sides with butter and dust them with breadcrumbs.
  • In a bowl combine flour and baking powder and mix well using a spoon. Add the eggs, sugar, butter and vanilla extract. Using your hands mix all the ingredients together to form a firm dough.
  • Divide the cake base into 2 doughs: 2/3 and 1/3. Place the 2/3 dough into the prepared cake tin. Using your hands press it nicely such that the bottom of the cake tin is covered. Make the dough a bit high on the sides as well. Keep the remaining dough for later.
  • Next, preheat the oven to 180 ° C (360 °F), with both top and bottom heat. Then peel the apples, remove the core and cut into slices. Put the apples in a bowl and add the remaining ingredients for the filling and mix well.
  • Pour the filling into the cake base. Crumble the remaining dough all over the top of the apples and bake for 50 minutes.
  • Remove the cake from the oven and let it cool for a few minutes. Remove the cake from the cake tin and enjoy.

1/4 cup brown sugar {packed}
1 egg
1 tsp vanilla extract
1 1/2 cups all purpose flour

2 tsp baking powder
3/4 cup milk
2 small apples {peeled and chopped}
1/2 cup butter {softened}
3/4 cup brown sugar {packed}
1 cup all purpose flour
1 tsp cinnamon

Steps:

  • Preheat oven to 350°. Spray a 9x9 baking pan with non stick spray and set aside.
  • In a medium bowl combine butter, granulated sugar, brown sugar, egg and vanilla. Combine with a hand held mixer {stand mixer or by hand} until creamy.
  • Add flour, salt and baking powder and mix to combine. The mixture might be a bit crumbly but that is alright.
  • Add the milk all at once and combine until you have a nice cake batter. Pour half of the batter into the prepared 9x9 pan. Top with the chopped apples.
  • To make the crumb topping, combine the butter, brown sugar, flour and cinnamon in a medium bowl. Cut the butter into the other ingredients until you have crumbs. Do not over mix or you will have a paste. Spread half of the crumbs over the top of the apples.
  • Add the remaining cake batter on top of the apple and crumbs, spread in an even layer. Top with remaining crumbs.
  • Bake for 40-45 minutes or until a toothpick inserted near the center of the cake comes out clean. Serve warm or cool on a wire rack. Store leftovers in an airtight container at room temperature or in the refrigerator for up to 4 days. Freeze for up to 3 months.

Steps:

  • In a large bowl, cream together the remaining stick of butter and sugar until light and fluffy. Add the eggs 1 at a time, beating after the addition of each. In a separate bowl or on a piece of parchment, sift together the flour, baking soda, cinnamon, and salt. Add to the wet ingredients, alternating with the sour cream and vanilla. Fold in the apples. Pour into the prepared baking dish, spreading out to the edges.
  • To make the topping, in a bowl, combine the sugar, flour, cinnamon, and butter, and mix until it resembles coarse crumbs. Sprinkle the topping over the cake and bake until golden brown and set, 35 to 40 minutes. Remove from the oven and let cool on a wire rack for at least 10 minutes.
  • To make the glaze, in a bowl, combine the sugar, vanilla, and water and mix until smooth. Drizzle the cake with the glaze and let harden slightly. Serve warm.

4 cups cake flour, spooned into measuring cup and leveled-off
Confectioners' sugar (for dusting)
2 cups all-purpose flour, spooned into measuring cup and leveled-off
1 teaspoon baking soda
1 teaspoon baking powder
¼ teaspoon salt
1 stick (4 ounces) unsalted butter, softened
1 cup granulated sugar
3 large eggs

Steps:

  • In a large bowl, whisk together the melted butter, granulated sugar, brown sugar, cinnamon, and salt. Using a spoon, stir in the cake flour one cup at a time, until the mixture forms a cohesive dough, like a very thick and clumpy cookie dough. As you add the last cup of flour, the mixture will be difficult to stir, so feel free to ditch the spoon and use your hands to mix it in. Set aside.
  • Preheat the oven to 350°F and set an oven rack to the middle position. Grease a 9 x 13-in cake pan.
  • In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  • In the bowl of an electric mixer, beat the softened butter and granulated sugar on medium-high speed, scraping the bowl as necessary, until light and fluffy, 2 to 3 minutes. Add the eggs one at a time, beating until incorporated after each addition (don't worry if the batter looks a little curdled at this point). Beat in the vanilla and scrape the bowl to make sure everything is evenly combined. Add the flour mixture alternately with the sour cream (half of the flour/all of the sour cream/then the remaining half of the flour), mixing on low speed with each addition, until just combined.
  • Spread the cake batter evenly in the cake pan (it will only come about ¾ inch up the sides of the pan). Top the batter with the streusel crumbs, using your fingers to break it apart and form it into roughly ½-inch chunks. Bake for 40 to 45 minutes, until a cake tester inserted into the middle of the cake comes out clean. Let the cake cool fully on a rack. Dust with powdered sugar and cut into squares to serve. Cover the cake with aluminum foil and store at room temperature; it will keep nicely for up to 3 days. To keep the cake fresher longer, store it in the refrigerator but bring it to room temperature before serving.
  • Freezer-Friendly Instructions: The cake can be frozen for up to 3 months. After it is completely cooled, wrap it tightly with aluminum foil or freezer wrap. Thaw overnight on the countertop before serving.

2 medium apples, peeled, cored and chopped into 1/2 inch pieces (about 300 g, or heaped 2 cups)
1/4 cup white sugar (50 g)
1/4 cup flour (32 g)
1/4 cup butter (56g)

Steps:

  • Heat oven to 180C. Grease and line an 8 or 9 inch pan with parchment paper.
  • Cream the butter and brown sugar in large bowl, 2-3 minutes on medium speed until light and fluffy.
  • Add the eggs one at a time until mixed, then vanilla.
  • Add the flour, baking powder, salt and cinnamon and fold until just combined, then fold in the apple cubes. Batter will be thick! Spread into prepared pan.
  • Combine all the crumble ingredients in a small bowl, pinching together with fingertips until small crumbs form, then scatter evenly onto cake surface.
  • Bake for 40-45 minutes until toothpick comes out clean.
